GREEK ZUCCHINI FRITTERS

Steps:
- Salt the zucchini generously and leave to drain in a colander for one hour, tossing and squeezing the zucchini from time to time. Take up handfuls of zucchini, and squeeze out all of the moisture. Alternately, wrap in a clean dish towel, and squeeze out the water by twisting at both ends.
- In a large bowl, beat the eggs and add the shredded zucchini, herbs, cumin, bread crumbs, salt and pepper to taste and feta. Mix together well. Take up a small handful of the mixture; if it presses neatly into a patty, it is the right consistency. If it seems wet, add more breadcrumbs or a few tablespoons of all-purpose flour. When the mixture has the right consistency, cover the bowl with plastic wrap and refrigerate for one hour or longer.
- Heat 1 inch of olive oil in a large frying pan until rippling, or at about 275 degrees. Meanwhile, take up heaped tablespoons of the zucchini mixture, and form balls or patties. Lightly dredge in flour.
- When the oil is very hot, add the patties in batches to the pan. Fry until golden brown, turning once with a spider or slotted spoon. Remove from the oil, and drain briefly on a rack. Serve with plain Greek style yogurt if desired.

Steps:
- Using the large holes of a box grater, grate zucchini into a medium bowl. Add salt, lemon zest, chopped parsley, garlic, pepper, and eggs. Mix well to combine. Slowly add flour, stirring so no lumps form.
- Heat 2 tablespoons olive oil in a large saute pan over medium-high heat until oil sizzles when you drop a small amount of zucchini mixture into the pan. Carefully drop about 2 tablespoons zucchini mixture into pan; repeat, spacing fritters a few inches apart.
- Cook fritters until golden, 2 to 3 minutes. Reduce heat to medium. Turn fritters, and continue cooking until golden, 2 to 3 minutes more. Transfer fritters to a plate; set aside in a warm place. Cook remaining zucchini mixture, adding more oil to pan if necessary. Garnish with parsley sprigs and lemon wedges, if desired; serve.

Steps:
- Preheat oven to 400°
- Line a 16" x 12" baking pan with parchment, and brush or spray the parchment with olive oil
- Using a food processor or a box grater, shred zucchini and sprinkle it with salt.
- Put the grated zucchini in batches in the center of a couple of layers of cheesecloth, or use a clean kitchen towel. Form a "bag" around the zucchini and really squeeze as much water as you can from it. You want the zucchini to be as dry as possible. Let the zucchini sit in a strainer while you prepare the rest of the ingredients. When as much moisture as possible is removed, you should have about 2 cups of zucchini, but a little more or less will be fine.
- In a large bowl combine eggs, Parmesan, garlic, onion, basil and pepper
- After giving the grated zucchini one more squeeze, in batches, add it to the Parmesan mixture and stir well to combine.
- Stir in the chickpea flour, combining thoroughly
- Form the batter into 12 balls (each ball will be a little less than 1/4 cup)
- Put the balls, evenly spaced, on the prepared baking sheet and flatten with the back of a spoon to form patties
- Bake in the center of the oven for 12minutes
- Flip the patties and bake 12 more minutes
- Garnish with parsley and serve hot or allow to cool and refrigerate.

Steps:
- Grate the zucchini and put into a bowl. Sprinkle with salt, stir together and let stand for 20 minutes. The salt will work to draw the moisture out of the zucchini.
- Squeeze out the liquid from the zucchini, with either a nut milk bag or cheesecloth, then return to a clean bowl.
- Add the shallot, eggs, goat cheese, almond flour, salt and pepper. Then stir to combine.
- Heat the oil in a large pan over medium heat. Using either your hands or a spoon, dollop out mounds (approximately 1/4 cup worth) of the mixture into the hot pan. Using a spatula, push down each fritter to flatten.
- Cook the fritters 3-4 minutes on each side, or until they're lightly golden.
- Remove the fritters from the pan and place them on a paper towel to dab away any extra oil.
- Mix the sauce ingredients together in a bowl, stirring until creamy.
- Serve the fritters with a dollop of the sauce, then enjoy!

- For this recipe, you need about 2 small zucchinis or 1 medium zucchini. Wash the zucchini, keep the skin on, and trim ends.
- Wrap the grated zucchini into a clean towel, gather the corner of the towel, and squeeze hard to extract ALL the water from the zucchinis. This is really important to ensure crispy zucchini fritters.
- Now measure the amount of grated zucchini required by the recipe which is 1 cup + 1/4 cup or weight 210 g/7 oz.

- Wash, trim the zucchini, keep their skin on. Use a hand grater with the medium slicing holes (this adds more texture to your fritters!) to finely grate the zucchini.
- Place the grated zucchinis in a large bowl and sprinkle 1 teaspoon salt all over. Toss with your hands to bring the salt in contact with all the grated zucchinis. Set aside for 10 minutes. This step will 'sweat' out the zucchini water and prevents soft fritters.
- Prepare a clean kitchen towel next to the mixing bowl. Squeeze the grated zucchini with your hands to extract the zucchini juice (discard it). Then, place the squeezed zucchini in the center of the clean kitchen towel. Wrap the grated zucchini in the towel and squeeze as hard as you can to release all the liquid. Look at my picture above in this post for the technique.
- Discard the zucchini juice. Press the drained, shredded zucchini into a measuring cup. You should now have 1 cup of shredded, drained zucchini. If more, set aside for another recipe.

- In a food processor, coarsely puree the chopped cucumber. Transfer to a medium bowl. Stir in the yogurt and the remaining 2 tablespoons of mint and season with salt and pepper.
- Preheat the oven to 350°. In a medium saucepan, heat 1/2 inch of vegetable oil to 350°. Set a paper towel-covered baking sheet near the stove. Working in batches, drop rounded tablespoons of the fritter batter into the hot oil and fry, turning the fritters a few times, until browned and crisp, about 2 minutes. Using a slotted spoon, transfer the fritters to the prepared baking sheet and repeat with the remaining fritter batter. Discard the paper towels and reheat the fritters in the oven for about 3 minutes. Serve the zucchini fritters hot with the cucumber-yogurt sauce.

- Let the grated zucchini tossed with the salt sit for about 30 minutes, then thoroughly wring out as much liquid as you possibly can (key for achieving crispy fritters). One method is to place the grated zucchini in a clean dish towel and wring out the liquid that way.
- Heat the oil in a skillet over medium-high heat. Once hot drop about 3 heaping tablespoons of batter per fritter in the skillet and fry on both sides until nicely browned. Place the fried fritters on paper towels to drain. Serve immediately while crispy. Serve with a dollop of sour cream and a sprig of fresh herb for garnish.

- Put the grated zucchini in a bowl and add a pinch of salt. Leave for 10 minutes so the salt starts extracting the moisture.
- Meanwhile, whisk the egg, the stock, the ground coriander and a good pinch of salt and pepper in a large bowl until well combined.
- Then, add half of your self-raising flour and whisk until there are no lumps. Add the other half of your flour and again, whisk until smooth.
- Now would be a good time to spend 1-2 minutes squeezing as much liquid out of the zucchini as possible. Then, add it to the fritter batter along with your parsley and stir through.
