BURGER OR HOT DOG BUNS

Burger or Hot Dog Buns image

This recipe can be used to make either hamburger buns or hot dog buns. My husband says they are 'top of the line.' Nice and soft.

Categories     Bread     Yeast Bread Recipes     Rolls and Buns

Time 1h30m

Yield 12

Number Of Ingredients 8

1 cup milk
½ cup water
¼ cup butter
4 ½ cups all-purpose flour
1 (.25 ounce) package instant yeast
2 tablespoons white sugar
1 ½ teaspoons salt
1 egg

Steps:

  • In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
  • In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
  • Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
  • Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
  • For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

EASY, PERFECT HOMEMADE HAMBURGER OR HOT DOG BUNS

Easy, Perfect Homemade Hamburger or Hot Dog Buns image

Tender homemade hot dog and hamburger buns are easy to make. If you are making hot dog buns I find it easiest to roll the dough out into a large rectangle and cut into smaller rectangles. Let rise with sides touching. You can brush the tops with egg wash and sprinkle with poppy seeds, sesame seeds, coarse sea salt, or whatever you like. You can add dry onion soup mix for onion rolls. These are very versatile!

Provided by Marye Audet-White

Time 1h

Number Of Ingredients 8

1 cup milk
1/2 cup water
1/4 cup unsalted butter
4 1/2 cups flour ((unbleached, whole wheat, or a mix))
1 active dry yeast
1 tablespoons honey
1 1/2 teaspoons salt
1 egg (, room temperature)

Steps:

  • Heat the milk, water, honey and butter until butter is melted.
  • Check temperature. Depending on the temperature, let cool to 120F.
  • Carefully beat in egg.
  • Mix 2 cups of the flour, yeast, and salt.
  • Mix into the milk mixture.
  • Stir in the rest of the flour, 1/2 cup at a time. Beat well after each addition.
  • When the dough pulls together, (it will form a soft ball) turn it out onto a floured surface and knead until smooth and elastic. This should take about 5 minutes.
  • Divide dough into 12 -16 equal pieces. This will depend on the size you want for the finished bun.
  • Shape into smooth balls, flatten slightly, and place on a silpat covered baking sheet.
  • Let rise for 30 to 35 minutes.
  • When buns have almost doubled bake at 400 degrees for 10 to 12 minutes, or until done.
  • Cool, covered with a tea towel to keep them soft.

HAMBURGER OR HOT DOG BUNS

Hamburger or Hot Dog Buns image

There's nothing better with your burgers than homemade buns. For a heartier bun substitute 1 cups of whole wheat flour for 1 cup all-purpose flour. I've written the instructions for use with a stand mixer, however you can knead by hand. Prep time includes rising. Recipe comes from Peter Reinhart's 'The Bread Baker's Apprentice'. These are hearty buns, perfect for bratwurst and BBQ sandwiches. Note: Milk can be substituted for the buttermilk, and will slightly affect the final outcome, so experiment and see which one you like best. The same is true with the different types of fat.

Provided by Galley Wench

Categories     Yeast Breads

Time 3h20m

Yield 12 serving(s)

Number Of Ingredients 11

4 1/4 cups unbleached all-purpose flour (19 oz.)
1 1/2 teaspoons salt
3 tablespoons granulated sugar
2 teaspoons instant yeast
1 large egg, slightly beaten, at room temperature
1/4 cup butter, room temperature (margarine, shortening or vegetable can be substituted)
1 1/2-1 3/4 cups buttermilk, room temperature (milk can be substituted)
1 egg, beaten with
1 teaspoon cold water
2 tablespoons poppy seeds (optional) or 2 tablespoons caraway seeds (optional)
cooking spray

Steps:

