1 1/4 cups all-purpose flour
Kosher salt and freshly ground black pepper
10 tablespoons (1 1/4 sticks) cold unsalted butter, 1/2-inch-diced
1/2 teaspoon white wine vinegar
5 tablespoons ice water
1 1/2 pounds zucchini, unpeeled and sliced 1/8 inch thick
2 tablespoons good olive oil, divided
8 ounces plain creamy goat cheese, such as Montrachet, at room temperature
1 teaspoon minced fresh thyme leaves
1/4 teaspoon grated lemon zest

Steps:

  • Place the flour, 3/4 teaspoon of salt, and the butter in the bowl of a food processor fitted with the steel blade and pulse 12 to 14 times, until the butter is the size of peas. With the processor running, pour the vinegar and ice water through the feed tube and continue to process and pulse until the dough just comes together. Dump out on a floured board, form into a disk, wrap in plastic, and chill for 30 minutes.
  • Meanwhile, place the zucchini in a colander set over a plate. Toss it with 2 teaspoons of salt and set aside for 30 minutes. Spread the zucchini out on a clean dish towel, roll it up, and squeeze gently to remove some of the liquid. Put the zucchini slices into a bowl and toss with 1 tablespoon of olive oil. With a fork, mash together the goat cheese, thyme, lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon pepper and set aside.
  • Preheat the oven to 400 degrees F. Roll the dough out on a floured board to an 11-inch circle and place on a sheet pan lined with parchment paper. Spread the dough with the goat cheese mixture, leaving a 1/2-inch border. Lay the zucchini slices in tightly overlapping circles, starting at the very edge of the pastry (the zucchini will shrink when it bakes). Continue overlapping circles of zucchini until the whole tart is covered. Drizzle with the remaining tablespoon of olive oil and sprinkle with pepper. Bake for 40 to 50 minutes, until the dough is golden brown. Cut in wedges and serve hot, warm, or at room temperature.

3 tsp kosher salt - 1 for dough, 2 for salting zucchini
1 tsp. vodka
1-1/2 lb. zucchini, trimmed and sliced into 1/8-inch-thick rounds
Freshly ground black pepper
2 tbsp extra-virgin olive oil
8 oz plain goat cheese, softened
1 1/4 tsp chopped fresh lemon thyme
1/2 tsp lemon zest

Steps:

  • In a food processor, pulse the flour, butter, and tsp salt until the butter is the size of small peas. Add the vodka and 3 tbsp of cold water, 1 spoonful as a time, pulsing until the dough just comes together. Add one more tablespoon of water if you need it.
  • Shape the dough into a 1-inch-thick disk; wrap in plastic and chill for 30 minutes.
  • Roll the dough on a well-floured surface or between two sheets of parchment paper into an 11-inch round that's 1/4-inch thick. Put the dough on a baking sheet layered with parchment paper, cover with plastic, and chill until ready to use (at least 30 minutes).

1 round store-bought refrigerated pie dough
1/3 cup mayonnaise
1 tablespoon Dijon mustard
2 medium zucchini, thinly sliced into rounds
1 teaspoon chopped fresh thyme
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling

Steps:

  • Put a baking sheet in the oven and preheat the oven to 375 degrees F.
  • Lay the pie dough on a piece of parchment. Slightly raise the edges and crimp. Stir together the mayonnaise and mustard in a small bowl, then spread the mixture over the crust.
  • Put the zucchini and thyme in a medium bowl. Sprinkle with salt and pepper and drizzle with extra-virgin olive oil; toss gently to combine. Arrange the slices over the mayonnaise mixture.
  • Carefully remove the hot pan from the oven. Slide the parchment paper onto the pan and bake until the crust is golden and the zucchini is tender, 20 to 30 minutes.

500g pack ready-made sweet shortcrust pastry
4 eggs , beaten
zest and juice 2 lemons
140g caster sugar
200ml tub crème fraîche
100g pack rindless fresh goat's cheese , roughly crumbled
blackberries or other fruit, to serve (optional)

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Roll out the pastry and use to line a 20cm loose-bottom tart tin, about 3-4cm deep. Chill for 30 mins. Line the pastry with greaseproof paper and fill with baking beans.
  • Bake for 15 mins, then remove the paper and beans. Brush the inside of the tart with a little of the beaten egg, then return to the oven for 5 mins to crisp. Remove and reduce heat to 150C/fan 130C/gas 2.
  • Stir the zest, juice and sugar together until the sugar dissolves, then beat in the remaining eggs and crème fraîche. Tip into a jug. Put the tart case on a baking sheet in the oven and pour in the lemon mixture. Sprinkle over the goat's cheese, then bake for 1 hour-1 hour 10 mins, until set with a slight wobble in the centre. Serve warm or cold, topped with fruit.
