Steps:
- Preheat oven to 350°.
- Melt 2 T butter in a skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
- Pour mixture into a 2 1/2 quart casserole dish. Spread shredded cheese over the top.
- In a small bowl, mix Ritz crackers with 1 T butter; sprinkle over the cheese.
- Bake for 30 minutes until the top is golden brown.

Steps:
- Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
- Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
- Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

Steps:
- Preheat oven to 375. Grease/spray a casserole dish; set aside.
- Melt butter in a saucepan. Add coarsley chopped onions and sautee until soft and translucent but NOT brown.
- Stir in the flour until dissolved.
- Whisk in the mlik, stirring constantly for several minutes until thickened.
- Stir in the Dijon, parmesan cheese, salt, pepper and red pepper flakes. Stir constantly until thick and cheese is melted.
- If too thick at this point, add more milk.
- Remove from heat and gently stir in the drained green beans.
- Pour into the prepared casserole dish.
- Sprinkle with the crushed buttery crackers.
- Bake at 375 for 30 minutes or until cracker crumbs brown.

GREEN BEAN AND CORN CASSEROLE
I found this (strangely enough) in a newsletter advertising area flea markets/antique shops in Tennessee while we were passing through on vacation. (My husband picked the flier up at a rest area.) I gave it a shot, and wow...outstanding!

- Preheat oven to 350°F.
- Place drained green beans and corn in a 1 1/2 quart greased casserole dish.
- Mix soup, sour cream and cheese and pour over top of vegetables.
- Crush crackers and mix thoroughly with melted butter.
- Place evenly over top of casserole.
- Bake uncovered for 30 minutes.

SOMETHING DIFFERENT GREEN BEAN AND CORN CASSEROLE
Adapted from Southern Living. This is very different from the usual green bean casseroles out there. I prefer sweet onions such as Walla Walla or Vidalia, but ordinary cooking onions are fine too. French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.

- Mix together the cracker crumbs, nuts, and the melted butter and set aside.
