QUICK BEEF AND ZUCCHINI SKILLET (MEAL-PREP)
Beef and zucchini makes a quick evening meal or a great meal prep solution. Full of flavor and nutrition, it is ready is about 30 minutes.

Steps:
- Preheat oven to 400 F degrees. Line a baking sheet with parchment paper. Set aside. In a large bowl, add potatoes, olive oil, salt and black pepper. Mix everything very well to combine.
- Place the potatoes in a single layer on the prepared baking sheet. Bake for 30 minutes or until browned and tender. Turn potatoes after 20 minutes.
- While potatoes are in the oven, cook the beef and zucchini by placing steak bites, onion powder, Italian seasoning, salt and black pepper in a bowl. Mix everything together well.
- Add olive oil in a large skillet over medium-high heat. Once the pan is hot, place the steak bites in the skillet in a single layer. Cook for 3-4 minutes and don't forget to stir. Add butter and garlic to the skillet. Cook for about 1 minutes or until the butter is totally melted and the garlic is cooked.
- Add zucchini and cook for more 3 minutes or until zucchini is tender.
- Remove potatoes from the oven and add to the beef and zucchini skillet. Mix everything well and garnish with fresh thyme.
- Place an even amount of beef, zucchini and potatoes into 4 different medium glass containers. Cover with the lid and place in the fridge for up to 4 days. Heat in the microwave for about 1.5 or 2 minutes. Enjoy!

- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Drizzle olive oil on zucchini and season with salt and pepper. Place on the prepared baking sheet.

- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.

My version of a recipe from a book titled Quick & Easy Korean Cooking for Everyone, via RecipeSource.com. The recipe originally called for cucumbers instead of zucchini; somehow I bought the zucchinis instead (I know, I know...) and I loved the end result, so here it is! The directions are a little vague, but I am a beginner cook and managed just fine. Enjoy over rice, with Sriracha.

- Combine garlic, basil and pepper; divide mixture in half.
- Press half of seasoning mixture evenly into both slices of beef steaks; reserve.
- Heat oil and remaining seasoning mixture in large nonstick skillet over medium heat.

- 1. Preheat oven to 375
- 2. Trim ends of zukes and cut in half lengthwise. Carefully scoop out centers leaving 1/4" thick shells.
- 3. Chop pulp (about 1 cup) and reserve. Brown the beef and drain fat. Stir in reserved pulp, bread crumbs, parmesan cheese, oregano, salt and pepper, egg, and 1/2 c of marinara.
- 4. Place zucchini shells in a shallow baking pan. Spoon meat mixture into the shells. Pour remaining marinara over and around the zukes. Cover and bake until shells are tender; 30-35 mins.
- 5. Pull from oven and sprinkle with mozarella cheese. Bake uncovered until cheese melts.

- Sason the flour with salt & pepper & tip into a plastic bag, toss the beef around in the bag until all pieces are coated.
- Melt the butter in a pan and brown the beef over high heat.
- Transfer beef to an oven-proof casserole dish (approx 20cm x30cm).
- Add remaining ingredients to the frypan and stir briskly until it reaches a boil.
- Pour the sauce over the beef, cover dish & bake at 180.C for 1 1/4 hours.
- Meanwhile mix the cheeses together.
- Take the casserole out of the oven and layer the zucchini over the top in a decorative pattern, sprinkle cheese over the top and bake for a further 30-45 minutes.
