Here's a deliciously easy breakfast and brunch idea: the Yogurt Parfait! This layered cup looks fancy but takes minutes to make.

1/2 cup Peanut Butter Granola, Crispy Homemade Granola, or purchased granola
1 cup Greek yogurt (or plain yogurt)
1 tablespoon plus 1 teaspoon maple syrup
1 teaspoon vanilla
1 cup frozen or fresh strawberries*
1 cup fresh berries like blueberries, blackberries, raspberries or a mix
1/8 teaspoon cinnamon

Steps:

  • Mix the Greek yogurt, 1 tablespoon maple syrup, and the vanilla.
  • Defrost the strawberries in the microwave, keeping the juice that releases as they thaw (optional if using frozen). Stir together with the fresh berries, 1 teaspoon maple syrup, and 1 pinch cinnamon.
  • In each glass, layer 1/2 cup yogurt, a sprinkle berries and granola, 1/2 cup yogurt, and another sprinkle berries and granola. Serve immediately. Make ahead instructions: You can also store for up to 4 days, but the granola becomes soggy. If you're making for make ahead breakfasts, layer it without the granola and add it right before serving.

½ cup sliced fresh strawberries
1 teaspoon white sugar
6 tablespoons granola, or as needed
1 (6 ounce) container nonfat vanilla Greek yogurt
1 teaspoon lemon zest

Steps:

  • Add blueberries and strawberries to a small bowl. Sprinkle with sugar; stir to coat the berries.
  • Place 2 tablespoons granola in the bottom of 2 parfait glasses. Spoon 2 tablespoons yogurt on top and sprinkle with 1/2 teaspoon lemon zest. Top with 1/3 of the berries. Repeat layers until the parfait glasses are full.

One 17 1/2-ounce container plain Greek yogurt
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup brown sugar
Assorted berries (or other fruit of your choice)

Steps:

  • First, pour the yogurt into a bowl. Then add the cream and vanilla. With a whisk, carefully stir until combined. It should be nice and thick.
  • Sprinkle the brown sugar evenly over the top of the yogurt mixture. Do not stir the mixture. Cover the bowl with foil or plastic wrap and tightly seal the edges. Place in the refrigerator for at least 20 to 30 minutes.
  • When you are ready to serve, place a small handful of berries (or other fruit) into a bowl or cup. Without stirring the mixture, spoon the yogurt over the berries. There will be creamy areas and brown sugar areas. Repeat the layers once, ending with berries on top.

They are perfectly balanced with the right amount of healthy carbs, fat, and protein, and are made with a few basic ingredients! You can even make them your own using different berries, or nuts! Enjoy!

1 1/2 cups old fashioned oats
1/4 cup honey
1/4 cup sugar
2 egg whites
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 cups diced strawberries
2 cups plain low fat Greek yogurt
1 tablespoon sugar
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with foil or parchment paper. (If using foil, spray with non-stick cooking spray). Mix all of the ingredients together in a medium sized bowl, and stir until everything is well combined. Bake for 15 minutes, then remove from oven and stir to break granola apart. Return to the oven for another 15-20 minutes, or until granola is crisp (watch it carefully in the last 10 minutes of baking.) Let cool completely, and add to your parfaits.
  • In a small bowl, add the yogurt, sweetener, and vanilla if desired. Layer 1/4 cup yogurt, 1/4 cup diced strawberries, and 1/4 cup granola into each of the four glasses/jars. Repeat. Enjoy immediately, or top with a lid or saran wrap, and store in the fridge for up to three days.
