1 tablespoon vegetable oil
1 onion, finely chopped
1/2 teaspoon garlic, minced
1 teaspoon ginger, minced
1/4 teaspoon turmeric
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1 pinch ground black pepper
1 large tomatoes, diced
3 skinless chicken breasts, diced
4 tablespoons plain yogurt
3 -4 green chilies, split
1/4 teaspoon mango powder
1 pinch flaked sea salt
1 teaspoon mustard oil
1 -2 teaspoon fenugreek seeds

Steps:

  • Heat oil in a wok (or large non-stick pan) and gently saute onion until tender.
  • Turn down the heat, add garlic and ginger and briefly saute, continually stirring.
  • Add turmeric, chilli powder, ground cumin, coriander and pepper. Cook to toast.
  • Then toss in tomato and briefly cook. Add chicken and cook.
  • When chicken is almost ready, stir in yoghurt and briefly cook.
  • Then add green chillies, mango powder, salt, mustard oil and fenugreek.
  • Serve with steamed rice and your favourite Indian bread on the side.

1/2 cup coriander leaves, chopped
1/2 teaspoon fenugreek seeds
1 teaspoon fennel seed
1/2 teaspoon cumin seed
800 g chicken
1 teaspoon turmeric powder
8 red chilies, whole
1 teaspoon red chili powder
4 medium tomatoes
5 cloves
1 teaspoon onion seeds
7 tablespoons mustard oil
2 tablespoons ginger, chopped
4 medium onions
salt
1 tablespoon garlic, chopped
1 teaspoon mustard seeds

Steps:

  • Wash and cut the chicken into 1 1/2-inch cubes.
  • Take off and cut the onions.
  • Cut the tomatoes.
  • Roast the whole spices separately and grind everything coarsely.
  • Heat up oil in a thick-bottomed pot to smoking point, cool and again heat up the oil and stir fry the onions till brown.
  • Mix in the cut ginger-garlic.
  • Mix well.
  • Mix in coarsely ground masala powder.
  • Stir fry for half a minute, stirring all the time.
  • Mix in chicken, stir fry on high flame heat up till chicken pieces are well browned.
  • Mix in the tomatoes, turmeric powder, red chili powder and salt and mix well.
  • Stir fry till oil leaves the masala.
  • Mix in sufficient quantity of water (about 1 1/2 cups), bring it to a boil and cover.
  • Stir fry till the chicken is fully done.
  • Adjust the flavor and serve hot decorated with coriander leave.

  • Set the Instant Pot to Saute mode and heat oil. Add the mustard seeds and allow them to pop. Add cumin seeds, fennel seeds, nigella seeds, and fenugreek seeds. Sauté for 10 seconds.
  • Add the sliced onion and mix well. Add whole red chilies and sauté for 3 to 4 mins covered or until the onions become translucent. Next, add ginger paste, garlic paste, turmeric, chilli powder, salt and mix well.
  • Add the chicken pieces and stir everything together until the chicken is coated with all the spices. Turn off saute mode, add ½ cup of water and deglaze the pot. Layer the tomato paste on top and do not mix.
  • Close the Instant Pot with the pressure valve to sealing. Pressure cook for 6 minutes followed by 10 minute natural pressure release.
