CAPRESE CHICKEN SKILLET

Steps:
- Slice the chicken breasts in half horizontally so you have 4 thinner pieces
- Pound chicken with a meat tenderizer until it lays flat, but not too thin
- Mince garlic
- Combine salt, pepper, dried oregano, and dried basil in a small mixing bowl
- Season all chicken pieces on both sides with seasoning mixture
- Preheat oven to 350F
- Heat 2 tbsp oil over medium-high heat in a large oven safe pan - I use a cast iron skillet
- Once oil is hot carefully place chicken in the pan
- Cook for 2 minutes on each side
- Remove chicken from pan and reduce the heat to low
- Allow the pan to cool slightly so you don't burn your garlic
- Add minced garlic to the pan and saute for a minute moving constantly so that the garlic doesn't burn
- Add the balsamic vinegar to the pan and stir - the balsamic will bubble up so be careful
- Add the tomatoes to the pan and increase the heat to medium
- Saute for 2-3 minutes
- Turn the heat off the stove and add the chicken back to the pan and toss to coat in the balsamic sauce
- Top the tomatoes and chicken with mozzarella - I used mini mozzarella balls
- Place in the oven to bake at 350F for 10 minutes
- Remove from the oven and top with fresh basil and enjoy!

30 MINUTE ONE POT CHICKEN PASTA
Cheesy Chicken Pasta with extra veggies - made in one pan!

Steps:
- Heat the oil in a large frying pan and add in the onions. Cook for 3 minutes on a medium-to-high heat until they start to turn translucent.
- Add in the chicken, salt and pepper. Cook for a further 3 minutes until the chicken is sealed (it won't be cooked in the middle at this point).
- Add in the garlic, tomato puree and red peppers. Stir, then add in the pasta.
- Now add in the oregano, Worcestershire sauce, tins of tomatoes, stock and milk. Stir and bring to the boil, then turn down to a gentle simmer. Cover with a lid or some foil and simmer for 12-15 minutes (checking occasionally) until the pasta is cooked.
- Stir in the chopped sugar snap peas (it's nice to add them at the end, so they're hot, but retain their crunch),
- then sprinkle the pasta with cheese and put it under the grill/broiler for a couple of minutes until the cheese has melted.
- Top with chopped chives and serve.

30 MINUTE CHICKEN AND DUMPLINGS
This is a Rachel Ray recipe I had in my file for quite awhile, and had to try it recently to satisfy a craving. It turned out really well. I used made from scratch biscuit recipe as I couldn't locate the jiffy mix in my area, I made about 6 biscuits. Also, I think the refrigerated biscuits would work as well. Otherwise I followed the recipe pretty much exactly.

Steps:
- Dice tenders into bite size pieces and set aside.
- Wash hands.
- Place a large pot on stove over medium high heat.
- Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently.
- Season mixture with salt, pepper and poultry seasoning.
- Add flour to the pan and cook 2 minutes.
- Stir broth or stock to the pot and bring to a boil.
- Add chicken to the broth and stir.
- Place biscuit mix in a bowl.
- Combine with 1/2 cup warm water and parsley.
- Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly.
- Cover pot tightly and reduce heat to medium low.
- Steam dumplings 8 to 10 minutes.
- Remove cover and stir chicken and dumplings to thicken sauce a bit.
- Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.

- Preheat oven to 450°F.
- Grease a 13 x 8 inch baking dish and place onions on bottom.
- Place chicken breast on onions and sprinkle with salt and pepper.
- Layer mushrooms and zucchini over the chicken.
- Combine garlic, tomatoes, basil and oregano and pour over vegetables.
- Cover and bake for 30 miuntes or until juices run clear in chicken.

- Lightly whisk the egg and water in a shallow bowl. Combine the almond meal, Parmesan and basil on a plate. Season the chicken. - Place fine mesh sieve over the top of a small mixing bowl, then pour the contents of the sun dried tomato jar into the sieve. The oil will drain into the mixing bowl, which is what is used to cook the chicken. Set both the bowl and the drained tomatoes aside.
