ZUCCHINI & CARROT RIBBON FETTUCINI
I have been making this recipe for years and years. Found it originally on a box of Mueller's pasta and it has been a hit since then. A pretty side dish to any meal - even pretty enough for guests. My daughter still requests this for her birthday dinner. It does not have a cheese sauce (see other recipes here on Zaar for that) but you do have the option of topping it with some freshly grated Parmesan cheese but we enjoy it with just a basic buttered coating more often. Hope you enjoy!

Steps:
- In preparation: using a vegetable peeler, slice wide thin strips from the zucchini and carrots, slicing the full length of the vegetable. Set aside.
- Cook pasta according to package directions in a large pasta pot.
- Heat butter in a medium skillet just until melted then stir in the zucchini and carrot ribbons; cover and cook over low heat 2 minutes. Season with salt and pepper and stir once more.
- Drain prepared fettuccine and then toss it with the vegetable ribbons and the herbs.
- If desired, sprinkle top generously with Parmesan cheese after placing it in a serving dish and serving.
FRIED ZUCCHINI COINS

Steps:
- Line a dish with paper towels and set aside. Whisk the cornmeal, flour, basil, salt, cayenne, and pepper in a bowl.
- Beat the eggs in another bowl.
- Heat 1/4-inch vegetable oil in a skillet over medium heat until hot but not smoking.
- Working in small batches, toss the zucchini coins in the eggs, then coat in the cornmeal mixture to cover completely. Carefully drop the zucchini into the oil, and fry until golden brown, about 2 minutes on each side or until crisp. Remove from the oil with a slotted spoon and place on the prepared plate. Season with salt, cool slightly and serve.

BAKED ZUCCHINI COINS
If you love to order deep fried zucchini sticks in restaurants, then you will LOVE this healthier at home version. You won't even be able to tell they aren't deep fried! I Serve them as a side to steak and a salad.

Steps:
- Mix flour, cornmeal, salt, basil and pepper on a plate.
- Beat egg in a small bowl.
- Slice zucchini into 1/4" thick coins (its easier to brown them more evenly in the oven if they are coins because you only have to flip them once).
- Dip zucchini into egg and then into cornmeal mixture.
- Coat a parchment lined cookie sheet with a couple of tablespoons of olive oil. Arrange zucchini coins on cookie sheet and bake at 425° for about 10 minutes per side, until golden brown.
- Serve with bottled blue cheese or ranch dressing as an appetizer or with steak and salad for a meal.

CLARE'S BAKED ZUCCHINI COINS
There are lots of baked zuke recipes on 'Zaar. Here is my take. I only dip a single side so I don't have to worry about flipping them, but you can certainly dip both and flip them during baking. Of course, the amount of seasoning and egg white you use will depend on the size of your zucchini. Sometimes I'll add some grated parmesan or extra cayenne pepper. DH likes to dip these in ketchup.

- Preheat the over to 450 degrees Farenheit.
- Line a baking sheet with parchment paper.
- Mix together the cornflake crumbs and the seasoning, and salt and pepper to taste.
- Dip each zucchini slice in the egg white, then in the crumb mixture. Place dipped side up on the parchment.
- Bake for 10 minutes, and switch to the broiler for 5 minutes, until crisp to your liking.
