ACORN SQUASH & CARAMELIZED ONION DIP

Steps:
- Preheat oven to 350°F.
- Place the squash, flesh side up, in a baking pan with high sides, pouring about an inch of water in the bottom of the pan. Cover the squash with foil and bake for 45 to 60 minutes, or until fork tender.
- While the squash is baking, heat a large skillet over medium-low heat and add in just enough olive oil to coat the pan, about 1 tablespoon.
- Add the onions to the pan and stir to coat with oil. Let the onions caramelize over medium-low heat, stirring occasionally, for 30-35 minutes, or until the onions are a deep brown. As the pan dries out, add in a splash of stock, white wine or water to deglaze, then stir. The onions should be soft but not mushy when they're done. Add the minced garlic to the pan about 10 minutes before the onions are finished caramelizing.
- Remove the onions from the heat and set aside. Remove the squash from the oven and allow it to cool enough to handle. Scoop out the squash flesh into a food processor or blender.
- Add the onion mixture, honey or maple syrup, balsamic vinegar, lemon juice and spices to the processor and blend until just smooth.
- Serve warm, cold or room temperature as-is or add in yogurt, a drizzle of Sriracha or another hot sauce, and/or cilantro, thyme, paprika and/or cumin for garnish.

This easy to make squash is a great accompaniment on a holiday table. You can prepare more than one squash and double up on the sauce depending on how many squashes you are roasting.

- 1. Preheat the oven to 425 degrees F. 2. Wash and pat dry the squash. Rub with olive oil and wrap in a foil. Bake for 30-40 minutes until skin is soft and it is fork tender. Cool in a foil completely, then using a sharp knife gently peel off the skin and scrape off the seeds and the core from inside. 3. To make a sauce, whisk together sugar, milk, butter, cinnamon, and salt in a small skillet over medium high heat. Cook for 2 minutes whisking until it is thick. Place the squash in the center of the skillet and smother it on all sides with the sauce. Spoon some sauce on the inside of the cavity too. Let it cook in the sauce for 1 minute. Remove and put on a serving plate.
ACORN SQUASH AGRODOLCE

- Preheat the oven to 400 degrees F. Grease a baking sheet with cooking spray.
- Cut the acorn squash in half; scoop out the seeds and discard. Slice the squash into 1- inch slices. Toss with the olive oil and season with salt and pepper. Place on the prepared baking sheet and roast until tender and golden brown, about 30 minutes. Remove the peel and dice the squash.
- In the meantime, make the agrodolce. In a small saucepan, combine the red wine vinegar, currants and honey. Bring to a simmer, then reduce the heat to low. Cook until reduced and syrupy, about 15 minutes. Stir in a pinch of crushed red pepper.
- In a large bowl, toss the squash with the agrodolce sauce, mint and almonds. Serve hot or at room temperature.

- Put oven racks in upper and lower thirds of oven and preheat oven to 450F. Halve squash lengthwise, then cut off and discard stem ends. Scoop out seeds and cut squash lengthwise into 3/4-inch-wide wedges. Toss squash with black pepper, 3/4 teaspoon salt, and 2 tablespoons oil in a bowl, then arrange, cut sides down, in 2 large shallow baking pans. Roast squash, switching position of pans halfway through roasting, until squash is tender and undersides of wedges are golden brown, 25 to 35 minutes.
- While squash roasts, mince garlic and mash to a paste with remaining 1/4 teaspoon salt. Transfer paste to a small bowl and whisk in lime juice, chile (to taste), cilantro, and remaining 1/4 cup oil until combined. Transfer squash, browned sides up, to a platter and drizzle with vinaigrette.
EASY ACORN SQUASH
Baking winter squash cut side down in a small amount of water really makes it tender, and eliminates tough spots. This recipe came from a sticker on a squash I bought several years ago.

- Preheat oven to 400 degrees Fahrenheit.
- Cut squash in half and remove all seeds and strings. (Scrape the inside of the squash with the edge of a spoon).
- Place squash halves upside down in a shallow pan. Pour water in pan to a depth of 1/4 inch (may use more or less water depending upon size of pan used).
- Bake for 35 minutes. If any water remains, drain it off.

The flavors of this squash just scream Fall to me. I originally put this sauce on a small carnival squash, but it went really well with acorn squash, which serves a few more.

- Cut squash in half lengthwise and discard seeds.
- Set squash halves, cut-side up, in an 8x8x2 inch microwavable baking dish.
- Pour 1/4 cup water into dish, cover, and microwave on High (100%) for 5 minutes.
- After squash is done fill cavity of each squash with half of the raisins.
- Combine remaining ingredients, stirring to dissolve cornstarch.
- Pour half of mixture into each squash cavity.
- Cover and microwave on High (100%) for 2 minutes, until squash is fork tender and liquid thickened.
- Alternately, you could bake this squash in a 350 oven for about 25, add the raisins and remaining ingredients and bake for 10 more minutes, or until fork tender.

- Cut squash in half; discard seeds. Cut a thin slice from bottom of squash with a sharp knife to allow it to sit flat. - Preheat the oven to 400°F.
- Cut the acorn squash in half lengthwise and remove the seeds and strings. Place squash cut side down in a shallow baking dish and fill with 1/4" of water. Bake for 30-35 minutes, until the flesh is easily pierced with a fork.
- In the meanwhile, melt the butter in a small saucepan on medium heat, whisking constantly. Watch closely as brown flecks begin to appear. As soon as the butter turns a caramel brown color and has a nutty fragrance (this should take between 4-6 minutes; do not allow the butter to turn black), remove from the heat and transfer to a medium bowl. Stir in the olive oil, cinnamon and cardamom. Note: Can add additional spices, like ground coriander, ground cumin, red or black pepper.
- Add the 1 1/3 cup water and quinoa to the same saucepan. Bring to a boil, reduce to a simmer, cover and cook for 17 minutes. Remove from the heat and fluff with a fork.
- Toss 2 cups of the quinoa with the seasoned brown butter, cashews, apricots and mint. Cover the quinoa mixture to keep it warm if the squash needs more time to finish baking.
- Equally divide the quinoa filling among the four squash halves. Serve immediately. Refrigerate leftovers for up to 2 days.
