MUSHROOM CREPES

Nonstick cooking spray, for spraying baking dish
3 tablespoons butter
1/4 cup chopped white onions
3 cloves garlic, chopped
2 cups chopped baby bella mushrooms
2 cup chopped cremini mushrooms
2 cups chopped oyster mushrooms
2 teaspoons minced fresh thyme
1 teaspoon minced fresh rosemary
Salt and freshly ground black pepper
6 store-bought crepes
One 14-ounce can cream of mushroom soup, preferably organic
1/2 cup shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F. Spray a flameproof baking dish with nonstick cooking spray
  • Heat the butter in a large heavy saute pan on medium-high heat. Add the onions and garlic and cook until fragrant, about 2 minutes. Add the baby bella, cremini and oyster mushrooms with the thyme and rosemary, and cook until the mushrooms are soft, about 4 minutes. Season with salt and pepper.
  • Divide the mushroom mixture evenly among the crepes. Roll each crepe up like a burrito. Transfer the crepes to the prepared baking dish. Top with some mushroom soup, enough to cover each crepe. Cover with foil and bake for 40 minutes.
  • Remove the baking dish from the oven and turn the oven to broil. Sprinkle the mozzarella on top of the crepes and broil until the cheese is crisp and golden, about 3 minutes. Let cool 10 minutes before serving.

For the crepes:
Generous 1 ½ cups (7 oz/200 g) all-purpose flour
2 eggs
2¼ cups (550 ml) whole milk
1 teaspoon salt
Vegetable oil or sunflower oil, for frying
For the filling:
2 tablespoons vegetable oil or sunflower oil
2 onions, finely chopped
9 oz (250 g) mushrooms, finely chopped
Salt and freshly ground black pepper
For the coating:
2 eggs, beaten
Generous ¾ cups (3½ oz/100 g) all-purpose flour
¾ cup (3½ oz/100 g) breadcrumbs
To serve:
Sour cream or plain yogurt (optional)

Steps:

  • To make the crepes, combine the flour, eggs, milk, and salt in a bowl and refrigerate for 1 hour. Heat a tablespoon of oil in a large frying pan. Add enough batter to thinly and evenly coat the base of the pan, tilting the pan to move the mixture around. Leave to cook for about 30 seconds until golden underneath, then ease a spatula under the crepe to lift and flip it over. Cook for a further 30 seconds, then transfer to a plate to cool. Repeat with the remaining batter.
  • To make the filling, heat the oil in large frying pan over medium heat and soften the onions. Add the mushrooms, season with salt and pepper, and cook for 30 minutes until the mixture resembles a rough paste. Set aside in a bowl to cool, then briefly pulse in a food processor to a coarse paste.
  • Spread 2 teaspoons of the mushroom filling onto one crepe, then bring the sides to almost meet in the middle. Roll the crepe and place seam-side down onto a tray. Repeat with the remaining crepes and filling.
  • To make the coating, place the eggs, flour, and breadcrumbs into separate shallow dishes. Cover the base of a large frying pan with a thin layer of oil and place over medium heat. Holding the crepes by both ends, quickly dip them into the egg, then the flour, and then the breadcrumbs and place seam-side down into the frying pan. Cook until the outsides are golden brown, turning a few times to brown evenly. Drain the crepes of any excess oil on paper towels.
  • Serve warm on their own or with spoonfuls of sour cream or yogurt.

60 g minced pork loin
300 g minced beef
50 ml dry white wine
50 g tomato puree
1 small bunch of mixed herbs (rosemary, thyme)
For the Crepes
250 g 00 flour
3 eggs
250 ml water
250 ml milk
30 g unsalted butter
1 tbsp extra virgin olive oil
Other Ingredients
200 g fresh large leaf spinach
1 egg
Salt & pepper to taste
250 g tomato sauce (see ingredients below)
300 g mini meatballs
150 g garden peas
250 g fior di latte mozzarella diced
200 g parmesan grated
40 g unsalted butter
Tomato Sauce
1 white onion
4 tbsp extra virgin olive oil
Salt & pepper to taste
1 small bunch fresh basil
2 black olives
1 garlic clove chopped
1/2 chili
600 g passata
Meatballs
150 g finely minced lean veal meat
1 egg
1 slice white bread soaked in milk
Salt & pepper to taste
4 g nutmeg
Flour to dust

Steps:

