small shallot, chopped

extra virgin olive oil
peperoncino, as desired

Steps:

  • In a large saute pan, add the EV olive oil, the shallot, the garlic and the peperoncino, as desired. Let the garlic turn blonde and add the clams. After 30 secs, add the wine and half of the parsley. Let the clams saute in the wine for about 10 mins. or until they have all opened. Cook for another 2 mins. and serve. Garnish with the remainder of the fresh parsley.

¾ pound cod
½ pound prawns
1 onion, quartered
1 carrot, chopped
1 stalk celery, chopped
salt and ground black pepper to taste
water to cover
6 tablespoons extra-virgin olive oil
½ small onion, sliced
1 red chile pepper, chopped
1 clove garlic, minced
½ cup dry white wine
½ pound tomatoes, chopped
½ pound clams in shell, cleaned
½ pound mussels, cleaned and debearded
4 slices bread, or more to taste
1 clove garlic, halved
1 bunch fresh parsley, chopped

Steps:

  • Cut cod into pieces, reserving any scraps. Peel and devein prawns, reserving any scraps.
  • Place cod and prawn scraps, quartered onion, carrot, celery, salt, and pepper in a large saucepan; cover with water. Bring to a boil; reduce heat and simmer until fish stock is fragrant, 15 to 20 minutes. Strain and reserve fish stock.
  • Heat olive oil in a saucepan over medium heat; cook and stir sliced onion, red chile pepper, and minced garlic until softened, 5 to 10 minutes. Pour in wine; cook for 5 minutes. Add tomatoes; bring to a boil. Add cod, prawns, clams, and mussels; pour in 1 cup fish stock. Simmer until fish is cooked through and clams and mussels have opened, 15 to 20 minutes.
  • Toast bread in a toaster. Rub garlic halves on to 1 side of toasted bread.
  • Place a piece of toasted bread in the bottom of each serving bowl. Ladle soup over toasted bread and top with parsley.

2 pounds fresh clams
1/4 cup extra-virgin olive oil, plus extra for drizzling
3 cloves garlic, 2 crushed, and 1 for rubbing
1 fresh chili pepper, diced
1 stone from the sea, for flavor, optional*
10 cherry tomatoes, quartered
1 cup white wine
Salt
Bunch of fresh Italian or flat-leaf parsley, finely chopped
4 slices country bread, toasted and halved

Steps:

  • Remove excess sand from clams by soaking them in a bowl of cold salted water. The clams will open up their shells and release any sand and grit that is inside.
  • In a pan, heat the 1/4 cup oil and fry up 2 cloves garlic, the chili pepper, the stone, if using, and cherry tomatoes until the tomatoes soften and lose their shape, about 3 minutes.
  • Add the clams, and cook for 30 seconds with the lid on, shaking the pan often.
  • Add the wine to the pan, and cover with the lid until the clams have completely opened.
  • The clams release some water, which is the base for the soup. Add a generous splash of white wine. You can make this more soupy by adding a little more wine or even a few spoonfuls of tomato puree.
  • Add the parsley and salt, to taste. Continue cooking for another minute for all the flavors to come together.
  • Rub some raw garlic on the toasted bread slices. Drizzle the bread with the extra virgin olive oil. Serve the clam soup in bowls with 2 half slices of toast per bowl.

Two 1/2- to 3/4-pound whole red mullets, cut in half, scaled with head and tails removed
One 1 1/4-pound whole orata (or any type of bass), cut in 4 equal parts, scaled with head and tails removed
1 large whole skate wing, cut in 4 equal parts
1 dozen Manila clams
4 razor clams (optional)
1 dozen mussels
4 langoustines, tails split (or 4 jumbo shrimp)
8 small whole seppie, remove beak (or 2 tubes of calamari, sliced into rings)
4 small baby octopus, remove beak
2 cups dry white wine
2 cups water
One 8-ounce can peeled Italian tomatoes (or 1 pint vine-ripe cherry tomatoes)
4 sprigs fresh thyme
Salt and pepper
2 pinches dried oregano
1/2 cup fresh chopped parsley
6 basil leaves, chopped

Steps:

  • In a large saute pan (approximately 16-inches), add oil, garlic, and shallots. Saute until garlic and shallots are a very light golden color. Add all the fish to pan along with the wine, water, tomatoes, thyme, salt, pepper, and oregano. Cover pan and let simmer until clams and mussels open, approximately 20 minutes. Add parsley and basil and divide evenly into 4 soup bowls.
  • At Peasant, Frank floats crostini (toasted bread rubbed with olive oil, garlic, Parmigano, oregano, salt and pepper) on top of each serving.

