This is an easy recipe which I love every time I make it. Good HOT or COLD!

1 (15 ounce) can cream-style corn
1 (11 ounce) can whole niblet style corn
2 eggs
1 cup sour cream
1 (8.5 ounce) package dry corn bread mix
½ cup butter, melted
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8 x12 inch casserole dish.
  • In a mixing bowl, combine cream corn, niblet corn, eggs, sour cream, muffin mix, and butter. Pour into prepared casserole dish.
  • Bake in a preheated oven for 30 minutes or until lightly brown.
  • Remove from the oven and sprinkle cheese over the top. Return to the oven for 15 minutes or until the center is firm.

1 (15 1/4 ounce) can whole kernel corn, drained
1 (14 3/4 ounce) can cream-style corn
1 (8 ounce) package corn muffin mix (recommended ( Jiffy)
1 cup sour cream
1/2 cup butter, melted
1 -1 1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
  • Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown.
  • Remove from oven and top with Cheddar.
  • Return to oven for 5 to 10 minutes, or until cheese is melted.
  • Let stand for at least 5 minutes and then serve warm.

1/2 box Ritz cracker
1/4 cup butter

Steps:

  • Mix egg and milk.
  • Pour mixture and mix with corn.
  • Mix in crumbled cra ckers to soak up moisture. Cover top of casserole with cracker crumbs and dot with butter.
  • Bake 1 hour at 375 degrees.

This recipe is one I have made for years. I figured it would be in the database and needed the nutritional values, although there is a two corn casserole in the data base it isn't this one. Every where I take this casserole I am asked for the recipe. Green Giant is the only company that makes 17 oz. cans but the smaller 15 something cans work fine.

1/2 cup margarine
3/4 cup green pepper, chopped
1/3 cup onion, chopped
17 ounces whole kernel corn, undrained
17 ounces cream-style corn
3 eggs, well beaten
8 1/2 ounces corn muffin mix
4 ounces cheddar cheese, shredded

Steps:

  • Heat oven to 350 degrees F.
  • Grease 2 quart casserole dish
  • In small skillet, melt margarine.
  • Add green pepper and onion; saute' until tender, (I do this in the microwave) Combine cream style corn, whole kernel corn, eggs and corn muffin mix, blend well.
  • Pour into casserole dish and sprinkle with cheese.
  • Bake 55-65 minutes until firm and set.
  • Let stand 5 minutes before serving.

6 cups fresh corn kernels
Salt and black pepper
1/2 teaspoon ground nutmeg
2 tablespoons vegetable oil
2 cups chopped onions
6 whole eggs, beaten
1 cup milk
2 cups grated aged white cheddar
2 teaspoons oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Carefully remove the corn from the cob with a knife and put in a food processor. Transfer to a large bowl. Coarsely puree with salt, pepper, and nutmeg. In a saute pan, add the oil and the onions and saute until translucent. Add the onions to the corn mixture. Add the beaten eggs, milk and half of the grated Cheddar and combine. Use 2 teaspoons of oil to coat a 13 by 9-inch baking dish. Transfer the corn mixture to the dish and top with the rest of the grated Cheddar. Place the dish in the oven and bake for 30 to 40 minutes or until the top of the casserole is golden brown.

Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

Nonstick cooking spray, for the baking dish
8 ears fresh corn, shucked
4 tablespoons unsalted butter
1/4 cup whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 8.5-ounce package cornbread mix, such as Jiffy
One 8-ounce carton sour cream
2 large eggs
One 8-ounce block sharp Cheddar, shredded
2 green onions, thinly sliced, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
  • Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
  • Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.

The options with this dish are endless! You can choose to alter this in so many different ways and always get delicious results! I often add crispy, chopped bacon or red pepper flakes

1/2 cup milk, divided
1/2 cup heavy cream
2 tablespoons butter, unsalted
1 1/2 tablespoons sugar
2 tablespoons flour
1 teaspoon salt
4 -5 cups corn, well drained
2 large eggs
1/4-1/2 cup shredded asiago cheese (optional)
chives (to garnish)

Steps:

  • Preheat oven to 400F, rack in the middle.
  • Lightly spray a 2 quart baking dish.
  • In a medium-to-large saucepan over medium heat add in the cream, 1/4 cup milk, sugar and butter.
  • Bring to a boil.
  • While the cream mixture is heating up make a slurry of the flour and remaining 1/4 cup milk by whisking together until well combined.
  • Whisk together the eggs until well beaten.
  • Once the milk comes to a boil, add in the flour slurry and whisk until thickened slightly - ~30 seconds to a minute.
  • Remove from the heat and add in the corn, cheese and salt mixing to combine.
  • Slowly add in the eggs while mixing the entire time - you do not want the eggs to curdle.
  • Pour the mixture into the prepared baking dish.
  • Bake for 30 minutes or until the top is puffy and golden brown.
  • Remove from the oven and allow to cool for 10-15 minutes before serving so it can firm up and set.

1 (10 ounce) package frozen corn, cooked and drained
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 cup sugar
1/4 cup milk
1 egg, slightly beaten
1/3 cup cracker crumb (Ritz)
1 tablespoon butter, melted

Steps:

  • Melt butter in skillet, add flour.
  • Blend well, add milk and sugar.
  • Stir constantly until mixture is bubbly.
  • Remove from heat.
  • Place back on heat and boil 1 minute.
  • Stir in corn and egg, mix well.
  • Pour into a well greased casserole dish.
  • Mix crackers with butter and sprinkle over top.
  • Bake uncovered in 350 oven for 30-35 minutes.
  • For a 9X13 pan I triple the recipe.
  • I use two bags of the frozen corn and triple everything but the salt and topping.