  • The Ragu
  • Sweat the chopped onion in a saucepan with a drizzle of extra virgin olive oil and a pinch of salt. Add the other vegetables and garlic and cook for 5 minutes. Then add a knob of butter and the pork and cook for 5 minutes. Now add the minced beef and season with salt and pepper. Cook for about 30-35 minutes until the meat has browned a bit. Pour in the white wine, and allow the alcohol to evaporate. Add a ladle full of water and the tomato puree. Then add some chopped rosemary and thyme and cook for another 15-20 minutes. Remove from the heat and set aside.
  • For the tomato sauce
  • Chop the onion roughly. In a large casserole dish, sweat the onion with the exra virgin olive oil and a pinch of salt. Cook until they start to caramelise, this wil bring out all the lovely sweetness of the onions. Once the onion is done add basil, olives and garlic and cook for a couple of minutes before adding the chili. When the onion, garlic and basil are golden pour the passata in. Add a pinch of salt and black pepper. Let it simmer for 15 minutes. A good tomato sauce does not need to be cooked for hours, no more than 30 minutes. The tomato sauce should be thicker, having been reduced by a third.
  • For the mini meatballs knead together the meat with the egg and the bread until smooth. Season with salt and pepper and nutmeg. Roll the meatballs, they should weigh between 2-4g each maximum. Dust the meatballs with flour and quickly cook them with a teaspoon of olive oil and a knob of butter, fry till golden and crispy.
  • Now prepare the crepes. Combine flour with the egg, water, milk and melted butter in a blender. Blend well, add a pinch of salt and pass the mixture through a fine seive to avoid lumps. Heat a small non stick frying pan wiith a drop of extra virgin olive oil. Use a kitchen towel to spread the oil evenly on the surface of the pan. Pour a ladle fo crepe mixture into the drying pan. Allow the mixture to spread over the surace of the pan and cook 1 minute on each side on medium heat. Repeat until the mixture is finished. This should make approximately 30-35 crepes to cool down on a tea towel.
  • Boil the spinach and fresh peas. Cool down in iced water to retain their colour. Prepare an egg wash by beating the egg and well and dressing with salt and pepper. Grease a baking try with butter and start to pay a first layer of creepes on the bottom of the tray. Make sure the sides are also covered. Then proceed to layer with a spoon of tomato sauce, beef ragu, mini meatballs, spinach, peas, mozzarella and a sprinkle of parmasen cheese. Finish with a spoon of the egg wash, cover with a couple of crepes and repeat the operations until there is no more crepes. This will create a multi-layered lasagne like bake. Leave a few crepes to cover the timballo. Spread a couple of knobs of butter over the top of the timballo. Bake at 150C for 45 minutes. It will be golden on the outside, keep an eye on the cooking after 20 minutes. If it rises too much, pierce a hole through the layers for it to reduce in size. it is still very wobbly, allow another 10 minutes to cook and lower the temperature to 130C.
  • Remover from the oven and allow to cool for 10 minutes before cutting and serve.

1 pound fresh pasta sheets
1/4 cup butter, melted, plus 1/4 cup
Basic tomato sauce, recipe follows
2 cups 1/4-inch diced mozzarella
Bechamel sauce, recipe follows
Ground veal, recipe follows
1 cup grated Parmigiano-Reggiano
1/4 cup onion, diced fine
3 tablespoons olive oil
1 (14-ounce) can whole peeled tomatoes
Salt and freshly ground black pepper
6 to 8 leaves fresh basil
6 cups milk
2 tablespoons butter
2 tablespoons flour
1/8 teaspoon nutmeg
Salt and freshly ground black pepper
2 tablespoons butter
1 1/2 pounds ground veal
Salt and freshly ground black pepper
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 375 degrees F.
  • Cook the pasta sheets in boiling, salted water until al dente. Shock the pasta in cold water. Lay the pasta out onto a clean kitchen towel and dry.
  • Take 1/2 of the melted butter and coat the bottom a 13 by 9 by 2-inch pan. Place a layer of pasta to cover bottom of pan. Ladle a thin layer of tomato sauce over the pasta, and sprinkle with 1/4 of the mozzarella. Add another layer of pasta sheets over the cheese. Ladle a thin layer of bechamel sauce over the pasta. Sprinkle 1/4 of the ground veal and 1/4 of the Parmigiano evenly over the bechamel. Repeat layering, until there are 3 layers of each. Add the final layer of fresh pasta and cover top layer with the remaining mozzarella, veal, Parmigiano and tomato sauce. Finally, ladle the remaining 1/4 cup of melted butter over the top and cover the pan with aluminum foil.
  • Bake approximately 30 minutes. Let stand for about 10 minutes before serving.
  • Saute the onion in olive oil until brown. Add the tomatoes and bring to a simmer. Crush tomatoes with a fork as they soften. Season with salt and pepper and add basil. Simmer for about 1 hour.
  • Bring the milk to a simmer in a saucepot. In a saute pan, combine the melted butter with the flour to make roux. Whisk the milk into the roux. Bring to a simmer and cook for 2 minutes. Remove from the heat and set aside.
  • Melt the butter in a saute pan. Add the veal and cook until brown and cooked through. Season with salt, pepper, and nutmeg. Drain off excess liquid and set aside.

