GREEK ZUCCHINI FRITTERS

Greek Zucchini Fritters image

These zucchini fritters are based on a recipe I learned from the cookbook author Diane Kochilas. A classic mezze served in Greek taverna, they're like a Greek version of latkes.

Provided by Martha Rose Shulman

Categories     appetizer

Time 2h20m

Yield Serves six to eight

Number Of Ingredients 10

2 pounds large zucchini, trimmed and grated on the wide holes of a grater or food processor
Salt
2 eggs
1/2 cup chopped mixed fresh herbs, such as fennel, dill, mint, parsley (I like to use mostly dill)
1 tablespoon ground cumin
1 cup fresh or dry breadcrumbs, more as necessary
Freshly ground pepper
1 cup crumbled feta
All-purpose flour as needed and for dredging
Olive oil for frying

Steps:

  • Salt the zucchini generously and leave to drain in a colander for one hour, tossing and squeezing the zucchini from time to time. Take up handfuls of zucchini, and squeeze out all of the moisture. Alternately, wrap in a clean dish towel, and squeeze out the water by twisting at both ends.
  • In a large bowl, beat the eggs and add the shredded zucchini, herbs, cumin, bread crumbs, salt and pepper to taste and feta. Mix together well. Take up a small handful of the mixture; if it presses neatly into a patty, it is the right consistency. If it seems wet, add more breadcrumbs or a few tablespoons of all-purpose flour. When the mixture has the right consistency, cover the bowl with plastic wrap and refrigerate for one hour or longer.
  • Heat 1 inch of olive oil in a large frying pan until rippling, or at about 275 degrees. Meanwhile, take up heaped tablespoons of the zucchini mixture, and form balls or patties. Lightly dredge in flour.
  • When the oil is very hot, add the patties in batches to the pan. Fry until golden brown, turning once with a spider or slotted spoon. Remove from the oil, and drain briefly on a rack. Serve with plain Greek style yogurt if desired.

ZUCCHINI FRITTERS

Zucchini Fritters image

Serve these savory fritters with tzatziki, a garlicky yogurt sauce.

Provided by Martha Stewart

Number Of Ingredients 9

1 pound (about 2 medium) zucchini
1 teaspoon salt
1 tablespoon (1 lemon) freshly grated lemon zest
10 sprigs fresh flat-leaf parsley, stems removed and leaves finely chopped, plus more sprigs for garnish (optional)
1 medium clove garlic, minced
1/4 teaspoon freshly ground black pepper
2 large eggs, lightly beaten
1/2 cup all-purpose flour
1 lemon, cut into 8 wedges (optional)

Steps:

  • Using the large holes of a box grater, grate zucchini into a medium bowl. Add salt, lemon zest, chopped parsley, garlic, pepper, and eggs. Mix well to combine. Slowly add flour, stirring so no lumps form.
  • Heat 2 tablespoons olive oil in a large saute pan over medium-high heat until oil sizzles when you drop a small amount of zucchini mixture into the pan. Carefully drop about 2 tablespoons zucchini mixture into pan; repeat, spacing fritters a few inches apart.
  • Cook fritters until golden, 2 to 3 minutes. Reduce heat to medium. Turn fritters, and continue cooking until golden, 2 to 3 minutes more. Transfer fritters to a plate; set aside in a warm place. Cook remaining zucchini mixture, adding more oil to pan if necessary. Garnish with parsley sprigs and lemon wedges, if desired; serve.

BAKED ZUCCHINI FRITTERS

Baked Zucchini Fritters image

Cheesy baked zucchini fritters are delicious fresh out of the oven or served cold with your favourite dipping sauce.

