2 tablespoons salt
2 tablespoons black pepper
2 tablespoons dark brown sugar
2 tablespoons paprika
1/2 tablespoon cayenne pepper
4 lbs shoulder pork roast
2 cup apple juice
1 cup apple cider vinegar
2 tablespoons Worcestershire
1/2 tablespoon liquid smoke
1/2 tablespoon garlic powder
6 soft hamburger buns with seeds

Steps:

  • Mix the dry (salt, pepper, sugar, paprika and cayenne) in small bowl. Sprinkle dry rub all over the pork roast, pressing into the pork.
  • Cover with plastic and refrigerate for at least 2 hours.
  • Preheat oven to 325 °F.
  • Combine apple juice, vinegar, Worcestershire, liquid smoke and the garlic powder in a medium bowl and pour into a large Dutch oven. Place pork in the oven and tightly cover with aluminum foil then lid. Roast for 4 hours or until fork tender and shreds easily.
  • Brush the roast with cooking liquid every hour.
  • Remove from oven and let stand until cool enough to handle. Shred the pork with a fork or tongs into bite size pieces.
  • Serve on hamburger buns topped with BBQ sauce and cole slaw.

3 pounds boneless pork ribs
1 (18 ounce) bottle barbeque sauce

Steps:

  • Pour can of beef broth into slow cooker, and add boneless pork ribs. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks. It will seem that it's not working right away, but it will.
  • Preheat oven to 350 degrees F (175 degrees C). Transfer the shredded pork to a Dutch oven or iron skillet, and stir in barbeque sauce.
  • Bake in the preheated oven for 30 minutes, or until heated through.

2 small onions, sliced, separated into rings
1 cup KRAFT Original Barbecue Sauce
8 sandwich buns, split

Steps:

  • Place meat in slow cooker; top with soup mix, onions and barbecue sauce. Cover with lid.
  • Cook on HIGH 4 to 6 hours (or on LOW 8 to 10 hours). Remove meat from slow cooker; chop or shred with fork. Return meat to slow cooker; stir to coat with sauce.
  • Fill buns with meat mixture and Singles.

This recipe takes a good deal of time, but it yields a lot of sandwiches, more than enough for a sloppy, spicy dinner party feast. You'll roast a dry-rubbed pork shoulder in the oven until it's pull-apart tender, 3 or 4 hours that you can spend doing other things while your kitchen fills with the aroma of the cooking meat. Then you'll assemble a quick slaw and simmer a tangy barbecue sauce for about 10 minutes before putting it all out on the table with soft rolls. Serve the combination warm, at any time of the year, for a weekend project well worth an afternoon's work.

1 1/2 teaspoons whole coriander seed
1 1/2 teaspoons whole cumin seed
1 1/2 teaspoons black peppercorns
2 1/4 teaspoons coarse kosher salt
1 1/2 teaspoons dry mustard powder
1 1/2 teaspoons chile powder
3 tablespoons dark brown sugar
3 1/2 pounds boneless pork shoulder
Hamburger or brioche buns, for serving
1 1/2 cups ketchup
1/4 cup packed dark brown sugar
2 tablespoons molasses
2 garlic cloves, minced or grated
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce
2 teaspoons sweet or hot paprika
1 teaspoon black pepper
1 teaspoon dry mustard powder
Pinch of cayenne
Dash of hot sauce, more to taste
1 small head green cabbage, outer leaves removed, shredded (about 1 1/2 pounds)
1/2 small red onion, thinly sliced
1 large jalapeño, seeded if desired, thinly sliced
3/4 cup mayonnaise
2 tablespoons cider vinegar
2 tablespoons extra-virgin olive oil
1 teaspoon coarse kosher salt
Black pepper

Steps:

  • Assemble the spice rub for the pork: In a dry, small skillet over medium-low heat, toast coriander, cumin and peppercorns until fragrant, 1 to 2 minutes. Using a spice grinder or mortar and pestle, grind toasted spices into a fine powder. Transfer to a bowl and mix with salt, mustard powder, chile powder and sugar.
  • If your roast is tied up, untie it. Massage meat generously with spice rub. If you have time, let meat rest for an hour or two at room temperature, or refrigerate for several hours or overnight.
  • Heat oven to 300 degrees. Place pork in a baking pan and roast for 3 to 4 hours or until meat is pull-apart tender and internal temperature reads 200 degrees on a meat thermometer. Let meat cool for at least 30 minutes before pulling it apart and shredding with your hands or two forks. (This works best when the meat is warm but not hot.)
  • Prepare the barbecue sauce: Combine ingredients in a medium pot. Simmer over medium-low heat for 15 to 20 minutes, stirring occasionally, until sauce has deepened in color. Season with more hot sauce if you like. Add two-thirds of the sauce to meat and toss to coat, adding more sauce as needed. (Any leftover sauce will keep for at least 2 weeks in the refrigerator.)
  • Make the slaw: Combine cabbage, onion and jalapeño in a large bowl. In a small bowl, whisk together mayonnaise, vinegar, olive oil, salt and pepper. Add dressing to cabbage and toss well.
  • Serve pulled pork with slaw, buns and hot sauce on the side, letting people assemble their own sandwiches.

