Orange Chicken Stir Fry image

The most incredible Orange Chicken Stir Fry with pan seared chicken, red bell peppers, onion and a delicious sweet and savory sauce served over rice. So easy and so flavorful!

Provided by Jenn

Categories     Main

Time 25m

Number Of Ingredients 10

1/3 cup chicken broth
1/3 cup orange marmalade
2 Tbsp. soy sauce
1/2 tsp. garlic powder
pinch of red pepper flakes
2 Tbsp. olive oil (divided)
1 red bell pepper (coarsely chopped)
1/2 purple onion (coarsely chopped)
1 lb. chicken thighs (boneless skinless, cut into bite-size pieces (I used chicken breasts))
1/4 cup cornstarch

Steps:

  • Combine the chicken broth, orange marmalade, soy sauce, garlic powder and red pepper flakes in a small bowl, then whisk to combine. Set this aside for later.
  • Heat a wok or large skillet over medium-high heat. Add 1 tablespoon of oil to the pan and cook the peppers and onions for 2 to 3 minutes, stirring frequently. Remove the pepper and onion from the pan and set aside.
  • Heat the remaining tablespoon of oil in the wok or skillet and toss the bite-size pieces of chicken in the cornstarch, shaking off the excess.
  • Add the chicken to the pan, being careful not to overcrowd the pan (I like to do this in two batches).
  • Brown the chicken on all sides, about 2 to 3 minutes per batch. Once all the chicken is cooked, add the vegetables back to the pan, then stir in the sauce and heat it through until it bubbles and thickens.
  • Garnish with sliced green onions and sesame seeds, if desired. Enjoy!

ORANGE MARMALADE CHICKEN STIR FRY

Orange Marmalade Chicken Stir Fry image

This is probably similar to everyone else's throw-together stir fry recipe, but we love it and my family encouraged me to post it.

Provided by Susan Feliciano

Categories     Chicken

Time 1h10m

Number Of Ingredients 13

12 oz chicken breast, sliced thin
1/2 c white wine
1/2 c soy sauce, divided
1 orange, grate zest and squeeze juice
1 -inch piece of ginger, grated
2 Tbsp vegetable oil
1/2 medium onion, cut in large dice
1 stick celery, sliced thin
1 1/2 c broccoli florets
2 c finely shredded cabbage
salt and lots of black pepper
1/2 c orange marmalade (i used a low-sugar variety)
2 c cooked rice

Steps:

  • 1. Combine sliced chicken with wine, 1/4 cup soy sauce, and the juice and zest of the orange. Marinate about 1 hour. Less time is OK, but don't leave it too long or chicken will break down.
  • 2. Heat oil very hot in wok or skillet. Drain chicken and discard marinade. Stir fry chicken and grated ginger about 3 minutes.
  • 3. Add in vegetables (except cabbage) and continue stir-frying about 3 more minutes. Stir in cabbage, remaining 1/4 cup soy sauce and orange marmalade. Bring to a boil. Taste and add salt and pepper as desired.
  • 4. Cover and steam about 2 minutes. Remove from heat and serve over rice. Vegetables should be crisp and broccoli bright green.

ORANGE MARMALADE CHICKEN

Orange Marmalade Chicken image

Orange marmalade is the key ingredient in a simple sauce with broth, lemon juice, flour and pepper added. Chicken breasts are lightly browned, then simmered in the sauce. Serve over hot cooked rice and sprinkle with fresh parsley, if desired. This came from Thinner Times. I have not tried this, just posting for easy finding.

SESAME ORANGE CHICKEN

Sesame Orange Chicken image

Provided by dicentra

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

4 small boneless skinless chicken breast halves (6 to 7 oz. each)
1 navel orange
1/2 cup orange marmalade
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon grapeseed oil or 1 tablespoon peanut oil
1/2 teaspoon sesame oil
1 teaspoon red chili sauce
1/2 teaspoon kosher salt
2 cups breadcrumbs
3 tablespoons butter, melted
1/2 cup sesame seeds

Steps:

  • Heat a small skillet on medium high heat. Add the sesame seeds. Toast sesame seeds until fragrant and lightly browned.
  • Do not turn your back on the seeds while cooking, they can easily and quickly burn. Stir often to keep them from burning.
  • You may hear them pop, and some of them may hop out of the pan while cooking. When lightly browned remove from heat and set aside.
  • Mix melted butter in with the bread crumbs. Heat a large skillet on a medium high, add the bread crumbs, stir often until the bread crumbs get toasty brown. Remove from heat, let cool.
  • Heat the oven to 450°F Line a roasting pan with foil. Put a flat baking rack on the lined roasting pan.
  • Use a meat pounder to lightly pound the chicken breasts between two pieces of wax paper to even out the thickness of the breasts.
  • Use a microplane grater to grate the zest from the orange. Place the zest in a large bowl.
  • Cut 4 thin round slices from the center of the orange to use with this recipe. Save the rest of the orange for snacking.
  • 6 Add to the large bowl with the zest, the marmalade, honey, soy sauce, sesame oil, peanut oil, chili sauce and salt. Mix well.
  • Add the chicken to the sauce, coating every piece. You can at this point make ahead by 24 hours and let the chicken marinate, or you can go ahead with the recipe.
  • In a large, shallow dish, mix together the toasted sesame seeds and bread crumbs. Working with the chicken one piece at a time, dredge the chicken in the coating, pressing down on the crumbs to make sure they adhere well.
  • Transfer to the backing rack on the lined roasting pan. Dip the orange slices in the leftover marmalade mix and set on the rack.
  • Cook at 450°F until the chicken has an internal temperature of 165°F, about 20 minutes. Serve immediately, topped with the orange slices.
