Quick and Easy Nachos image

Nachos are a go-to for most Kiwi families. We created this recipe because you can't go past its simplicity. It's perfect for the kids to master and help out during the week. You'll thank us later.

400g lean beef mince
400g can Wattie's Mexican Style Tomatoes
420g can Wattie's Mild Chilli Beans
1 ripe avocado
½ cup lite sour cream
1 Tbsp lemon juice
Corn chips
Grated cheese
Diced tomatoes (to garnish)
Coriander leaves (to garnish)

Steps:

  • Heat a dash of oil in a frying pan and brown the mince over a high heat, breaking up with a fork if necessary.
  • Stir in the Wattie's Mexican Style Tomatoes with the Wattie's Mild Chilli Beans. Reduce the heat and simmer for 10-15 minutes or until the mince is cooked and beans are hot.
  • To make the Avocado Cream: Blend together the avocado, sour cream and lemon juice to a smooth consistency. Season to taste.
  • Place the corn chips on a serving platter and top with the beef mixture. Scatter over the grated cheese, tomatoes and coriander leaves. Serve with the Avocado Cream on the side.

1 pound ground beef
1 onion (finely diced)
salt and pepper (to taste)
1 packet taco seasoning (to taste)
2 cups shredded Cheddar cheese
1 (16 oz) can refried beans
1 (14.5 oz) package tortilla chips
1 fresh jalapeno pepper (sliced)

Steps:

  • In a large frying pan, cook ground beef and onion over medium heat. Add taco seasoning, salt, and pepper. Break the beef into small pieces while cooking. Once meat is browned and thoroughly cooked, drain off the grease and set aside.
  • Spread the tortilla chips onto a cookie sheet and bake at 350 degrees Fahrenheit for about 10 minutes (or until crispy).
  • Top with refried beans, shredded cheddar cheese, sauteed beef, and sliced jalapeno peppers. Heat the refried beans first to make them easy to spread.
  • Place the pan back into the oven until the cheese is melted.

1 can (2.25 oz.) sliced black olives, drained
1/2 cup TACO BELL® Thick & Chunky Medium Salsa

Steps:

  • Heat oven to 400ºF.
  • Layer 1/3 each of the chips, cheese and peppers in shallow ovenproof dish. Repeat layers twice.
  • Bake 7 min. or until cheese is melted.
  • Top with remaining ingredients.

Try this for an easy meal that will be on the table in 15 minutes. See our tip below on making a salsa to go with it and you have a new twist on an old favourite.

500 g lean lamb or beef mince
420 g can Wattie's Chilli Beans Mild
400 g can Wattie's Mexican Style Tomatoes
nacho cheese corn chips
1 handful grated cheese
½ cup lite sour cream (optional)
1 Tbsp chopped chives or spring onions (optional)

Steps:

  • In a non-stick pan, heat a dash of oil and brown mince in batches.
  • Return mince to the pan, add Wattie's Chilli Beans Mild and Wattie's Mexican Style Tomatoes to the mince. Simmer for 10 minutes.
  • Place corn chips into individual bowls, spoon over nacho mince. Sprinkle the cheese on top. Place under a hot grill to melt.
  • Top with sour cream and chopped chives if you wish. Serve with a salsa or fresh green salad.
