APPLE SLAB PIE
A good choice if the school or church asks you to bring dessert. Kind of like Dutch apple pie.

- Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine flour sugar, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. Mix egg yolk and water together and mix into flour until it forms a ball. Roll out to fit the bottom of a 10x15 inch pan.
- In a large bowl, combine apples, lemon juice, 2 tablespoons flour, sugar and cinnamon. Pour filling into pie crust and dot with 2 tablespoons butter.
- In a medium bowl, combine 1 cup flour, 1 teaspoon cinnamon, 2/3 cup brown sugar and 2/3 cup butter. Cut in the butter until crumbly, then sprinkle over apples.
- Bake in the preheated oven for 60 minutes, or until topping is golden brown.

APPLE PIE BARS
Homemade danish pastry with loads of apples baked inside. The almond glaze is a must on these apple pie bars.

Steps:
- Preheat the oven to 375º Fahrenheit.
- In a stand mixer bowl, combine flour and salt. Using a pastry cutter, cut in the cold butter until the mixture becomes coarse crumbs. Snap the butter between your fingers if needed to combine the flour and butter. It's ok if there are little chunks of butter. That's what will make your pastry flaky.
- In a separate cup, beat the egg yolk, reserving the egg white until later. Stir the cold water into the yolk. Gradually add the egg mixture to the flour mixture until dough comes together to form a ball.
- On a floured pastry mat, roll out half of the dough large enough to cover the bottom and sides of an ungreased 9x13 inch pan. Place the dough in the pan.
- Sprinkle the crushed cornflakes over the bottom of the dough in the pan.
- Arrange apple slices over the top of the cornflakes. Sprinkle the sugar and cinnamon over the apples.
- Roll out the second half of the dough to cover the entire pan with a little dough hanging over the edge. Lay the dough over the filling and pinch the edges of the two crusts together.
- Whisk the reserved egg white until foamy and brush onto the top crust with a pastry brush.
- Bake the bars for 45 to 50 minutes or until golden brown on top.
- To make the almond glaze, whisk the powdered sugar, milk and almond extract until smooth. Drizzle the glaze over the warm apple pie bars.
- Serve with ice cream if desired.
- Store in an airtight container at room temperature.

- Place flour in a large bowl; cut in shortening until crumbly. In a small bowl, whisk egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough holds together when pressed. Shape into a rectangle. SLAB APPLE PIE WITH EASY CRUMB TOP
This easy to prepare slab apple pie takes just minutes. It's delicious and simple, and a huge hit for fall.

- In the bowl of a food processor fitted with a metal blade, place the flour, salt, and butter cubes. Pulse until coarse crumbs are formed. Pulse in cold water until the dough easily holds together.
- Pat these crumbs into the bottom of a 9x13-inch pan. You can use a butter wrapper to press and keep the crumbs from sticking to your hand.
- In large mixing bowl, combine apple slices, sugar, lemon juice and cinnamon. Spread this mixture in an even layer over crust.
- In the food processor, combine the flour, butter, and brown sugar, pulsing until coarse crumbs are formed, or in a large mixing bowl, combine these ingredients, cutting butter into sugar and flour with a pastry blender or two knives held together. Stir in nuts. Sprinkle crumb top over apple layer.
- Preheat oven to 375°. Bake for 45 minutes to an hour or until filling bubbles. Cool completely.

APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
AWESOME APPLE CRISP
I especially like this recipe as it makes a 9x13 pan as opposed to a 9x9, which I find handy when I have some extra mouths to feed. I first made this instead of my usual smaller version, at Christmas when invited to my sisters for dinner,she already had pumpkin pie, so she asked for an apple crisp, everyone really enjoyed it, and the next time we were invited for dinner, guess what they wanted me to bring? ( original recipe did not call for lemon juice, but my other version does,so I add it out of habit I guess!)

- Peel& slice your apples and place in bottom of 9x13 inch baking dish.
- Mix sugar, 1 tablespoons.
- flour& cinnamon together and sprinkle over apples.
- Pour water evenly over all.
- (and lemon juice if using) Combine the toppping ingredients until crumbly and spread all over apples.
- Bake at 350 for about 45 minutes.
- I serve topped with vanilla ice cream!
