This is a nice light bread that is very tasty for sandwiches and does not require the whole wheat cycle on the ABM. It is from the "Canadian Bread Machine Baking" with Roxanne McQuilkin.

WHOLE WHEAT BREAD WITH GINGER & CASHEWS FOR ABM
Entered for safe-keeping, from "The Best Bread Machine Cookbook Ever: Ethnic Breads" by Madge Rosenberg. Slightly nutty, slightly spicy, very healthy. Toast to bring out the nutty taste and make the kitchen smell of ginger. For sandwiches, try sliced eggs or turkey or cucumber, tomato, and sprouts. I think this is an Indian combination; please advise if a different part of Asia would be more appropriate. Makes a 1 1/2-pound loaf.

WHITE WHOLE WHEAT BREAD FOR THE ABM
The initial recipe is in my Zojirushi cookbook.I don't usually bake my bread in the machine. It is summer and I still want to make my own bread without heating up the house.So I tried this and very pleased with the result. White whole wheat flour is new around here. Next time I will try it with regular whole wheat.

- Microwave buttermilk for 30secs to a minute so it's lukewarm.
- Add all ingredients to breadmachine in the order listed.
- Select 1.5 lbs loaf
- NOTE: Due to difference in moisture content of flour you may want to watch bread mixture to ensure the right consistency. If the mixture is too dry add one tablespoon of buttermilk and a time & if it's too wet add a tablespoon of flour at a time. Make sure the buttermilk or flour is completely incorporated before adjusting again.

This loaf bakes up tall and fluffy!! We use a wheat blend flour from Gold Medal and Bread flour for this recipe. The recipe below is for a 2 lb. loaf.

- Place all ingredients in bread pan, using the least amount of liquid listed in the recipe.
- Select Whole Wheat cycle and Medium Crust setting.
- Press start.
- Observe the dough as it kneads. After 5 to 10 minutes, if it appears dry and stiff or if you machine sounds as if it's straining to knead it, add more liquid 1 tablespoon at a time until dough forms a smooth, soft, pliable ball that is slightly tacky to the touch.
- After baking cycle ends, remove bread from pan, place on cake rack and allow to cool 1 hour before slicing.
- Note: Number of servings depending on thickness of slice.

BEST EVER WHITE BREAD (ABM)
This is a recipe I developed from lots of trial and error. I just kept experimenting with my bread maker. This same dough makes beautiful dinner rolls as well.

- Place ingredients in bread maker following your manufacturers guidelines.
- Personally I only mix it up in the bread maker. When it is done proofing I turn it out onto a floured surface shape it and place it in a greased (cooking spray) loaf pan. Let rise for approx 1 hour, til doubled. I bake for 30 minutes at 350 degrees.
50% WHOLE WHEAT BREAD
This is our "everyday" lunch bread. I make it every night for the next day. I originally got it from the Oster bread machine recipe book but I adapted it somewhat. The 100% whole wheat recipe was just too heavy for our family. It makes a 2 lb loaf. Once I started making this bread, I couldn't go back to store bought!

- Put the ingredients into the bread machine pan in the order listed (and as accurately as possible).
- Select the whole wheat bread cycle (usually takes 3 1/2 hours).
- Remove from the pan when it's done and let cool for 15 minutes before slicing.
- During the summer I reduce the yeast to 1 tsp because it seems to rise so much more during the summer than the winter. Or you could increase the salt slightly (salt kills the yeast so it doesn't rise out of the machine!) So if you're getting a really huge loaf (and some of you have) try one of these 2 things and it should be better for you. For some reason atmospheric pressure (which varies according to seasons) makes a difference in how a bread rises. Enjoy!
- Thanks for all your great reviews! Another thing I've been doing to make this even healthier is adding 2 tablespoons of ground flax seed with the flour. It doesn't really change the flavour but adds some good for you omega 3s!
EASY WHEAT SOURDOUGH BREAD (ABM)
This recipe goes along with Easy wheat sourdough starter. Directions are included for the sponge and the dough. Good Luck :) Dough is to be mixed in a bread machine.

- FOR THE SPONGE. (This will make the proofed sourdough starter.).
- 1 cup starter, 3/4 cup water & 2 cups flour.
- Mix the starter with the flour & water.
- Set aside and let sit 4-8 hours or overnight in the refrigerator.
- Let proceed till it expands 3 times it's original size.
- FOR THE DOUGH.
- Add in all ingredients starting from 1 1/4 proofed starter into the bread machine.
- Let the bread machine mix, kneed and do the first rise.
- Remove at beep to lightly floured surface.
- Divide dough into 2 equal portions.
- Pat each dough portion out into a flat circle.
- Gently stretch and fold the left side over the middle, then the right over the middle.
- Like folding a letter.
- Shape, always keeping the folded side on the bottom.
- Spray pan with pam & then place shaped dough into pans.
- Spray the tops and cover with plastic wrap.
- Refrigerate over night.
- Take out in the morning and let them finish rising at room temperature.
- They should be light.
- Don't rush the rising or your bread will be dense.
- Bake at 350 until done, about 30 minutes.
- If your bread is browning too fast, tent with aluminum foil.
- The bread is done when internal temperature reaches 210.

BASIC WHITE BREAD FOR BREAD MACHINE ABM
From my bread machine's recipe book, for use with the Basic Medium cycle. I'm also including the specs for bigger capacities but listing the recipe for a 1-lb loaf. My machine requires you to proof the yeast first; some may not so disregard Step 1 if you don't have to proof! (2 1/4 cups AP flour + 6 3/4 tablespoons vital wheat gluten = 2 1/4 cups bread flour) My Medium cycle for a 1-lb loaf takes about 70 minutes, other machines will vary.

- If you have to proof the yeast first, proof it in the sugar and water in the bread machine's basin for 10-15 minutes or until foamy; then mix the other ingredients together and pop it in for the Basic Medium or Basic White cycle.
- If not, just throw everything in, hit the Basic Medium or Basic White cycle for a 1-lb capacity, and kick back and let the machine do its work! The 1-lb loaf yields about 10 large slices.
- For 1.5-lb loaf, use 1 cup water, 3 tablespoons oil, 3 tablespoons sugar, 1 1/2 teaspoons salt, 3 cups bread flour (3 TB vital wheat gluten + 3 cups AP flour) and 2 1/4 teaspoons active dry yeast.
- For 2-lb loaf, use 1 1/3 cups water, 1/4 cup oil, 1/4 cup sugar, 2 teaspoons salt, 4 cups bread flour (4 TB vital wheat gluten + 4 cups AP flour), and 1 tablespoon active dry yeast.