Provided by Colleen Milne

Categories     Appetizer

Time 39m

Number Of Ingredients 10

1 tbsp olive oil
1 medium zucchini (unpeeled, about 12")
1/2 tsp salt
2 large eggs (beaten)
1 cup Parmesan cheese (freshly grated)
2 garlic cloves (minced)
1/2 small onion (finely diced)
2 tbsp fresh basil (chopped)
1/4 tsp black pepper
1/2 cup chickpea flour

Steps:

  • Preheat oven to 400°
  • Line a 16" x 12" baking pan with parchment, and brush or spray the parchment with olive oil
  • Using a food processor or a box grater, shred zucchini and sprinkle it with salt.
  • Put the grated zucchini in batches in the center of a couple of layers of cheesecloth, or use a clean kitchen towel. Form a "bag" around the zucchini and really squeeze as much water as you can from it. You want the zucchini to be as dry as possible. Let the zucchini sit in a strainer while you prepare the rest of the ingredients. When as much moisture as possible is removed, you should have about 2 cups of zucchini, but a little more or less will be fine.
  • In a large bowl combine eggs, Parmesan, garlic, onion, basil and pepper
  • After giving the grated zucchini one more squeeze, in batches, add it to the Parmesan mixture and stir well to combine.
  • Stir in the chickpea flour, combining thoroughly
  • Form the batter into 12 balls (each ball will be a little less than 1/4 cup)
  • Put the balls, evenly spaced, on the prepared baking sheet and flatten with the back of a spoon to form patties
  • Bake in the center of the oven for 12minutes
  • Flip the patties and bake 12 more minutes
  • Garnish with parsley and serve hot or allow to cool and refrigerate.

ZUCCHINI FRITTERS (GLUTEN-FREE, LOW-CARB, KETO)

Zucchini Fritters (gluten-free, low-carb, keto) image

Zucchini fritters are the perfect appetizer or small bite. And these goat cheese zucchini fritters are topped with a creamy garlic, chive, yogurt sauce.

Provided by Lisa Bryan

Categories     Appetizer

Time 50m

Number Of Ingredients 12

1 1/2 pounds zucchini (about 2-3 medium to large zucchini)
1 shallot (finely diced)
2 eggs (beaten)
1/2 cup almond flour
1/4 cup goat cheese (crumbled)
salt and pepper (to taste)
2 tablespoons olive oil (for frying)
1 cup yogurt
2 garlic cloves (minced)
1 tbsp chives (finely chopped)
1/2 tsp salt
1/4 tsp pepper

Steps:

  • Grate the zucchini and put into a bowl. Sprinkle with salt, stir together and let stand for 20 minutes. The salt will work to draw the moisture out of the zucchini.
  • Squeeze out the liquid from the zucchini, with either a nut milk bag or cheesecloth, then return to a clean bowl.
  • Add the shallot, eggs, goat cheese, almond flour, salt and pepper. Then stir to combine.
  • Heat the oil in a large pan over medium heat. Using either your hands or a spoon, dollop out mounds (approximately 1/4 cup worth) of the mixture into the hot pan. Using a spatula, push down each fritter to flatten.
  • Cook the fritters 3-4 minutes on each side, or until they're lightly golden.
  • Remove the fritters from the pan and place them on a paper towel to dab away any extra oil.
  • Mix the sauce ingredients together in a bowl, stirring until creamy.
  • Serve the fritters with a dollop of the sauce, then enjoy!

  • Wash, trim the zucchini, keep their skin on. Use a hand grater with the medium slicing holes (this adds more texture to your fritters!) to finely grate the zucchini.
  • Place the grated zucchinis in a large bowl and sprinkle 1 teaspoon salt all over. Toss with your hands to bring the salt in contact with all the grated zucchinis. Set aside for 10 minutes. This step will 'sweat' out the zucchini water and prevents soft fritters.
  • Prepare a clean kitchen towel next to the mixing bowl. Squeeze the grated zucchini with your hands to extract the zucchini juice (discard it). Then, place the squeezed zucchini in the center of the clean kitchen towel. Wrap the grated zucchini in the towel and squeeze as hard as you can to release all the liquid. Look at my picture above in this post for the technique.
  • Discard the zucchini juice. Press the drained, shredded zucchini into a measuring cup. You should now have 1 cup of shredded, drained zucchini. If more, set aside for another recipe.
