A savory, chunky tomato vegetable soup, perfect for those cold winter evenings! Apologies for the large quantity, I live in a HUGE family and we love leftovers!

Number Of Ingredients 14

1 1/2 cups of diced yellow onions
2 teaspoons salt
2 teaspoons pepper
2 tablespoons olive oil
2 cups of diced potatoes
2 cups of diced carrots
1 1/2 cups celery
2 cups kidney beans
2 cups black-eyed peas
2 1/2 cups corn
8 cups chicken broth
1 (14 1/2 ounce) can crushed tomatoes
1 (12 ounce) can stewed tomatoes
1 (6 ounce) can tomato paste

Steps:

  • Saute onions with olive oil, salt, and pepper until translucent.
  • Set aside.
  • Dice potatoes, carrots, and celery.
  • Set aside.
  • In a large sauce pan, whisk chicken broth, crushed tomatoes, and tomato past until smooth.
  • Add vegetables and stewed tomatoes.
  • Simmer on LOW for 30-45 minutes, or until carrots and potatoes are soft.

My friend Colene used to serve this to help her family get through some cold Minnesota winters. Though she was a busy mom and career woman, Colene could whip this one up in no time! Try adding macaroni or hamburger for some variety.

1 (32 fluid ounce) bottle tomato juice
1 (16 ounce) package frozen mixed vegetables
2 cups water
1 pinch dried oregano
salt and pepper to taste

Steps:

  • In a large pot over medium heat combine the tomato juice, water, mixed vegetables, oregano or Italian spices and salt and pepper to taste. Allow to simmer for 30 minutes.

1 medium onion, chopped
2 tablespoons butter
4 cups water
2-1/2 pounds fresh tomatoes, peeled and chopped
2 medium carrots, diced
1 celery rib, finely chopped
3 chicken bouillon cubes
1 teaspoon sugar
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/8 teaspoon ground mace
1/8 teaspoon pepper

Steps:

  • In a large saucepan, saute onion in butter until tender. Add remaining ingredients; bring to a boil. Reduce heat and simmer, covered, for 40 minutes or until vegetables are tender.

1 (11.5 ounce) can tomato-vegetable juice cocktail
1 cup water
1 large potato, diced
2 carrots, sliced
2 stalks celery, diced

1 cup chopped fresh green beans
1 cup fresh corn kernels
salt and pepper to taste
Creole seasoning to taste

Steps:

  • In a large stock pot, combine broth, tomato juice, water, potatoes, carrots, celery, undrained chopped tomatoes, green beans, and corn. Season with salt, pepper and Creole seasoning. Bring to a boil and simmer for 30 minutes or until all vegetables are tender.

Enjoy this vegetable-packed tomato soup for a lovely light family meal, with leftovers for the next day. Serve with bread or our Cheese, Marmite & spinach pinwheels

2 tbsp olive oil
2 onions , chopped
2 carrots , chopped
2 garlic cloves , crushed
2 red peppers , chopped
1 large sweet potato , peeled and chopped
2 x 400g cans tomatoes
1 low-salt veg or chicken stock cube
1 tsp dried oregano
3 rosemary sprigs , leaves picked and chopped
70ml double cream

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until softened and starting to take on a little colour. Add the carrots, garlic, peppers and sweet potato. Cook for a further 10 mins, stirring often and taking care not to burn the garlic. Add the tomatoes, stock, herbs and 1 litre of water. Bring to a simmer. Cover and cook for 20 mins until the sweet potato is soft.
  • Use a hand blender to whizz the soup until smooth. Stir in the cream and season to taste. Can be chilled for three days or frozen for up to three months.

1 yellow onion
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
2 tablespoons olive oil
2 cups of diced golden potatoes
2 cups of diced carrots
2 cups frozen corn
2 cups frozen black-eyed peas
1 (14 ounce) can kidney beans
1 1/2 cups celery
8 cups chicken broth
1 (28 ounce) can crushed tomatoes
1 (14 1/2 ounce) can stewed tomatoes
1 (6 ounce) can tomato paste

Steps:

  • Dice onions.
  • Sauté onions in pan with olive oil, salt, and pepper until translucent.
  • Set aside.
  • Dice potatoes, celery, and carrots.
  • Set aside.
  • Bring chicken broth and crushed tomatoes to a simmer.
  • Add tomato paste, whisk until smooth.
  • Add potatoes, carrots, corn, peas, beans, celery, and stewed tomatoes.
  • Cook on low for 30 minutes, or until carrots and potatoes are soft.
  • Serve.

  • Heat the oil in a saucepan over medium heat. Add the bell peppers, carrots, zucchini, celery, onions and garlic. Sauté until veggies are soft, about 7 minutes.
  • Add the tomato paste and cook for 1 minute more, stirring constantly. Add the tomatoes and vegetable stock, reduce heat to low, and simmer for 15 minutes.
  • Remove from heat, puree in a blender until almost smooth. Return soup to the stove, and simmer until thick, 10-20 minutes. The longer you simmer this soup the thicker and more flavorful it will become. You can simmer up to 2 hours. If the soup is too thick for your family, add additional cup of vegetable stock.
