ADUKI BEAN CHILI RECIPE RECIPE - (3.7/5)

Aduki Bean Chili Recipe Recipe - (3.7/5) image

Provided by KeyIngredient

Number Of Ingredients 9

2 (15 oz.) Cans Organic Aduki Beans
1 (29 oz.) Can Tomato Puree
2 (14.5 oz.) Cans Diced Tomatoes
1 medium Onion, diced
1 Pound Ground Chicken
1 (6 oz.) Jar Roasted Red Peppers, diced
4 Tablespoons Chili Powder
2 Tablespoons Hot Curry Powder
Freshly Ground Black Pepper

Steps:

  • 1. Sautee Onions with 1 tablespoon Olive Oil in a large skillet over medium heat just until translucent, then transfer to your slow cooker. 2. Next brown the Ground Chicken in the same skillet then add it to the slow cooker. 3. Now add all the remaining ingredients to the slow cooker and stir well. 4. Cook the Chili on high for approximately 2-1/2 to 3 hours or on low for 4 to 6 hours. The new slow cookers or crockpots cook faster and hotter so timing may vary here depending on what type of slow cooker you have. ~Serve the Aduki Bean Chili with shredded cheese, diced green onions and sour cream to top it off! Make sure to also serve assorted crackers or a good rustic bread with this dish.

ADZUKI BEAN TACO/BURRITO FILLING

Adzuki Bean Taco/Burrito Filling image

These small red beans have a texture and flavor that approximates ground beef, in my opinion, but you could also use black beans or pinto beans in this recipe. Cooking time includes soaking the beans overnight.

Provided by Prose

Categories     Beans

Time 10h15m

Yield 6 serving(s)

Number Of Ingredients 9

1 cup dry adzuki beans
6 -8 cups water
1 tablespoon olive oil
1 onion
3 garlic cloves
2 cubes vegetarian chicken-flavored bouillon or 2 vegetarian beef-flavored bouillon
1 bay leaf
2 tablespoons taco seasoning
1 tablespoon crushed red pepper flakes (optional)

Steps:

  • Soak beans overnight in 4 cups water.
  • Drain and rinse.
  • In a large pot, sautee onions and garlic in oil.
  • Add beans and 2-4 cups of water (enough to cover). Bring to a simmer.
  • Add bouillon and bay leaf. Cook 1 hour, adding more water if necessary.
  • Add taco seasoning and crushed red pepper. Cook an additional 30 minutes or until water is reduced.
  • Remove bay leaf. Mash or blend about half the beans (I use an immersion blender) until the texture is similar to taco meat. Taste and stir in more seasonings if desired.

ADZUKI/ADUKI RED BEAN PASTE

Adzuki/Aduki Red Bean Paste image

I'm not entirely sure how authentic this is, but I looked up various adzuki bean paste recipes since I can't get canned/jarred nearby. So I came up with this one where the first batch was too sugary so I toned it down and got it right the second time-- it's easy but not quick! Using dried adzuki beans is optimal but canned would probably do in a pinch to cut the night the beans need to soak. They must be soft and squishable. Straining overnight is important, but all in all this is easy. Adzuki paste is used in Japanese and Chinese confections and as a spread, the nutritious properties of the red beans help cancel out the pure sugar!

Time P2DT40m

Yield 20 , 20 serving(s)

Number Of Ingredients 3

2 cups cooked adzuki beans (see instructions)
1 1/2 cups sugar
1 tablespoon water (approx, see directions)

Steps:

  • Measure out about 1 dry cup of dried adzuki beans. You will probably have leftover, adzuki beans definitely multiply when cooked. Soak the beans overnight.
  • Next day, bring about 4-5 cups of water to a boil, then let the beans simmer for 35-40 minutes or until soft, with the pot lid loosely covered.
  • Drain the beans, and measure out 2 cups now that they're cooked. (Save the leftover beans for veggie burger or roasting purposes, or other adzuki confections!).
  • Put the cooked beans and 1 1/2 cups of sugar plus a little water into a food processor and puree it until there are almost no more bean pieces left.
  • Pour the paste into a colander fitted over a large bowl, and let strain overnight (at least 6-8 hours.).
  • When it's all done straining the next day, there should be a lot of liquid in the bottom of the bowl and the paste inside the colander should be nice and thick. It's ready for use now! It can be refridgerated for up to a week, then frozen for a few months for future use.

