Steps:
- Fill a large temperature-safe water tub 80%.Secure the sous vide machine to the temperature-safe tub. (see machine manual)Set the temperature to 140 degrees and turn the machine on. Tip: The machine is on when the water begins to circulate.
- Rib preparation: Start by rinsing the ribs off under cold water. Pat them dry with a paper towel. Inspect the ribs and cut off anything that looks out of place. Fat hanging, etc.Check and see if the membrane has been removed. The membrane is the silver skin on the underside of the ribs.
- Removing the rib membrane: use the back of a spoon handle. Position it underneath the membrane right by the edge of a rib. Move/position it underneath the surface of the membrane. Then grab a paper towel get a grip on the membrane and pull it back away from the rack of ribs.
- Season the ribs: season the ribs once you get them in the bag. You'll waste nothing this way. Then close the bag and shake.
- Sealing the ribs: two options.1) use a food saver machine and seal and remove the air.2) place the ribs in freezer zip lock bags. With the bag open, lower the bags into the water bath making sure zero water enters the bag.The air in the bag will leave the bag from the pressure of the water. Once the air is removed, seal the bag.
- Secure the bag using a clip to the end of the temperature-safe tub. Secure the bags to the opposite end away from the machine.
- Key step: after 8 hours, lower the temperature to 130 degrees from 140 degrees.Cook for an additional 12 hours. Or so, you can easily do 12 hours, 18 hours, 24 hours, 36 hours, 48 hours. No problem.
- To finish the ribs, place them on a roasting rack. Paint on some of your favorite BBQ sauce and place the ribs under the broiler and give the ribs additional texture. The caramelizing of the BBQ sauce is one of the best parts.

Steps:
- First, fill a large pot with water (something large enough to submerge your ribs). Preheat your sous vide water bath to 152ºF by attaching your sous vide to the side of the pot.
- Next, prepare pork dry rub by combining all of the spices together in a medium bowl and set aside.
- Then, remove rack of ribs from the package and place it onto a large baking sheet. Use a sharp knife to cut the rack in half. Then, flip the ribs over and remove the white membrane by peeling it back. Discard membrane.
- Generously season ribs with your dry rub. Use about 1/2 cup of dry rub at this point and save the rest for later. Use your hands to massage the rub into the front and back of the ribs.
- Transfer each half rack of ribs into 2 separate food saver bags and remove as much air as possible and seal. Submerge bags into the sous vide water bath and use 2 clips to attach them to the side of the pot. Cover pot with a piece of tin foil, leaving a hole for the sous vide to stick out. The reason we do this is to prevent evaporation overnight.
- Set timer for 24-hours. Make sure to check water level every so often to make sure that the water does not evaporate. If it does, just add more.
- Once the 24-hours is up, remove bags from water bath and then cut them open with a pair of scissors. Discard the juices and remove the ribs. Place ribs on top of paper towel and use an additional paper towel to blot any moisture out of them.
- Use around 1/4 cup more of dry rub to season the front and back of the ribs. Then, use a brush to apply a layer of your favorite BBQ sauce. You can use as much or as little BBQ sauce as you'd like.
- Preheat grill to 450ºF. Then, rub grill grates with olive oil or spray with nonstick cooking spray. Grill both sides of the ribs for 5-6 minutes or until you get a charred edge.
- Let ribs rest for 5-10 minutes before serving.

Steps:
- To Finish Dry-Style on the Grill: Remove ribs from vacuum bags and carefully pat dry with paper towels. Rub with remaining 3 tablespoons spice rub. Light one-half chimney full of charcoal (about 2 1/2 quarts of coals). When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the medium heat setting, cover, and preheat for 10 minutes. Scrape the grill grates clean with a grill scraper, then oil the grates by holding an oil-dipped kitchen towel or paper towels in a set of tongs and rubbing them over the grates 5 to 6 times. Place the ribs, meat-side up, over the cooler side of the grill. Cover and cook until ribs are heated through and dry to the touch, about 15 minutes. Transfer ribs to hotter side of grill and continue grilling, turning occasionally, until a crusty bark has formed, about 10 minutes. Serve.
- To Finish Sauced Ribs in the Oven: Remove ribs from vacuum bags and carefully pat dry with paper towels. Adjust oven racks to upper and lower-middle positions and preheat oven to 300°F (150°C). Line 2 rimmed baking sheets with aluminum foil and place a wire rack in each. Divide ribs evenly on racks, meat-side up. Transfer ribs to oven and cook until surface is sizzling and ribs are heated through, about 20 minutes. Brush ribs with sauce and return to oven for 10 minutes. Remove from oven, brush with another layer of sauce, and return to oven until sauce is dried and sticky, about 10 minutes longer. Remove ribs from oven, paint with one last layer of sauce, and serve, passing extra sauce at the table.

