Baby spinach
Sliced almonds
Chinese noodles
Mandarin oranges (optional)
Sweet & Sour Dressing
2 cups mayo
1/2 cup rice wine vinegar
2 Tablespoons sugar
1 Tablespoon soy sauce

Steps:

Put together baby spinach, sliced almonds and Chinese noodles (mandarin oranges, optional).
Sweet & Sour Dressing
Mix all ingredients with a whisk until well blended. Just before serving, pour only as much dressing as needed over salad ingredients and toss.

While the bacon cooks, start the dressing: in a large bowl, whisk together the vinegar, honey, mustard, salt, and pepper. Set aside.
Pour the bacon fat into a heatproof bowl, then return 4 tablespoons of the bacon fat to the skillet. Add the shallots to the skillet and cook over low heat, stirring frequently, until softened, 1 to 2 minutes. Do not brown.
