WHEAT GERM ZUCCHINI BREAD



Wheat Germ Zucchini Bread image

This is the best zucchini bread I've ever made or eaten for that matter. Given to me by a friend years ago. I've lost contact with her now, but not her zucchini bread. Fond memories, both.

Number Of Ingredients 13

3 eggs
1 cup vegetable oil
1 cup sugar
1 cup brown sugar
3 teaspoons maple flavoring
2 cups shredded zucchini, unpeeled (abut 3 medium)
1 cup coarsely chopped walnuts or 1 cup pecans
2 1/2 cups flour
1/2 cup wheat germ
2 teaspoons baking soda
2 teaspoons salt
1/2 teaspoon baking powder
1/3 cup sesame seeds

Steps:

  • Grease and flour 2 bread pans.
  • Tap out excess.
  • Preheat oven to 350 degrees F.
  • Sift flour, salt, baking powder and baking soda together into a small bowl.
  • Stir in wheat germ.
  • Beat eggs until very frothy.
  • Add oil, maple flavoring and both sugars and beat until very light and sugar is more or less dissolved.
  • This takes awhile.
  • You'll need an electric mixer.
  • With mixer on low speed, gradually add the dry ingredients.
  • Dust nuts lightly with flour.
  • Add them along with the zucchini and blend gently into the batter with a rubber spatula.
  • Pour into prepared pans.
  • (I like the pyrex glass ones best for quick breads.) Sprinkle with sesame seeds.
  • Bake for about 1 hour until top of the bread springs back when lightly touched.
  • Cool on wire rack for about a half hour.
  • When ready to remove from pans, slide a knife gently around the edges of the pans to loosen bread.
  • Easy does it.
  • Slide the bread out and allow to cool completely on the bread board.
  • Cover loosely with a light towel or piece of plastic wrap to keep from drying out.

My favorite wheat germ bread was no longer available I had to try to copy it, this is what I came up with. Its great toasted.

1 1/2 teaspoons yeast (active dry yeast)
1 cup water, warm
1 1/2 tablespoons honey
2 1/4 cups flour
1/3 cup wheat germ, toasted
1/2 cup whole wheat flour
1 tablespoon cornmeal
1 teaspoon salt
1 tablespoon olive oil

Steps:

  • In a small measuring cup add warm water, yeast and honey, stir well,set aside for 10 minutes until foamy.
  • In a skillet toast wheat germ, on medium heat for 5-8 minutes, stirring constantly, cool.
  • Either in a food processor or stand mixer add flour, whole wheat flour, cornmeal, salt and cooled wheat germ.
  • Add olive oil and proofed yeast mix well. Mix until a smooth ball forms.
  • Take out of mixer and knead on slightly floured board (4-5 minutes).
  • Put dough in a large greased bowl and cover with a clean towel.
  • Let rise in a warm place for 60 minutes until double in bulk.
  • Punch down and form into loaf, placing in a well greased 9x5-inch loaf pan.
  • Let rise for another 30-45 minutes.
  • Bake at 375°F for 25 minutes.
  • Take out of oven brush with butter, let cool on wire rack.

2 large eggs
3/4 cup wheat germ, toasted
1/2 cup shredded monterey jack cheese
1/4 cup chopped mushroom
1/2 small onion, minced (about 1/2 cup)
1/2 teaspoon thyme, crumbled
1/2 teaspoon rosemary, crumbled
1 1/2 cups shredded zucchini
salt, to taste
fresh ground pepper, to taste
1 tablespoon vegetable oil
4 hamburger buns
roasted red pepper (optional)

Steps:

  • In a large mixing bowl, beat the eggs.
  • Stir in wheat germ, cheese, mushrooms, onion, thyme, rosemary and zucchini. Add salt and pepper to taste.
  • Shape into 4 patties, 3/4-inch thick.
  • In a nonstick saute pan, heat the oil, place in patties, and cook until golden, about 4 minutes.
  • Flip, and cook other side until golden, too, about 3 minutes more.
  • Serve with buns and your favorite fixings. Sean Donnellson recommends roasted red peppers. Olive tapenade is another possibility.