SIMPLE TENDER SOUS VIDE BABY BACK RIBS MASTER RECIPE
These tender, simple sous vide baby back ribs are a favorite recipe of mine. I've served them at multiple barbecues and parties and they are always a crowd favorite! My favorite combination is probably 150°F (65°C) for around 18 to 24 hours, it's shreddable but not too fall-apart. Some other popular combinations are 165°F (73.9°C) for 18 to 24 hours or 176°F (80°C) for 12 hours. For a chop-like consistency I generally prefer 140°F (60°C) for 1 to 2 days.

Steps:
- Start your sous vide machine preheating. I prefer 150°F (65.6°C) for a perfect braise-like texture that is extra juicy but many people want a more shreddable, fall-apart version at 165°F (73.9°C).
- Trim off any fat or gristle. Salt the pork then coat with any spices.
- Seal the pork in a sous vide bag, Ziploc-brand freezer bag, silicon bag, or other food- and heat-safe bag or zip top bag.
- Cook the pork until tenderized, usually 18 to 36 hours for pork baby back ribs.
- Take the sous vide bag out of the water and remove the cooked baby back ribs. Dry it off thoroughly using paper towels or a dish cloth.
- Sear the baby back ribs for 1 to 2 minutes per side over high heat. It should just start to brown but the core temperature shouldn't rise. Remove it from the heat.
- Place the baby back ribs onto a plate with any salads or sides then serve.

FABULOUS TENDER PORK RIBS - SOUS VIDE STYLE
More and more, restaurants are using this method of cooking. You will need a vacuum seal system for this recipe and a Sous Vide System. Cooking time = the time the ribs will be in the controlled water bath of 138°F for 24-48 hours. In this recipe we "cooked" the ribs for 24 hours. The ingredient amounts are approximate, with the exception of the seasoning mix. Make as many ribs as you like. I fit 2 slabs, packed in several sealed bags, in the Sous Vide. Use your favorite rib rub or make a batch of recipe#390416, use your favorite BBQ sauce at grilling time.

Steps:
- Preheat the SousVide Supreme to 138F/57°C You can cheat an put them in early because the temperature will drop when you add the ribs. It will come back up to temperature in no time.
- Make Recipe#390416 combining all the dry spice ingredients listed above. You won't use it all. I always quadruple the recipe and store the extra for future use.
- Cut the ribs into sections. I cut into 3-4 bones per section.
- Season both sides of the ribs with the rub mixture. No need to season too heavily as the flavors will be enhanced with this method of cooking. Just a light to moderate dusting. Using your hands, pat the spices into the ribs.
- Put each section into individual vacuum seal bag, removing all the air and sealing. Alternately, arrange the rib sections side by side in the bags and seal DO NOT stack the rib sections in the bag.
- Note: All the air must be removed from the bags to insure the packages are submerged for proper cooking.
- Place bags in the preheated water bath. If you have a rack for your Sous Vide, all the better, if not, do not let them nest. Make sure water passes in between each bag.
- Submerge the pouch(es) in the water oven and cook for a minimum of 24 hours up to a maximum of 48 hours. They will not over cook after 24 hours, really!
- At this point, they are fully cooked. You may cool and refrigerate for several days) or freeze the ribs for future consumption. If you refrigerate them bring to room temperature before grilling. Please note, warming on the grill will take longer because they are hot from the water bath. Note: I have tried cooking & refrigerating for later use.
- Fire up the grill!
- Remove from the pouches from the water bath.
- From this point, finish off the ribs as you normally do.
- Sear the surface of the ribs on the grill, or under the broiler. About 1-2 minutes per side.
- Slather on your favorite BBQ sauce, grilling to achieve caramelization of the sauce.
- Serve & enjoy!