BAKED ADZUKI BEANS WITH EGGPLANT AND TOMATOES

Baked Adzuki Beans With Eggplant and Tomatoes image

This isn't quite a stew, a chili, or a ratouille, yet it reminds me a bit of each. You'll just have to try it for yourself and see what you think. Whatever you want to call it, we call it tasty. Can be served as a side dish as well, but we like it on it's own accompanied by a nice loaf of a crusty bread. Plan ahead, the preparation time does not include three hour soaking time for the beans.

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 14

1 cup dried adzuki beans
1 bouquet garni (thyme, parsley, and bayleaf)
2 small eggplants, unpeeled, and cut in 1 inch cubes
kosher salt or sea salt
6 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 1/2 cups canned chopped tomatoes
1 cup chicken stock (or 1 bouillon cube dissolved in 1 cup water)
1/2 teaspoon ground allspice
1/4 teaspoon red pepper flakes
salt and pepper, to taste
4 tablespoons fresh basil, shredded
1/2 cup fresh grated parmesan cheese

Steps:

  • Pick over and discard any damaged beans or stones; rinse the beans, then place in a sauce pan adding plenty of water to cover; soak for a minimum of three hours (can be all day).
  • Drain the beans and return to the sauce pan with enough water to cover by 2 inches.
  • Add the bouquet garni and bring water to the boil; reduce heat and simmer uncovered until the beans are tender (20 to 40 minutes); drain and set aside, discarding the bouquet garni.
  • Place the eggplant cubes in a colander and sprinkle with kosher or sea salt; let drain for 30 minutes, then rinse and pat dry with paper towels (this step can be done while the beans are boiling).
  • Pre-heat oven to 375°F.
  • In a large frying pan over medium heat, heat 4 TBS of the olive oil then add the eggplant and saute until lightly browned on all sides (5 to 10 minutes).
  • When the eggplant has browned, transfer to a large baking dish (I use an oval 35 cm X 24 cm).
  • In the same frying pan, heat the remaining 2 TBS olive oil and saute the onion until it begins to soften but not brown (about 5 minutes).
  • Add in the garlic and continue to saute 1 minute.
  • Add the tomatoes, stock, allspice, red pepper flakes, and salt and pepper to taste; simmer slowly for 5 minutes, then transfer the mixture to the baking dish.
  • Add the beans and the basil to the baking dish, and mix everything well.
  • Sprinkle with the parmesan cheese and bake until golden, about 20 minutes.
  • Serve immediately.

  • Drain beans of their soaking liquid and place in a large kettle with whole onion, and bay leaf. Fill pot with fresh filtered water to more than cover the beans—1 to 2 inches above the surface of the beans should do. Season cooking water with salt—enough that you can taste it. Bring the water gently to the boil, stirring occasionally. When water boils, turn heat to medium low and simmer beans until tender, about 1 1/2 to 2 hours. Older beans will take longer. You will probably have to top off the beans with more water as they cook. You can remove a few beans from the pot and cut through the center with a sharp knife to test for doneness.
  • In a heavy-bottomed pan, sauté onions until slightly softened; make an opening in the sautéing onions and add a little more oil and the minced garlic, allowing it to sizzle a bit before stirring into the onions. Sauté mixture until onions are translucent. Quickly add the spices and herbs and stir once or twice into the onion mix to bring out the fragrance then remove from heat before they scorch. Add to the pot of beans along with the canned tomatoes (squeeze over the pot to break them up before adding if they are whole), and orange pieces. Simmer mixture for 1/2 hour or so until flavors blend. Taste for salt and seasoning and adjust. May be made a day ahead for best flavor.
