- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

SOFT & EASY 10 GRAIN SANDWICH BREAD RECIPE
This tried and true bread recipe was adapted from "Cookbook From Yesterday and Today For Tomorrow" by Venetta Sanford and used by permission.

- Combine multi-grain cereal and 1 cup of water in a small pan. Cook over medium-low heat, covered, for 10 minutes, or until soft.
- Remove from heat and stir in butter until melted then add the remaining 1 cup of water, honey, and salt. Cool to lukewarm (Use cold water to speed this process).
- In a mixer combine the 2 cups of whole wheat flour, yeast, cereal mixture and eggs. Beat at low speed 1 minute, scraping bowl, then beat at high speed 2 minutes.
- Using a dough hook (or by hand), stir in 3 cups unbleached flour to make a soft dough.
- Knead with hook 3 minutes (or by hand 5-8 minutes), using remaining flour, if needed. (NOTE: don't add too much flour at this point when using the 2 cups whole wheat - the dough will still look sticky on bottom and sides of mixing bowl, but will not be sticky to the touch.*)
- Place in a greased bowl, turning to grease all sides. Cover and let rise until double, 1 to 1 ¼ hours.
- Punch down and turn out onto a lightly floured surface. Divide in half, cover and let rest 5 minutes.
- Shape into 2 loaves and place in 9x4-in pans. Cover and let rise in warm place until doubled, 45 to 60 minutes.
- Combine the egg yolk with 1 Tb. water and brush on tops of loaves. Sprinkle with sesame or poppy seeds.
- Bake at 375 degrees for 30-35 minutes. Turn out of pans and let cool completely on racks before slicing.

10 GRAIN BREAD
This is a recipe that I modified from a co-worker's mom's white bread recipe. It made such soft bread I wanted to see if I could use the base as a multi-grain bread. Prep time doesn't include rise time.

Steps:
- Mix together the cereal and first amount of water in a saucepan and cook for about 10 minutes to soften the cereal.
- If you want you can set it aside to cool or mix together with cool water and ice cubes to cool it faster.
- Put all ingredients into a KitchenAid mixer. Mix together using the dough hook, once everything is mixed together knead for 2 minutes.
- Place dough in a greased bowl and let sit for 1 hour or until doubled in size. I have also rushed this recipe and let it sit for as little as 15 minutes.
- Punch down and divide into 4 equal pieces. I use a scale to ensure they are the same size. Shape dough and place into greased bread pans.
- Let rise for 1 hour or until double in size.
- Bake at 400 F for 15 minutes or until golden brown and the sound hollow when tapped on the bottom.
- Remove from pans and cool on wire racks.

COPYCAT SEEDUCTION BREAD
Try this copycat recipe of Whole Food's Seeduction bread made with whole grain flour, millet, sunflower, poppy and pumpkin seeds.

- If you are using instant yeast, stir it into the flour, then add the water and mix. If you are using regular, active dry yeast, mix the 1/4 teaspoon with a few tablespoons of the water until the yeast dissolves, then mix in 3 cups of flour.
- Either way, stir until the dough forms a very thick batter, cover and let rise for 4 or more hours at room temperature. Learn more about instant vs. active dry yeast here.
- Place the millet, sunflower seeds and pepitas you are using in a hot, dry skillet and toast 5 - 7 minutes until they begin to pop, stirring often. It is best not to leave the room while performing this procedure, seeds burn very quickly.
- Remove from heat and cool to room temperature.
- When your sponge has risen and shows small bubbles all over the surface, stir it down.
- Dissolve the 1 teaspoon of yeast in about 2 tablespoons of water.
- In a separate bowl, stir together honey, molasses, and oil. Stir in dissolved yeast and 10-grain cereal. It can also be 7 grain or other cracked grain cereal of your choice.
- Add sponge, 1/4 cup of flour, salt, and vital wheat gluten. Mix until the dough comes together to form a ball.
- Knead for 5 to 10 minutes, adding flour until dough is only slightly sticky. Stir or knead in the toasted seeds and the poppy seeds, if using. Adjust dough consistency with flour or a little water as needed.
- Gather dough into a ball with wet hands and place in a clean, oiled bowl, turning once to coat. Cover bowl and let rise at room temperature until doubled in bulk.
- Preheat oven to 450°F.
- Turn out onto lightly floured board and pat into a rectangle. Fold in thirds, then fold the other side, letter style, over the first. Brush off all excess flour. Rock the loaf into a long, torpedo shape and place on a parchment paper-lined pan.
- Optional: Dust the top with flour or whisk an egg white, brush it on and decorate with more seeds.
- Cover loaf of bread with plastic wrap and let rise for 30 or so minutes. Slash the top with a sharp razor blade or serrated knife.
- Bake for 10 minutes using steam , then reduce the temperature to 400°F and bake for 30 to 40 more minutes, or until the internal temperature of the bread is at least 190°F.
- This bread over- browns easily, due to the honey and, if using, the seeds decorating the loaf. If the bread is browning too, much, reduce oven temperature to 350°F and tent bread with aluminum foil.
- Let the bread cool on a rack to allow air flow around it, then slice.

- 1. Gather all 6 ingredients.
- 2. also the brown sugar, salt and yeast.
- 3. Put all ingredients into your bread machine in the order for your bread machine directions. Close lid. For the Seiko machine. Press select until the desired bread selection is selected. I select #6 for a 2 pound loaf (in a Seiko) Press start. Bread will be done in the number of hours as indicated.
