SUMMER SALSA WITH A SHOT



Summer Salsa with a Shot image

Number Of Ingredients 8

1 clove garlic
2 teaspoons kosher salt, plus additional for seasoning
4 medium ripe tomatoes, cored and diced
1/4 medium red onion, finely diced
1 jalapeno, stemmed and minced (with seeds for more heat)
1/4 cup chopped fresh cilantro
1 to 2 tablespoons silver tequila (optional)
White corn tortilla chips, for dipping

Steps:

  • Smash the garlic clove, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Mix the garlic, tomatoes, onion, jalapeno, and cilantro in a serving bowl. Add the tequila, if desired, and season with the remaining salt, adding more to taste if necessary.
  • Serve immediately or cover with plastic wrap and set aside for 1 hour at room temperature. Serve with the tortilla chips.

1 (14.5 ounce) can black beans
½ red onion, chopped
1 red pepper, chopped
½ cup sugar
½ cup rice wine vinegar

  • In a large bowl, stir together corn, beans, onion, red pepper, and sugar. Stir in rice wine vinegar, and season with salt.

4 medium tomatoes, chopped
1 medium mango, peeled and chopped
1 medium ripe avocado, peeled and cubed
3/4 cup fresh or frozen corn, thawed
1/2 cup minced fresh cilantro
1/2 cup canned black beans, rinsed and drained
1/4 cup chopped red onion
1 jalapeno pepper, seeded and chopped
3 tablespoons lime juice
1 tablespoon olive oil
2 garlic cloves, minced
1/4 teaspoon salt
Baked tortilla chip scoops

Steps:

  • In a large bowl, combine the first 12 ingredients. Chill until serving. Serve with tortilla chips.

Summer Salsa image

This is a thick and chunky salsa. Don't let the amount of peppers turn you off. This is a *mild* salsa. If you want more heat, just add some of the pepper seeds. I like my salsa chunky, but if you don't, you only need to dice the vegetables finely. Canned tomatoes makes this a quick recipe you'll want to make over and over. UPDATE Aug 18/08: I'm pleased to add that this salsa took first place in the local fair.

Number Of Ingredients 10

6 jalapeno peppers, minced, seeds and membrane removed
2 cups sweet onions, chopped, I use Videlias
1 cup green pepper, chopped
1 cup yellow pepper, chopped
4 garlic cloves, minced
1/2 cup fresh parsley, chopped
3 (19 ounce) cans diced tomatoes, I use Aylmers Spicy Red Pepper Variety
1 (5 1/2 ounce) can tomato paste, with herbs and spices
3/4 cup cider vinegar
1 teaspoon salt

Steps:

  • Combine all ingredients in a large pot.
  • Bring to a boil.
  • Boil gently for 50 - 60 minutes, stirring occasionally.
  • Fill sterilized jars and seal.
  • Water bath for 20 minutes.

1 (19 ounce) can black beans, rinsed and drained
1 cup roma tomato, seeded and diced
1/2 cup red onion, chopped
1/3 cup green onion, sliced
1/4 cup lime juice
1 mango, chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon of fresh mint, chopped
1 teaspoon garlic, finely diced
1/2 teaspoon salt
1/3 cup whole toasted flax seed

Steps:

  • In a bowl, combine beans, tomatoes, red and green onions, lime juice, mango, cilantro, mint, garlic, and salt. Mix well.
  • Cover and refrigerate for 2 hours. Just before serving, stir in flaxseed.

  • Heat broiler. Place tomatoes cut side down on a foil-lined rimmed baking sheet. Fit onion, chiles, and garlic around tomatoes so everything is snug but not overlapping. Broil, turning onion and chiles once, until lightly charred, about 6 minutes for chiles and garlic and 15–18 minutes for tomatoes and onion.
  • Peel garlic and place in a food processor along with half of the tomatoes. Pulse until very smooth. Add remaining tomatoes and pulse until tomatoes are mostly broken up but mixture still has some texture. Transfer to a medium bowl. Finely chop onion and chiles and mix into purée; season with salt. Let cool. Stir in lime juice and cilantro. Season salsa with more salt if needed. Serve with chips.
