Zucchini and Sweet Corn Pie image

This savory tart is only made with vegetables and a quiche batter. No meat. All the flavors of sweet corn, and zucchini previously fried with olive oil Pan fry onions or shallots and zucchini. Prepare the quiche batte. Assemble and bake the quiche.

1 pie crust
2 zucchini
2 onions (or 2 large shallots)
120 gr sweet corn
2 tablespoons olive oil
4 eggs
20 cl cream
10 cl milk
60 gr grated cheese
salt, pepper, nutmeg

Steps:

  • Preheat your oven to 180 °C (350°F) and heat the olive oil in a pan.
  • Slice zucchini and onion or shallot, depending on what you've chosen. Fry zucchini and onions / shallots until they get a nice golden brown color.
  • Drain sweet corn.
  • Meanwhile, in a bowl, break the eggs and beat as you would for an omelette. Add cream and milk, combine. Then add salt, pepper, and nutmeg (or any spice of your choice). Finally add grated cheese and combine.
  • Arrange pie crust in the tin, cover with fried zucchini and sweet corn. Pour the quiche batter and bake in the oven at 180 °C (350°F) for 40 minutes.

This was my grandmother's recipe. It was a favorite of my dad's, now is a favorite of my husband. It tastes similar to pumpkin pie, but smoother and better. If you can get over the green color this will be your favorite too.

2 zucchini, chopped
¾ cup milk
⅔ cup white sugar
2 eggs, beaten
1 teaspoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
1 (9 inch) prepared pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place zucchini in a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain. Blend in a blender until smooth. Measure 2 cups blended zucchini; pour into a large bowl.
  • Whisk milk, sugar, eggs, cinnamon, allspice, ginger, and nutmeg together with blended zucchini until smooth. Pour into pie crust.
  • Bake in the preheated oven until center of pie is set and a knife inserted in the center comes out clean, 45 to 60 minutes.

1 ½ cups grated zucchini
¾ cup buttermilk baking mix
1 tomato, chopped
½ cup fresh corn kernels
½ cup diced onion
¾ cup shredded Cheddar cheese
2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter one 9 inch pie plate.
  • In a medium bowl mix zucchini, buttermilk baking mix, tomato, corn, onion, cheese and eggs together.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes. Do not cover the dish while it is cooking. Serve warm.

180 g feta cheese
40 g dry breadcrumbs
200 g phyllo pastry

Steps:

  • Grate the zucchini and preheat the oven to 180°C.
  • Combine defrosted spinach, sweet corn and ricotta. Add feta cheese in crumbs as well as grated zucchini and bread crumbs. Season to taste.
  • Line a pie dish with the filo pastry. Add the filling. Top with grated cheese.
  • Bake for 30-40 minutes.

  • Place rack in center of oven then preheat to 375 degrees. Roll pie crust out just large enough to fill the inside of a 9" deep-dish pie plate. Line pie dish with pie crust then beat eggs in a large bowl. Brush beaten egg over entire crust. Poke crust several times with a fork to allow steam to escape then bake 10 minutes. Remove crust from oven and reserve remaining egg for filling.
  • Place a large skillet over medium-high heat then add olive oil and onion. Cook onion for 2 minutes then add sliced zucchini. Cook zucchini and onion for 6–8 minutes or until zucchini becomes tender and browns slightly. Add garlic and sweet corn then cook for 1 additional minute.
  • Add cornmeal, milk, green onions, dried basil, salt and pepper to bowl with beaten eggs, stirring to combine. Add zucchini and corn mixture and 1 cup of cheese then mix until well combined and cheese has melted. Transfer filling into prepared pie crust then sprinkle with remaining grated cheese over the top.
  • Bake 30–35 minutes until filling is set and crust is golden brown. Remove from oven then allow pie to rest for 10 minutes before slicing and serving.
