5 MINUTE CANDIED WALNUTS
Toss these caramelized walnuts into your salad, over popcorn, or straight into your mouth. Crunch. Crunch. I love this easy method of making the candied nuts where everything goes into the pan at once. Other methods I've tried left me with globs of candy on the nuts rather than a more even coating. It also roasts the nuts at the same time so you don't have to pre-toast them, then add them back to the pan to be coated, blah, blah. Who needs extra steps? It seriously takes about 5 minutes on the stove and 5 minutes to cool. P.S. This recipe can easily be doubled.

Steps:
- Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, 1/4 cup granulated sugar and 1 Tbsp butter.
- Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
- Transfer immediately onto a sheet of parchment paper and separate the nuts right away. Using two spatulas will make this task go faster. You don't want to give the nuts a chance to turn into a wad of inseparable delicious goodness unless you are the only person who will be enjoying the wad ;). Seriously, move quickly from the time the nuts are coated until they are separated out on the parchment paper.
- Once the coating hardens (5-7 minutes), you can transfer them to a bowl and enjoy!
CANDIED WALNUTS
Makes 1 1/4 cups

Steps:
- Place all ingredients in a non-stick skillet warmed to medium heat.
- Stir continuously for 3-5 minutes, or until sugar has caramelized.
- Quickly remove from heat and spread nuts on parchment paper. Spread apart with spoons or spatulas to keep from clumping together.
- Cool for 20-30 minutes. Ready to eat!

- Prepare a baking sheet with parchment paper and place it on your stove alongside a pair of easily accessible tongs.
- In a large, non-stick skillet, add your sugar, butter, and walnuts.
- Over medium-low heat stir constantly until your ingredients begin to melt.
- Around the 3-minute mark you'll start seeing the caramel thicken, become gooey, and brown, add in your water. Nuts will be deep golden brown, and sticky-
- Using tongs, transfer to the baking sheet and separate them from sticking together.
- Allow nuts to cool for 10 mins-store in an airtight container.

My daughter Kelleigh learned this recipe at culinary school. They are quite addictive just plain or you can use them in salads. This is definitely a recipe that you should go out and buy parchment paper for as it will make your life easier in the clean up!

Steps:
- PreHeat oven to 350 degrees F.
- On a cookie sheet "with sides" place a piece of parchment paper in the bottom of the pan.
- Add walnuts and spread out into one layer.
- Drizzle honey over all of the nuts.
- Add slices of butter and spread equally over top of the honey & nuts.
- Bake for 5 minutes or until butter and honey melts.
- Remove from oven and stir nut mixture, then flatten uniformly coated nuts.
- Bake for 5 more minutes.
- Remove from oven and stir nut mixture, then flatten uniformly coated nuts.
- Remove from oven and flatten nuts letting them cool.
- When cooled, about 10-15 minutes later, break them up.
- Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.

- To a large non-stick skillet, add the walnuts, granulated sugar, brown sugar, water, and butter. (And cinnamon, if using.)

- In a saucepan bring 1 quart water to a boil over high heat. Add walnuts, and return to a boil. Drain in a colander and immediately return to pan. Add sugar, and mix constantly with a rubber spatula until sugar dissolves, about 2 minutes. Nuts will be shiny and coated in sugar.
- Lay out about 2 feet of aluminum foil. In a wok or deep pot, heat oil to 375 degrees over medium-high heat. Carefully add walnuts, spreading them out in oil. Let them cook undisturbed for 2 minutes, then cook, stirring, 1 to 3 minutes more, until golden brown.
- Turn off heat and quickly remove nuts with a slotted spoon, spreading them out on foil. Make sure nuts do not touch one another. When nuts have cooled, transfer them to drain on paper towels, then into an airtight container.
