Fast Easy 8 Can Taco Soup that is so delicious you'll be on your way to a Spicy Delight in minutes flat by simply adding a few extra seasonings to 8 cans and dinner is served. The bonus is that it gets better the next day!

Steps:
- Brown the ground beef in the bottom of a large stock pot over medium heat until the meat is no longer pink.
- Open the cans and drain according to the ingredient list. Add the cans to the stock pot. Add the beef broth, taco seasoning, ranch packet, salt, pepper and chili pepper, garlic and onion powder. .
- Heat over medium to medium high heat until heated through.
- Serve hot with shredded cheddar cheese, sour cream, scallions and corn chips (instead of crackers).

- Heat the oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the scallion whites and cook, stirring occasionally, until fragrant and soft, about 2 minutes. Add the beef and cook, stirring to break it up into small crumbles, until cooked through, 8 to 10 minutes. Stir in the taco and ranch seasonings until well combined.
- Add the tomatoes, beans, corn and 1 teaspoon salt. Fill one of the bean cans with water and add it to the pot. Bring to a boil, then reduce the heat to medium and simmer, stirring occasionally, until the beans are warmed through, about 10 minutes.
- Serve in bowls with scallion greens, Cheddar, sour cream and pico de gallo.

This is a quick 'n easy soup to put together. My husband and I especially enjoyed this soup the next day, as the seasonings seem to meld together in the soup a bit more. We also enjoyed the soup along with grilled cheese sandwiches.

- 1. In a large kettle or Dutch oven, add the ground beef and onion. Cook the ground beef till it browns, and the onion is tender. Drain off any excess grease.
- 2. Add the cooked beef back to kettle, then sprinkle the packets of taco seasoning mix and ranch dressing mix, over the meat. Stir well to incorporate the seasonings into the meat.
- 3. Add the beef broth and canned tomatoes.
- 4. Add remaining ingredients into the kettle; stir, and simmer the soup (uncovered) for about an hour. Stir the soup occasionally while it's simmering.
- 5. Ladle soup into bowls and serve.
TACO SOUP
This soup seems just perfect for the whole family. A wonderful recipe to modify according to your tastes, I usually leave out the olives, and let my olive lover boyfriend add them on his own at the end. Another great Paula Deen recipe.

- Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot.
- Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove.