3/4 cup whole milk
1 1/2 ounces unsalted butter, melted and cooled
1/4 teaspoon kosher salt
4 1/2 ounces all-purpose flour
1/4 cup fresh herbs (parsley, tarragon or chives), finely chopped
8 ounces shiitake mushrooms, thinly sliced
8 ounces cremini mushrooms, thinly sliced
3 tablespoons unsalted butter
1 medium onion, diced
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup whole milk
1 tablespoon chopped tarragon
1 tablespoon chopped chives
2 ounces provolone, shredded
Nonstick cooking spray or very cold butter, for the pan
1 1/2 ounces Parmesan, shredded

Steps:

  • For the crepes: Combine the eggs, milk, butter, salt and 1/2 cup water in the blender and blend for 7 to 10 seconds. Add the flour and blend until just combined, about 5 seconds, then stir in the herbs. Rest the batter in the refrigerator for 1 hour.
  • For the mushroom filling: Meanwhile, finely chop half of the shiitake and cremini mushrooms and set aside.
  • Heat a 12-inch saute pan over medium-low heat and add 2 tablespoons butter. When it has melted, add the onion and cook until translucent, about 5 minutes. Add all the mushrooms
  • (sliced and chopped), salt and pepper to the pan and cook, stirring occasionally, until the mushrooms are soft and the entire mixture has reduced to about one third of its original volume, 4 to 5 minutes.
  • Add the milk and cook until the mixture becomes a loose paste, about 2 minutes. Add the tarragon, chives and provolone and cook for another minute.
  • Heat the oven to 200 degrees F or its lowest setting. And set a cooling rack inside a half-sheet
  • pan.
  • Place an 8-inch nonstick pan over medium-low heat and coat with cooking spray or 1 tablespoon butter. Pour 1 ounce of the batter into the center of the pan and swirl the pan to spread it around evenly. Cook for 30 seconds, or until the edges of the crepe begins to turn up. Flip (you can use a small offset spatula) and cook for another 10 seconds.
  • Place the crepes in the oven on the cooling rack setup and cover with parchment until all the
  • crepes are ready.
  • Remove the crepes from the oven and turn broiler on high.
  • Spread a thin layer of the mushroom mixture on a crepe. Top with Parmesan and another crepe. Transfer to a broiler-proof plate. Repeat with 1 more layer, finishing with Parmesan. Build another crepe on another broiler-proof plate. Put the plates into the oven (if they can fit) and broil until the cheese is just browned, about 1 minute.

2 cups peeled, seeded, and chopped fresh tomatoes or drained and chopped canned imported Italian tomatoes

  • 1 In a skillet large enough to hold the cooked pasta, heat the olive oil over medium heat. Add the tomatoes and salt to taste. Cook, stirring occasionally, 10 to 15 minutes or until the tomato juices have evaporated. Turn off the heat. 2 Stir the chopped ingredients into the tomato sauce. Add pepper to taste. 3 Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well, gently pushing the pasta down until it is completely covered with water. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Drain the pasta, reserving some of the cooking water. 4 Add the pasta to the pan with the sauce and toss well 1 minute over medium heat. Add a little water if the pasta seems dry. 5 large eggs
1 1/2 cups water
1 teaspoon salt
1 1/2 cups all-purpose flour

FILLING
1 cup dried mushrooms
1 cup warm water
1/4 cup olive oil
1 pound fresh white mushrooms, rinsed and cut into thick slices
1 clove garlic, finely chopped
2 tablespoons fresh flat-leaf parsley
salt and freshly ground black pepper
12 ounces fresh mozzarella cheese sliced and torn into 1-inch pieces
1 cup freshly grated Parmigiano-Reggiano

Steps:

  • 1 Prepare the tomato sauce. In a large bowl, whisk together the crepe ingredients until smooth. Cover and refrigerate 30 minutes or more. 2 Heat a 6-inch nonstick skillet or omelet pan over medium heat. Brush the pan lightly with oil. Holding the pan in one hand, spoon in about 1/3 cup of the crepe batter. Immediately lift and rotate the pan to completely cover the base with a thin layer of batter. Pour off any excess batter. Cook 1 minute, or until the edge of the crepe turns brown and begins to lift away from the pan. With your fingers, flip the crepe over and brown lightly on the other side. Cook 30 seconds more or until spotted with brown. 3 Slide the cooked crepe onto a dinner plate. Repeat making crepes with the remaining batter, stacking them one on top of the other. 4 To make the filling, soak the dried mushrooms in the water for 30 minutes. Remove the mushrooms and reserve the liquid. Rinse the mushrooms under cold running water to removing any grit, paying special attention to the ends of the stems where soil collects. Chop the mushrooms coarsely. Strain the mushroom liquid through a paper coffee filter into a bowl. 5 In a large skillet, heat the oil. Add the mushrooms. Cook, stirring often, until the mushrooms are browned, 10 minutes. Add the garlic, parsley, and salt and pepper to taste. Cook until the garlic is golden, about 2 minutes more. Stir in the dried mushrooms and their liquid. Cook 5 minutes or until most of the liquid has evaporated. 6 Place a rack in the center of the oven. Preheat the oven to 375°F. In a 13 × 9 × 2-inch baking dish, spoon a thin layer of tomato sauce. Make a layer of crepes, overlapping them slightly. Follow with a layer of mushrooms, mozzarella, sauce, and cheese. Repeat the layering, ending with the crepes, sauce, and grated cheese. 7 Bake 45 to 60 minutes or until the sauce is bubbling. Let rest 10 minutes before serving. Cut into squares and serve hot.
