A happy team of apples and nuts in a snack cake that needs no shortening. Because DH likes thing super sweet this cake is overly sweet. Please see Annacia's review as you may wish to cut the sugar in order to make it more to your taste.

3/4 cup Egg Beaters egg substitute
1 teaspoon vanilla
1 cup Splenda brown sugar blend
1 teaspoon cinnamon
3/4 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
2 apples, peeled and finely chopped
1/2-1 cup walnuts

Steps:

  • Preheat oven to 350*F and grease 8-inch square pan.
  • In large mixing bow, beat egg beaters and vanilla until frothy; gradually add Splenda brown sugar, continuing to beat after each addition.
  • Add cinnamon, baking powder and salt; gradually add flour continuing to beat after each addition.
  • Stir in apples and nuts.
  • Pour into greased pan.
  • Bake 30 to 45 minutes or until toothpick inserted in center comes out clean.
  • Serve warm or cool. Can be topped with whipped cream.

2 cups sugar
2 teaspoons baking soda
4 cups finely diced apples
1/2 cup walnuts
1/2 cup soft butter
2 eggs, lightly beaten
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9x13 baking pan.
  • Sift dry ingredients into a bowl.
  • Add remaining ingredients and beat just until combined.
  • Batter will be thick.
  • Spread evenly in pan.
  • Bake one hour or until tests done.

3 tablespoons butter, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups diced peeled apples
1/4 cup chopped nuts
Whipped cream or ice cream

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda, salt, cinnamon and nutmeg; add to creamed mixture (batter will be very thick). Stir in the apples, nuts. , Spread into a greased 8-in. square baking pan. Bake at 350° for 35-45 minutes or until a toothpick inserted in the center comes out with just a few crumbs. Serve warm or cold with whipped cream or ice cream.

This is my husband's favorite. His mom gave it to us many years ago. I have refined the recipe just a little since then. Please don't tell her...hehe. It doesn't need a frosting because it is so yummy just by itself, but it would dress it up to drizzle with a thin creamy icing. I had misplaced this recipe for the longest time and had thought I had lost it, so I hadn't made it for ages. My husband found it this weekend and I have made it twice since then. Both times it was gone before it was even all the way cooled, thanks to our 5 daughters. My husband and I barely managed to claim a few bites before it disappeared. I'm posting it here to share with everyone and to keep it from ever getting lost again. It's definately a keeper.

1/2 cup any kind brown sugar (dark is best)
1 cup sugar
1/4 cup oil
1/4 cup butter, very soft
2 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons cinnamon

2 teaspoons baking soda
4 cups raw apples, peeled cored,and diced (2 large or 3 medium or 4 small)
1 cup coarsely chopped walnuts

Steps:

  • Grease and flour a 9x13 baking pan.
  • Preheat oven to 325 F.
  • Sift dry ingredients into a bowl and set aside.
  • In another mixing bowl, stir together the first six ingredients, then fold in the dry ingredients, followed by the apples and nuts.
  • Spread in the prepared pan.
  • The batter will be thick.
  • Bake until it tests done by poking it with a toothpick in the center.
  • If it comes out dry it is done.
  • Baking time will be approximately 40 mins, plus or minus.

1/2 teaspoon vanilla
1/2 cup sugar
1/2 cup flour

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 8" round baking pan with cooking spray.
  • Chop up your apples.
  • Beat the eggs in a small bowl until fluffy.
  • Combine sugar, flour, baking powder and cinnamon in a bowl. Whisk together.
  • Combine wet and dry ingredients together.
  • Sprinkle 1/2 apples in bottom of pan.
  • Pour over batter. It will be thick and you'll have to work it around the pan with a spatula.
  • Sprinkle remaining apples on top and sort of press them down into batter.
  • Bake for approximately 25 minutes or until golden.

2 medium tart apples, peeled and thinly sliced
1-1/2 cups chopped walnuts
Whipped topping, optional

Steps:

  • In a bowl, combine the eggs, sugar, milk and vanilla. Combine the flour, cinnamon, baking powder and salt; add to egg mixture and mix well. Stir in the apples and walnuts. Transfer to a greased 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. Cut into squares. Serve with whipped topping if desired.
