FRENCH BREAD

French Bread image

I orginally got this from Taste of Home and changed a couple of things to suit our tastes. I have been using this recipe for many years now. We make this bread anytime we have spaghetti or other pasta dish or soups. I use my bosch mixer for all my bread making - but will post directions for those making this by hand. This bread also makes excellent buns for sandwiches. They freeze well and it's just the right size for lunch boxes!

2 1/2 cups warm water

HOME-STYLE FRENCH BREAD

Home-Style French Bread image

Provided by Food Network

Categories     side-dish

Yield 2 large loaves

Number Of Ingredients 7

2 envelopes (1/4-ounce each) active dry yeast
1 tablespoon plus 2 teaspoons sugar
2 cups warm water (about 110 degrees F.)
1 1/2 teaspoons salt
5 cups flour
4 tablespoons yellow cornmeal
1 egg yolk mixed with 1 tablespoon water

Steps:

  • Using an electric mixer with a dough hook, combine the yeast, sugar and warm water and mix for 2 minutes to dissolve the yeast. Add the salt and flour. With the mixer on low, mix until the dough starts to come together. Increase the speed to medium-high and mix until the dough comes away from the sides of the bowl and crawls up to dough hook.
  • Grease a mixing bowl with the oil. Place the dough in the greased bowl and turn once. Cover the bowl with plastic wrap and place in a warm, draft free place until the dough doubles in size about 1 1/2 hours.
  • Remove the dough from the bowl and invert it onto a heavily floured surface. Divide the dough into 2 equal portions. Pat each portion into a large rectangle, about 3/4-inch thick. Roll up the dough, beginning with the short side and stopping after each full turn to press the edge of the roll firmly into the flat sheet of dough to seal. Press with your fingertips. Tuck and roll so that any seams disappear into the dough.
  • Sprinkle a baking sheet evenly with 2 tablespoons of the cornmeal. Place the loaves on the baking sheet, about 3 inches apart. Sprinkle with the remaining 2 tablespoons cornmeal. Cover the loaves with a cloth and let rise until double in size, about 1 hour.
  • Preheat the oven to 400 degrees F.
  • With a sharp knife, make diagonal slashes, about 1-inch apart, on the top of each loaf. With a pastry brush, brush the egg wash evenly over each loaf. Place a cup of hot water in an oven-proof container on the baking sheet with the loaves.
  • Bake for 45 minutes, or until the bread is golden brown. Remove from the oven and cool on a rack. Slice to serve.

Salt and freshly ground black pepper
One 12-ounce jar Kalamata olives, chopped
8 ounces crumbled feta
4 ripe tomatoes, diced rough
1/2 English cucumber, seeded and diced
1/2 bunch fresh parsley, chopped
1 cup sliced pepperoni

Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! • For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.

FRENCH BREAD PIZZA

French Bread Pizza image

Provided by Trisha Yearwood

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 11

8 ounces mild Italian sausage, casings removed
1/2 medium red onion, halved and sliced 1/4 inch thick
1 cup jarred pizza sauce
3 cloves garlic, grated
2 sprigs thyme, leaves only
1 long loaf French bread or baguette (about 22 inches long), halved crosswise and cut horizontally
2 cups shredded mozzarella
1/2 green bell pepper, sliced into 1/4-inch-thick strips
1/2 red bell pepper, sliced into 1/4-inch-thick strips
2 tablespoons grated Parmesan
Crushed red pepper flakes and granulated garlic, for serving

Steps:

  • Preheat the oven to 375 degrees F with one rack positioned at the bottom of the oven and another at the top.
  • Cook the sausage in a medium skillet over medium-high heat, breaking up any clumps with a wooden spoon, until some of the fat has rendered and the sausage is brown, 6 to 8 minutes. Add the onions and cook, stirring occasionally, until slightly softened, about 2 minutes.
  • Meanwhile, add the pizza sauce, garlic and thyme to a small saucepan. Heat over medium heat to let the flavors infuse while the sausage and onions cook.
  • Line a rimmed baking sheet with parchment and arrange the bread on top, cut-side up. Spread the tops evenly with the pizza sauce, then sprinkle with the mozzarella. Divide the sausage mixture among the bread pieces, then top off with the green and red bell peppers and Parmesan.
  • Bake on the bottom rack of the oven until the bread is crisp and the cheese is melted, about 10 minutes. Increase the oven temperature to 450 degrees F and move the baking sheet to the top rack. Continue to bake until the cheese is bubbling and the peppers are browned in spots, about 7 minutes.
  • Serve immediately with crushed red pepper flakes and granulated garlic on the side.

RANCH BREAD

Ranch Bread image

This bread has become a favorite in my house. I get more requests for it than I do for garlic bread. And there are never any leftovers of this when I make it.

Provided by Lorealle

Categories     Breads

Time 18m

Yield 1 loaf

Number Of Ingredients 4

1 loaf Italian bread or 1 loaf French bread
1 (1 ounce) packet dry ranch dressing mix
1/2 cup parmesan cheese
1/4 cup butter

Steps:

  • Slice bread almost whole way through being careful to still leave it connected at bottom of loaf.
  • Put bread on a sheet of aluminun foil large enough to fold up around the loaf.
  • Melt butter, add the remaining ingredients to the melted butter and mix.
  • Spread this mix in the slices in the bread.
  • I use a tablespoon and put one spoonful between each slice.
  • There will be a little of the butter mix left, I usually pour this over the top of the bread.
  • Wrap aluminun foil up around sides of loaf, leaving the top exposed.
  • Cook for 10 minute on 350, this is just long enough to make the top and bottom crispy and warm the bread up.
  • Enjoy!

