3-Step Homemade Juniper Berry Infused Gin image

A delicious Juniper Berry Infused Gin that's ready to consume in a matter of days.

12 ounces vodka ((½ 750 ML bottle))
1 tbsp green juniper berries
2 cardamom pods
¼ tsp coriander seeds
1 slice dehydrated orange ((or 4" section of orange/lemon peel))
⅛ tsp lavender ((dried))
⅛ tsp anise seeds
marigold flower bud ((optional))
2 star anise

Steps:

  • Sterilize a 12-ounce or larger mason jar. Pour ½ of a 750 ml bottle of vodka into the jar.
  • Add juniper berries, cardamom pods, coriander seeds, dehydrated orange slice, lemon peel, or both. Stir dried lavender, anise seeds, marigold flower, and star anise into the jar.
  • Seal and shake the bottle, then store it on the counter for 48 hours. When it's time, strain the alcohol through a soup bag into another bottle or jar.

When it comes down to it, gin is basically a neutral spirit flavored with juniper berries and a bunch of other stuff. So while it might seem like putting a bunch of berries and herbs in vodka couldn't possibly result in a drinkable gin, you definitely can make a gin just as complex and delicious as what you'll find at the liquor store.

2 cups vodka
2 tablespoons juniper berries
1/2 teaspoon coriander seeds
1 teaspoon chamomile
1/2 teaspoon lavender
3 cardamom pods, broken
1 bay leaf
4 allspice berries
two 4-inch pieces of grapefruit peel, with no pith

Steps:

  • Combine the vodka and juniper berries in a sealable glass jar and steep for 12 hours.
  • Add coriander, chamomile, lavender, cardamom, bay leaf, allspice, and grapefruit peel. Seal jar and shake, then let steep for an additional 36 hours.
  • Strain out solids through a strainer lined with cheesecloth, then strain through cheese cloth again into desired bottle. Store at room temperature for up to one year.

350g blackberries (fresh or frozen)
150g sugar
700ml bottle of gin

Steps:

  • Tip the blackberries and sugar into a 1.5-litre sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week.
  • After two-three weeks, strain the gin through a sieve. Pour the gin into bottles, and label. The gin will keep its colour for a few months and will be drinkable for up to a year. Use the infused blackberries in a cocktail like a bramble, or in a trifle.
