TURKEY NOODLE CASSEROLE

- Bring a large pot of water to a boilfor your egg noodles. When it boils, salt the water and cook noodles to al dente.
- Preheat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan, and bacon or turkey bacon. Render the bacon fat 2 to 3 minutes, until bacon begins to brown at edges. Add meat and brown it, crumbling it with a wooden spoon. Move the meat over to 1 side of the pan and add mushrooms and onions to the opposite side. Cook mushrooms and onions 3 to 5 minutes, then combine the meat with veggies and season the mixture liberally with salt and pepper, then sprinkle in the ground thyme or poultry seasoning. Cook another 5 minutes then add wine. Deglaze the pan, lifting up pan drippings and bits. Stir in stock and bring to a bubble, then stir in cream and reduce the heat to low. Add nutmeg to sauce and stir. Taste to adjust seasonings.
- Preheat broiler to high. Combine noodles with turkey and sauce. Grease a flameproof casserole dish with a little softened butter nested in a piece of paper towel then transfer the turkey noodle mixture to the dish. Top the casserole with Gruyere then bread crumbs. Place the casserole 8 to 10 inches from the broiler and brown 2 to 3 minutes until cheese is melted and the crumbs are brown. Remove from oven and garnish the casserole with parsley.
GOBBLE-GOOD TURKEY CASSEROLE
My sons teacher sent this recipe home. We didn't have leftover turkey this year, so I haven't tried it.

LEFTOVER TURKEY CASSEROLE
This recipe is GREAT for those Thanksgiving leftovers. You could probably throw some veggies into the turkey mixture. I just made this for the first time after making a turkey dinner for Mother's Day, and I just had to share the recipe!

- Preheat oven to 350.
- Place prepared mashed potatoes into a 2 quart casserole dish, sprayed with nonstick spray.
- Combine turkey and gravy in a large skillet and bring to a simmer, stirring occasionally.
- Remove from heat and stir in stuffing until throughly combined.
- Add salt and pepper to taste, if desired.
- Spoon turkey mixture on top of potatoes and spread evenly.
- Cover and bake for 25-30 minutes or until throughly cooked.

LEFTOVER TURKEY CASSEROLE
I found this recipe in Turkey Saftyband Recipes For Leftovers from Cornell Cooperative Extension. When I made this recipe I used 2 cups Turkey Stock, ground sage, and I left out the boiled eggs as that just didn't sound good to me. I think this needs more seasonings especially salt and the velveeta should be shredded not cubed. I would recommend soaking the macaroni why preping the rest of the food as the macaroni on top stays hard.

TURKEY CASSEROLE
This is my favorite turkey casserole. Chicken can be substituted. Great for left over Thanksgiving or Christmas turkey. I found this recipe many years ago in a newspaper. My sons especially liked the cheese topping so I used to double the topping ingredients. Whether I serve it at home or bring out, I always get compliments and often asked for the recipe.

- Melt butter over low heat, add green pepper, celery, onion. Saute until tender, but not brown. Blend in flour and seasonings. Stir in milk and broth and cook until thick and smooth, stirring constantly. Fold in turkey and pimento, if using, and allow to heat through. Place cooked rice in bottom of a 2 quart casserole. Pour over turkey mixture. Mix crumbs, melted butter, and cheese and sprinkle over top.
- Bake in 350F oven for 30 minute or until lightly browned. Makes 6 servings.

Got the recipe from my grandma and she probably got it from a magazine. It's creamy, and very different. It's another comfort food that you may not want to have all the time.

- Mix all ingredients except walnuts. Spoon into a 2 quart casserole.
- Sprinkle with nuts. Bake for 40 minutes or until thoroughly heated.
- *Note: I like to use Jenni-O's pre-cooked turkey. I'll try to post a picture of it. I think it turns out really well. And it saves a lot of time. You can also use the pre-chopped frozen onions to make the dis go even faster.

- Set oven to 350 degrees /Grease a 2-quart casserole dish. Combine 2 tbsp melted butter with paprika and add the crushed Rice Krispies; mix and set aside. /Melt 3 tbsp butter in a medium saucepan over low heat. /Whisk in flour, garlic powder (if using) and black pepper and thyme (if using); gradually add half and half cream, whisking constantly until smooth. /Raise heat to medium; cook until bubbly and thickened, stirring constantly Add in shredded cheese and Parmesan cheese, stirring until melted. /Remove from heat; stir in rice, parsley, chopped turkey and peas. /Pour into prepared casserole dish. EASY TURKEY CASSEROLE
This casserole was brought to me after a new baby many years ago by a lady at our church. When I asked for the recipe, I couldn't believe how simple it was. We use this for a quick dinner anytime or to use up leftover turkey after Thanksgiving. Can also be made with chicken.