FRENCH BREAD

French Bread image

A crisp, crunchy crust and slightly chewy center make this bread as traditional as the breads served in France.

Provided by Jenn Hall

Categories     Bread     Yeast Bread Recipes     White Bread Recipes

Time 2h40m

Yield 30

Number Of Ingredients 7

6 cups all-purpose flour
2 ½ (.25 ounce) packages active dry yeast
1 ½ teaspoons salt
2 cups warm water (110 degrees F/45 degrees C)
1 tablespoon cornmeal
1 egg white
1 tablespoon water

Steps:

  • In a large bowl, combine 2 cups flour, yeast and salt. Stir in 2 cups warm water, and beat until well blended using a stand mixer with a dough hook attachment. Using a wooden spoon, stir in as much of the remaining flour as you can.
  • On a lightly floured surface, knead in enough flour to make a stiff dough that is smooth and elastic. Knead for about 8 to 10 minutes total. Shape into a ball. Place dough in a greased bowl, and turn once. Cover, and let rise in a warm place until doubled.
  • Punch dough down, and divide in half. Turn out onto a lightly floured surface. Cover, and let rest for 10 minutes. Roll each half into large rectangle. Roll up, starting from a long side. Moisten edge with water and seal. Taper ends.
  • Grease a large baking sheet. Sprinkle with cornmeal. Place loaves, seam side down, on the prepared baking sheet. Lightly beat the egg white with 1 tablespoon of water, and brush on. Cover with a damp cloth. Let rise until nearly doubled, 35 to 40 minutes.
  • With a very sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across top of each loaf. Bake in a preheated 375 degrees F (190 degrees C) oven for 20 minutes. Brush again with egg white mixture. Bake for an additional 15 to 20 minutes, or until bread tests done. If necessary, cover loosely with foil to prevent over browning. Remove from baking sheet, and cool on a wire rack.

YOUR OWN CRUSTY FRENCH BREAD

Your Own Crusty French Bread image

My father got this recipe some 40+ years ago at TWA. Crusty yet chewy outside - melt in your mouth inside. Smear with garlic butter and watch it disappear! I've taken a photo showing the bread in the hand formed foil baking pans, this is the 2nd rise. Final picture is fresh out of the oven.

Provided by CindiJ

Categories     Yeast Breads

Time 2h45m

Yield 3 loaves

Number Of Ingredients 7

1 (1/4 ounce) envelope quick-rising yeast
2 1/2 cups warm water (110)
7 cups all-purpose flour (or Better for Bread Flour)
2 tablespoons sugar
1 tablespoon salt
1/4 cup cornmeal
2 -3 tablespoons sesame seeds

Steps:

  • Dissolve yeast in very warm water.
  • Stir well.
  • Let proof for 10 minutes.
  • Stir in 2 cups of the flour, sugar and salt until mixture is smooth; gradually beat in enough of the remaining 5 cups flour to make stiff dough.
  • (Kitchen Aid is perfect for this).
  • Turn out onto lightly floured pastry cloth or board and knead 5 minutes or until smooth and elastic, adding only enough more flour to keep dough from sticking.
  • Return to bowl; brush top with soft shortening or oil and cover with clean towel or plastic wrap.
  • Let rise till double in bulk in warm place away drafts (approximately 45-60 minutes).
  • Punch dough down; cover; let rise again for 30 minutes (again in warm place away from drafts) or until double in bulk.
  • While dough rises, make boat shaped baking pans as follows:.
  • Tear off 3 twenty-inch-long sheets of heavy aluminum foil.
  • Fold in sides of foil approximately 1"-1 1/2" on all 4 sides to form baking pan, this will allow the bread to rise up and not spread out into a flat shaped loaf by folding the short ends together to seal, pressing thumb inside to round slightly (shape into boat)with shortest ends slightly rounded.
  • Spray with PAM and sprinkle lightly with corn meal.
  • Punch dough down, knead 1 minute on lightly floured pastry cloth or board.
  • Divide dough into thirds.
  • Roll out with the palm of your hands to a rope approximately 18 inches long; place in prepared foil pan.
  • Repeat with remaining two-thirds dough.
  • Make 3-4 evenly spaced shallow cuts diagonally in the top of each loaf; brush with warm water and sprinkle with sesame seeds.
  • Cover with clean towel and let rise in warm place away from drafts till double in bulk (approx. 30 min).
  • Preheat oven to 450º.
  • Place dish (I use an old aluminum pie plate) on lower shelf of oven and fill half way with hot tap water.
  • Slide loaves on shelf above water.
  • Bake for 15 minutes in 450º oven; reduce heat to 350º and bake 30 minutes longer.
  • Bread is done when tapped and gives a hollow sound.
  • Remove immediately from pans and let cool on cooling racks.
  • Slice bread- spread each side with garlic butter- reassemble bread loaf and return to foil pans.
  • Unfold edges to cover and warm in low oven (325º) till butter melts into bread.
  • Serve warm.
