EASY PUDDING FUDGE
Found this in a recipe flier from Jell-O but I've never tried it. You need to use the Cook and Serve variety, NOT instant.

Steps:
- In medium saucepan stir pudding mix and milk.
- Add margarine and bring just to boil over low heat stirring constantly.
- Remove from heat: quickly stir in sugar blending well.
- Add nuts and pour into greased 9 x 5-inch loaf pan.
- Chill 30 minutes then cut into pieces.

5 STAR FUDGE PUDDING
I've been making this recipe for many years. With a fudgy, brownie-cake and rich chocolaty pudding, it's a go-to favorite when I want something chocolate and decadent. Steps:
- 1. Put water on to boil. Melt chocolate in a small microwave safe bowl. Set aside.
- 2. In a medium mixing bowl, thoroughly combine flour baking powder and the half tsp of salt, using a wire whisk. Set aside.
- 3. Using a mixer, cream together the softened butter and 2/3 c. sugar.
- 4. Beat in the flour mixture, with milk enough to blend.
- 5. Stir in the melted chocolate, vanilla, and nuts, if desired. (We like our chocolate straight-up, so I never add nuts.)
- 6. Spread the batter into a 8 or 9" square baking dish. Set aside.
- 7. In a small mixing bowl thoroughly combine brown sugar, 1/2 c. sugar, cocoa, and 1/4 t. salt with a fork. Sprinkle this over the batter. Do not stir.
- 8. Gently pour the boiling water over the top. Do not stir.
- 9. Bake 1 hour at 350* Cool slightly, serve warm.
- 10. NOTES: If you want to dress it up for company, garnish with whipped cream or ice cream, and chocolate curls or a drizzle of chocolate sauce. This recipe reheats well. *By substituting gluten-free all purpose flour, this recipe is easily made gluten free. (Try Bob's Red Mill brand for the cake batter, and Gifts of Nature brand for the pudding.)
CREAMY CHOCOLATE FUDGE
I clipped this recipe from a December 1983 issue of The Charlotte (NC) Observer, which was running a contest to see who made the best fudge. This recipe won in the "Plain Chocolate Fudge" category (no additives such as nuts). I made this for presents at the holidays and now my grown kids are making it for gifts themselves. I buy disposable aluminum pans approx 5x8-inch so I can just wrap them up and give them as gifts. This recipe makes three pans-full.... or two 8x8-inch pans of fudge.

Steps:
- Butter two 8x8-inch or three 5x8-inch pans.
- In a large heavy pot (I use a dutch oven size pot), mix together sugar, milk, vanilla, and butter; stir to mix.
- Bring to a boil, stirring constantly.
- Then let boil for 2 minutes, not stirring.
- NOTE: You need to move quickly during the next couple of steps so have the marshmallows and chocolate squares cut up and cut open the bags of chocolate chips.
- Turn off heat but leave pot on the burner.
- Add marshmallows, quickly stirring until melted.
- Add each chocolate separately in the order listed in the recipe, quickly stirring until melted.
- Pour into prepared pans.
- Let cool.
- Fudge tastes better each day --- if it lasts!

- Line a 9-in. square pan with foil; grease foil with 1-1/2 teaspoons butter., In a large microwave-safe bowl, melt chocolate chips and remaining butter, stirring after 1 minute and every 30 seconds thereafter. Stir in milk and vanilla. Spread into prepared pan. Refrigerate until firm., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. HOT FUDGE PUDDING
Steps:
- Preheat oven to 350 degrees F.
- Grease 2 medium ramekins or 4 by 4-inch baking dishes, and set aside. In a medium bowl, combine the flour, sugar, baking powder, salt, and 1/4 cup cocoa. Whisk in the milk, butter, and vanilla, just until smooth. Divide the batter between the 2 baking dishes.
- In a small bowl, mix the brown sugar and remaining1/4 cup cocoa, and sprinkle evenly over the batter. Carefully pour 3/4 cup boiling water over each dish and add about 8 raspberries to each dish.
- Bake 30 minutes. Let cool for 10 minutes before serving. Top with a dollop of whip cream and a few fresh raspberries.

- Preheat the oven to 350°F. Into a bowl sift together the flour, 1/3 cup of the cocoa powder, the baking powder, and the salt. In another bowl whisk together the eggs, the granulates sugar, the butter, the milk, and the vanilla, add the flour mixture, and stir the batter until it is just combined. Stir in the walnuts and spread the batter evenly in an ungreased 8-inch-square baking pan. In a bowl whisk together the remaining 1/3 cup cocoa powder, the brown sugar, and the water, pour the mixture over the batter, and bake the cake in the middle of the preheated oven for 35 to 40 minutes, or until a tester comes out with crumbs adhering to it.
- Serve the cake hot with the ice cream.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.
- Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.

- In a medium saucepan, melt butter or margarine on low heat.
- Remove from heat and in same pan, stir in sugar, eggs and vanilla, stir well.
- Add in flour, cocoa, baking powder and salt.
- Stir in chips and nuts if desired.
- Bake at 350 for approx 25-30 minutes, depending on your oven.
- Do not over-bake.

- Melt butter in a saucepan. Add milk and dry pudding. Cook over medium-medium high heat for 1 minute, stirring constantly. When I cook mine it comes to a boil and gets thick pretty quickly.
- Remove from heat. Stir in powdered sugar. Instead of stirring with a spoon you can use and electric mixure.
- If fudge is too dry and firm you can add an additional teaspoon of milk, then mix again. If it's still too firm add another teaspoon of milk. Repeat until you get the consistency you want. Remember though, it will get firmer as it sets in the fridge.