This is from A&R BBQ, on Elvis Presley Blvd. in downtown Memphis, Tn. They say that the secret to BBQ is the cut of meat, the heat of the coals, and the sauce. This is one of my very favorite sandwiches. It's mouth-watering, succulent, oh-so-tender! Try it! Make sure to use a really good BBQ sauce. Have this with some crispy coleslaw and a great lager beer! I love to put the coleslaw right on my sandwich! Servings will vary, as the size of buns and the quantity of meat put on the buns.I will, for the sake of notating, call it 10 to 12 servings. That may be close. Times will vary, depending on the temperature of your coals.

  • Place the pork shoulder, fat-or-skin side down, on a grill rack over a very hot pit. Cook for 5 hours. Turn and cook until the shoulder reaches an internal temperature of 180 ° in the thickest part when tested with a meat thermometer, about 3 hours longer.
  • Remove the pork shoulder from the pit, and pull off the meat as you need it. You may leave meat to pull or chop it.
  • Take large toasted bun, pour hot BBQ sauce over meat, and add coleslaw.
  • This makes a awesome finger-licking sandwich.

1/4 cup brown sugar
1/4 cup paprika
3 tablespoons pepper

Steps:

  • Combine dry rub ingredients and rub all over pork shoulder. Cover and refrigerate for 24 hours.
  • Combine ingredients for basting sauce and mix thoroughtly; cover and refrigerate overnight to blend flavors.
  • Preheat oven to 250. Place pork shoulder in roaster pan with a rack underneath. Brush some of the basting sauce over pork. Cook for 8-9 hours or until pork falls apart, basting every hour.
  • Meanwhile, combine barbeque sauce ingredients in saucepan and bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Serve with pork.
  • It would be great served on buns with the sauce.

I grew up in Cleveland, OH where a popular, local BBQ place (Whitmore's) serves this as a sandwich or a dinner. I moved years ago and have since lived in the South, but nothing comes close to this sandwich. I suppose it's one part nostalgia and one part a "doggone good meal". This is my rendition and I think it comes pretty close since I'm no where near getting any Whitmore's on a regular basis.

6 -8 lbs pork butt or 6 -8 lbs pork shoulder
1/4 cup brown mustard or 1/4 cup spicy mustard
8 -10 slices Texas toast thick bread (or Wonder, Iron Kids, etc..)
barbecue sauce (your favorite)
Coleslaw (I use KFC Coleslaw KFC Coleslaw) (optional)
French fries (I buy a large order from a local eatery because their fries are addictive) (optional)
2 1/2 tablespoons sweet paprika
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper (add less to adjust heat)
1 tablespoon oregano
1 tablespoon thyme

Steps:

  • Coat shoulder with mustard and sprinkle liberally with Spice Rub coating all sides.
  • Place in a plastic bag and refrigerate overnight.
  • Remove from refrigerator and allow to sit at room temperature for 1 hour.
  • Preheat oven to 250 degrees.
  • Place uncovered shoulder directly on rack with a drip pan beneath.
  • Roast for 7-8 hours (or until falling apart).
  • Remove from oven to a cooling rack to rest for at least 1 hour.
  • Pull pork apart using fingers or two forks.
  • Serve by topping 1 slice of bread with a generous portion of meat, BBQ sauce, coleslaw and fries.
  • It makes a pretty messy (but unbeatable) open-faced sandwich so you may want to have forks at the ready.

2 boneless pork loin roasts (3 pounds each)
1 cup water
2 teaspoons salt
2 cups ketchup
2 cups diced celery
1/3 cup steak sauce
1/4 cup packed brown sugar
1/4 cup white vinegar
2 teaspoons lemon juice
25 hamburger buns, split

Steps:

  • Place roasts in an 8-qt. Dutch oven; add water and salt. Cover and cook on medium-low heat for 2-1/2 hours or until a thermometer reads 145°. , Remove roasts; let stand for 10 minutes. Shred with a fork; set aside. Skim fat from cooking liquid and discard. Drain, reserving 1 cup cooking liquid. Add the meat, ketchup, celery, steak sauce, brown sugar, vinegar and lemon juice. Cover and cook over medium-low heat for 1-1/2 hours. Serve on buns.