3/4 cup margarine
1 cup brown sugar
1 egg
1 teaspoon vanilla
2 1/2 teaspoons grated lemons, rind of
1 cup wheat germ
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
3/4 cup milk
1/2 cup raisins
1 cup shredded zucchini

Steps:

  • Cream margarine and add sugar.
  • Beat in egg and lemon peel.
  • Add dry ingredients alternately with milk.
  • Add zucchini and raisins.
  • Drop by spoonfull onto greased cookie sheet (if using non stick pans omit grease).
  • Bake at 375 degreesF for about 14 minutes.

1 cup packed brown sugar
1/2 cup canola oil
2 eggs, lightly beaten
1/2 cup unsweetened applesauce
1-1/2 cups all-purpose flour
1-1/2 cups toasted wheat germ
1 cup quick-cooking oats
2 teaspoons baking powder
1 teaspoon salt
1 cup (6 ounces) miniature chocolate chips
1/2 cup chopped walnuts or pecans

Steps:

  • In a large bowl, beat brown sugar and oil until blended. Beat in egg, then applesauce. Combine the flour, wheat germ, oats, baking powder, and salt; gradually add to brown sugar mixture and mix well. Stir in chocolate chips and walnuts., Drop by rounded teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Flatten slightly with a glass bottom coated with cooking spray. , Bake at 350° for 10-12 minutes or until edges are lightly browned and cookies are set. Cool for 1 minute before removing to wire racks.

3 cups fresh zucchini
2/3 cup coconut oil
1 1/4 cups brown sugar
2 eggs, beaten
2 teaspoons vanilla
2 teaspoons baking soda
1 pinch salt
3 cups whole wheat pastry flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg

Steps:

  • 1 Preheat the oven to 350°F (175°C). In a large bowl combine the sugar, eggs, and vanilla. Stir in the grated zucchini and then the melted butter. In a separate bowl, mix together the flour, baking soda, nutmeg, and cinnamon. Stir these dry ingredients into the zucchini mixture. Stir in walnuts, raisins or cranberries if using.
  • 2 Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely. Bake on the middle rack until muffins are golden brown, and the top of the muffins bounce back when you press on them, about 25 to 30 minutes. Test with a long toothpick or a thin bamboo skewer to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin let cool another 20 minutes.
  • Note, if you are including walnuts and dried fruit, you will likely have more batter than is needed for 12 muffins. I got about 14 muffins from this batch, and that included filling the muffin cups up as far as they could possibly go (above the surface of the muffin tin).

Since I have an abundance of zucchini in my garden I experiment around and try different recipes that use zucchini. I tried these lately and these are good. In case you are wondering sucanat is unrefined sugar.

3/4 cup butter, softened
3/4 cup milk
1 teaspoon vanilla
1 egg
2 cups whole wheat flour
1 cup wheat germ

1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 cup shredded zucchini
1/4 cup raisins
1/4 cup chopped nuts

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease cookie sheet. Mix sucanat, butter, milk, vanilla and egg in large bowl. Stir in flour, wheat germ, baking powder, cinnamon, salt and nutmeg. Fold in zucchini raisins, and nuts.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Bake 12 - 15 minutes or until light brown.

  • Preheat the oven to 350 degrees F. Lightly coat a baking sheet with nonstick spray or line with parchment paper or silpat mats. Place the shredded zucchini between layers of paper towel, then thoroughly squeeze out as much excess water as possible. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, beat the butter on high until completely smooth and creamy, about 2 minutes. Add the coconut sugar and beat on medium high for 3 full additional minutes, stopping to scrape down the bowl as needed. On high speed, beat in the honey and Greek yogurt, then the egg and vanilla until completely combined. The mixture may look curdled, but it will be fine. Scrape down the mixer as needed and blend the batter as well as you can.
  • In a separate bowl, whisk together the whole wheat flour, oats, baking powder, salt, baking soda, cinnamon, and cloves. On low speed, slowly add one-third of the dry ingredients to the wet. By hand, fold in half of the shredded zucchini. Mix in the next third of the dry ingredients (again on low speed), fold in the remaining zucchini, and finally mix in the last third of the dry ingredients. By hand, stir in the chocolate chips.
  • With a cookie scoop, portion the cookies onto the prepared baking sheets. Bake for 11 to 13 minutes, until the tops are barely set and the edges are dry to the touch. They may seem underdone, but do not overbake or the cookies will be dry. Let rest on the pan for 5 minutes, then transfer to a wire rack to cool completely.