Garlic Toasts with Red Pepper Aioli, recipe follows
Garlic Bread:
2 tablespoons olive oil
12 (1/2-inch thick) slices ciabatta bread
Salt and freshly ground black pepper

Steps:

  • Wrap the bay leaf, rosemary, and fennel seeds in a cheesecloth bag. Set the sachet aside. Heat the oil in a very large pot over medium heat. Add the chopped fennel and shallots and saute until the fennel is tender, about 6 minutes. Season with salt and pepper. Add the tomatoes with their juices, the wine and fish broth. Stir in the tomato paste. Add the sachet. Bring to a boil. Reduce the heat to medium-low. Cover and simmer until the flavors blend, about 10 minutes.
  • Add the clams to the cooking liquid. Cover and cook until the clams open, about 6-8 minutes (discard any clams that do not open). Using tongs, transfer the clams to a bowl. Repeat with the mussels. Add the potatoes to the cooking liquid and simmer until they are almost tender, about 10 minutes. Add the fish, shrimp, and corn. Simmer until the fish and shrimp are just cooked through, and the corn is heated through, about 5 minutes. Return the clams and mussels to the soup. Stir in the parsley. Season the soup to taste with salt and pepper.
  • Ladle the soup into bowls and serve with the Garlic Toasts with Red Pepper Aioli.
  • Aioli:
  • To make the garlic bread: Preheat the oven to 400 degrees F.
  • Drizzle the oil over the bread slices. Arrange the bread on a baking sheet. Sprinkle with salt and pepper. Bake until the bread is crisp and golden, about 5 minutes. Immediately rub the garlic cloves over the hot toasts.
  • To make the aioli: Finely chop the garlic in the food processor. Add the peppers and blend until almost smooth. Blend in the mayonnaise. With the machine running, blend in the oil. Season the aioli, to taste, with salt and pepper. Transfer the aioli to a small bowl. (The aioli can be made 2 days ahead. Cover and refrigerate.)
  • Spread the aioli over the toasts and serve.

Zuppa De Clams (Or Mussels) image

This is a delicious Italian first course soup, as good with mussels as it is with clams. The servings are large, so adjust accordingly if desired. Time does not include preparing the clams. This is pretty much the soup I would get when I'd order it in New York family Italian restaurants. You can add a bit of clam broth if you like, but steaming the claims in the broth as is gives it a nice flavor. And in this version, the tomatoes, not paste, would be used.

48 baby clams (mahogany clams or little necks are fine too, approximately) or 48 mussels
salt and pepper
2/3 cup olive oil
2 -3 garlic cloves (to taste)
4 sprigs flat-leaf Italian parsley, rinsed dried and coarsely chopped
1 -2 tablespoon finely minced fresh sweet basil (to taste) (optional)
1 (28 ounce) can italian peeled plum tomatoes, coarsely chopped (reserve liquid)
sliced fresh crusty rustic Italian bread or French bread

Steps:

  • Wash and dry the clams and soak them in a large bowl in cold, salted water for about 30 minutes.
  • Any remaining sand should fall to the bottom of the bowl.
  • Drain the clams and rinse them well in a colander under running water.
  • Crush one clove of garlic, and slice the remaining cloves very thin.
  • In a large, heavy pan, sauté the crushed garlic until it begins to brown, then remove from the pan and discard.
  • Add the remaining sliced garlic and the parsley.
  • Cook over very low heat for 2 to 3 minutes, then add the tomatoes and enough liquid to just make a slightly soupy dish.
  • You don't want too much liquid in this, but judge the amount to your taste.
  • Season with the salt and pepper, then raise the heat to medium and cook for 15 minutes.
  • (Add more liquid if necessary).
  • Add the clams, lower the heat again, cover pan, and let steam for about 10 minutes, or until the shells have opened and the clams are ready.
  • Discard any unopened clams.
  • Sprinkle with more freshly ground pepper and the basil, if desired.
  • (You can substitute a teaspoon of dried if you wish).
  • Serve in shallow bowls with slices of bread for dunking.