  • In a large mixer bowl, blend together the flour, salt, sugar and yeast.
  • Pour in the egg, butter and 1 1/2 cups buttermilk and mix on low speed with the paddle attachment until all the flour is absorbed and the dough forms a ball. If dough seems very stiff and dry, add additional buttermilk until the dough is soft and supple.
  • With dough hook, knead dough on medium speed until soft, supple, and tacky, but not sticky. Continue kneading until the dough clears the sides of the bowl (may stick slightly to the bottom).
  • Lighly oil a large bowl and transfer the dough to the bowl, turning over to coat it with oil.
  • Cover with plastic wrap and allow to rise at room temperature for 1 1/2 to 2 hours, or until the dough doubles in size.
  • Remove dough from bowl and divide into 12 pieces, 3 ounces each.
  • Shape each piece into a ball by stretching the surface of the dough around to the bottom on all sides, rotating the ball a quarter-turn as you go.
  • Place on lined baking sheets.
  • Mist the dough lightly with spray oil and cover with a towel or plastic wrap and allow dough to rest for 20 minutes.
  • For hamburger buns: gently press down on the rolls to form the desired shape.
  • For hot dog buns: gently roll the dough on floured surface until elongated to about 4 inches; transfer to lined baking sheets.
  • Mist tops of buns with spray oil and loosely cover with plastic wrap or a towel. Allow dough to rise at room temperature for 60 to 90 minutes, or until nearly doubled in size.
  • Preheat oven to 400°F.
  • Brush tops of the buns with egg wash and garnish with sesame or poppy seeds.
  • Bake for approximately 15 minutes or until they are golden brown (interior temperature should register 180 degrees in the center).
  • When the buns are done, remove immediately from the baking sheet and cool on a wire rack; This will prevent the crust from becoming soggy.

  • In the bowl of a standing mixer (or just in a large bowl), add both flours, powdered milk, sugar and yeast. Stir with a whisk to combine. Stir the egg into the water and pour into the flour. Fit your mixer with the dough hook and mix on low (speed level 2) just until the dough comes together in a shaggy mess – about 1 minute. (If you’re not using a mixer, stir with a wooden spoon, or with your hands.) Cover the bowl with plastic wrap and let sit for 20 minutes, or up to 1 hour, at room temperature.
  • After this resting period, it’s time to knead. With your mixer fitted with the dough hook, knead the dough on low (speed level 2) for at least 10 minutes, adding the melted butter bit by bit, alternating with the salt. With each addition of butter, the dough will come apart a bit – let it keep kneading until it comes back together in a cohesive ball before adding more. Sprinkling in a bit of the salt after each addition of butter, will help the dough come back together. (If kneading by hand, work the butter and salt into the dough with your hands until fully incorporated. Turn out onto a lightly floured surface and knead for about 10-15 minutes. If you’ve never kneaded dough, here’s a good tutorial.) Knead until the dough is soft, supple, and tacky but not sticky. If the dough feels dry – not tacky at all – after adding all the butter, add additional water, one tablespoon at a time, until the dough is soft, smooth and tacky.
  • Grease another large bowl with butter, oil, or non-stick spray. Turn the dough out into this bowl, cover with plastic wrap that’s also been greased with butter, oil or non-stick spray, and let rise for 1 1/2- 2 1/2 hours, until doubled in size. (The length of time this takes will depend on the room temperature. If you want to lengthen the rise time to better accommodate your schedule, place the dough in the refrigerator for up to 12 hours, bringing it to room temperature before continuing with the recipe.)
  • Line two baking sheets with parchment paper. After the dough has doubled in size, remove the dough from the bowl to a flat work surface. Divide into 12 even pieces.

  • To mix the dough: In a large bowl, dissolve the sugar and then the yeast in the warm water. Add the milk, oil, salt and 3 cups of flour to the yeast mixture.
  • Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a floured work surface.
  • Knead until you have a smooth, elastic dough. Because this dough is so slack, you may find that a bowl scraper or bench knife can be helpful in scooping up the dough and folding it over on itself.
  • Put the dough into an oiled bowl. Turn once to coat the entire ball of dough with oil. Cover with a tightly-woven dampened towel and let rise until doubled, about one hour.
  • Turn the dough out onto a lightly oiled work surface. Divide into 18 equal pieces. This is done most easily by dividing the dough first into thirds, then those thirds into halves, then the halves into thirds.
  • Shape each piece into a ball. For hamburger buns, flatten the balls into 3 1/2" disks. For hot-dog buns, roll the balls into cylinders, 4 1/2" in length.
  • For soft-sided buns, place them on a well-seasoned baking sheet a half inch apart so they'll grow together when they rise. For crisper buns, place them 3" apart.
  • Fifteen minutes before you want to bake your buns, preheat your oven to 400°F. Just before baking, lightly brush the tops of the buns with the egg wash and sprinkle with whatever seeds strike your fancy.
  • To bake the buns: Bake for 20 minutes or until the internal temperature of the bread reaches 190°F. (A dough thermometer takes the guesswork out of this.)