3 lbs calamari
2 lbs shrimp (cleaned)
2 lbs scallops

Steps:

  • Scrub & clean all shellfish thoroughly. Be especially carefuyl to throw away any clams or mussels that don't close or stay closed.
  • Brown garlic in oil in large stock pot.
  • place mussels and clams together in the pot, pour in 1 to 2 cups of water. Bring to a boil and steam for about 15 minute
  • Check to be sure all clams and mussels open if not let cook a little longer. When opened remove from pot and set aside.
  • Add remaining ingredients and cover pot tightly.
  • simmer for 30 minute check and stir occasionally. Add the clams & mussels back in and stir all together. Serve over linquini. & with fresh Italian bread.

2 pounds large shrimp, peeled and deveined
1 pound calamari rings

2 (6.5 ounce) cans chopped clams
¼ cup olive oil
1 small yellow onion, chopped

2 (16 ounce) packages linguine pasta

Steps:

  • Heat 3 tablespoons olive oil in a large skillet over medium heat; cook and stir sea scallops, shrimp, and calamari rings in the hot oil until scallops and calamari are opaque and shrimp are pink, about 5 minutes.
  • Bring a separate pot of water to a boil and add mussels and littleneck clams to the boiling water; cook until shells have opened, about 3 minutes. Remove shellfish and rinse with hot water.

1 cup dry white wine
4 1/2 cups water
12 small hard-shelled clams such as littleneck clams, scrubbed (less than 2 inches in diameter)
12 mussels, scrubbed and beards removed (preferably cultivated)
4 cups fish stock (32 fl oz) or 4 cups bottled clam juice (32 fl oz)
2 (14 ounce) cans diced tomatoes with juice
1 teaspoon sugar
1 lb skinless halibut fillet, cut into 1-inch pieces
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
1 (12 inch) Italian bread, cut into 1/2-inch-thick slices
2 tablespoons olive oil
1 garlic clove, halved crosswise

Steps:

  • Make soup: Rinse squid under cold running water and pat dry.
  • If squid are large, halve ring of tentacles, then cut longer tentacles crosswise into 2-inch pieces.
  • Pull off flaps from squid bodies and cut into 1/4-inch-thick slices. Cut bodies crosswise into 1/4-inch-thick rings.
  • Pat shrimp dry and sprinkle with pepper and 1/4 teaspoon salt.

  • Add wine and 1/2 cup water and bring to a boil. Stir in clams and cook, covered, over moderately high heat until shells open wide, checking frequently after 6 minutes and transferring as opened with a slotted spoon to bowl with shrimp. (Discard any unopened clams after 8 minutes.)
  • Stir in mussels and cook, covered, over moderately high heat until shells open wide, checking frequently after 3 minutes and transferring as opened with a slotted spoon to bowl with shrimp. (Discard any unopened mussels after 6 minutes.)
  • Put oven rack in middle position and preheat oven to 425°F
  • Add stock to pot along with remaining 4 cups water, tomatoes with juice, sugar, and remaining 1/2 teaspoon salt and simmer, uncovered, 15 minutes.
  • Make toasts while stock simmers: Arrange bread slices in 1 layer on a baking sheet, then drizzle with oil and season with salt.
  • Bake, turning over once, until golden, about 10 minutes total. Transfer toasts to a rack to cool slightly, then rub lightly with cut sides of garlic and sprinkle with parsley.
  • Finish soup: Add halibut to stock and cook at a bare simmer, covered, until just cooked through, about 2 minutes.
  • Stir in squid and reserved shellfish, then remove from heat and let stand, covered, 1 minute. Stir in basil and parsley and serve immediately, with toasts alongside for dipping.

Steps:

  • Into a saucepan put 4 dozen *vongole* or small clams (cockles or mussels can be used as well).
  • Pour over them three-quarters of a bottle of white wine and let them cook until they have opened.
  • Drain them, setting aside the liquid in which they have cooked, and remove the empty half-shells. -- Chop the white part of a leek with a small onion, add a clove of garlic, and saute this mixture in a saucepan with good oil, add the liquid from the clams, and a quart of fish stock; add a peeled and chopped tomato, a bouquet of marjoram, and a few green leaves of celery.
  • Let this bubble fast for ten minutes, remove the bouquet and the garlic, stir the clams into the soup, and pour it into the tureen.
  • Serve separately small croutons of bread fried in oil.
