1 ½ pounds zucchini, grated
1 teaspoon salt
¼ cup all-purpose flour
¼ cup grated Parmesan cheese
1 large egg, beaten
2 cloves garlic, minced
kosher salt and ground black pepper to taste
2 tablespoons olive oil

Steps:

  • Toss zucchini and salt together in a large colander and place in sink to drain for 10 minutes.
  • Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
  • Mix flour, Parmesan cheese, egg, garlic, kosher salt, and pepper together in a large bowl. Stir in zucchini.
  • Heat olive oil in a large skillet over medium-high heat.
  • Scoop batter by the tablespoon into the hot skillet and fry until golden brown, about 2 minutes per side.

This healthy Shrimp and Zucchini Fritters with Yogurt Sauce recipe is a delicious way to eat your veggies! The yogurt sauce is garlicky with lemon, and the zucchini and shrimp stand out in the simple fritters and are a match made in heaven.

3 medium zucchini (grated)
1/2 lb. shrimp (peeled and deveined and roughly chopped)
2 eggs
1 cup panko breadcrumbs ((plus more if needed))
zest of one lemon
2 tablespoons fresh parsley (minced)
kosher salt (to taste)
black pepper (to taste)
2 tablespoons extra-virgin olive oil (plus more if needed)
lemon wedges (for serving (optional))
3/4 cup Greek yogurt
juice of one lemon
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 clove garlic (minced)

Steps:

  • Spread grated zucchini out on a clean kitchen towel (preferably NOT a paper towel, as they are too fragile) with a pinch of salt sprinkled on top. Allow to sit for 5 minutes for liquid to be released.
  • Using the kitchen towel, squeeze out as much liquid from the grated zucchini as possible.
  • While you are waiting for the zucchini to sit, mix together all ingredients for yogurt sauce. Set aside.
  • Combine squeezed out zucchini, chopped shrimp (1/2 lb.), 2 eggs, panko breadcrumbs (1 cup), kosher salt and black pepper to taste, lemon zest (from 1 lemon), and minced fresh parsley (2 tablespoons) in a large bowl. Mixture should hold together well- if it seems too wet, add some more breadcrumbs.
  • Heat the olive oil (2 tablespoons) in a cast iron or other heavy skillet over medium-high heat. Using a large scoop or a 1/2 cup measure, scoop mixture into hot oil. Flatten tops slightly with a spatula.
  • Cook for 3 minutes, flip, and cook for another 3 minutes, or until golden brown on both sides. Remove and place on a paper towel lined plate.
  • Continue until all of zucchini mixture is used up, adding more oil if necessary.
  • Serve fritters with the yogurt sauce and lemon wedges, if desired. Great on their own or in a pita pocket sandwich.

1 3/4 cups coarsely grated zucchini (about 1 medium)

12 cooked large shrimp, peeled, deveined
Additional fresh lemon juice
Grated lemon peel

Steps:

  • For spread:
  • Blend cream cheese, grape leaves, and lemon juice in mini processor until grape leaves are minced and mixture is blended. Season spread to taste with salt and pepper. Can be made 1 day ahead. Transfer spread to small bowl. Cover and refrigerate. Bring spread to room temperature before using.
  • For fritters:
  • Whisk first 5 ingredients in medium bowl to blend. Mix in zucchini, parsley, and chives. Let stand until batter becomes moist, about 15 minutes. Using wet hands, shape by rounded tablespoonfuls into twelve 2-inch-diameter patties; place on foil.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add about half of patties. Sauté until cooked through, browned, and crisp, about 3 minutes per side. Transfer to platter. Repeat with remaining patties, adding more oil, if needed.
  • Spread heaping teaspoon grape-leaf spread on each fritter. Top each with 1 shrimp. Sprinkle fritters with lemon juice, then lemon peel, and serve.

1/2-3/4 cup panko crumbs, ((you can also use original bread crumbs, or pork rind panko crumbs for a low carb option))
2 cloves garlic, (minced)
1/4 cup grated parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
salt and fresh ground pepper, (to taste)
2 large eggs
vegetable oil, (for frying)
1 cup sour cream
1/2 tablespoon fresh dill, (chopped)
1/2 tablespoon fresh chives, (chopped)

Steps:

  • Shred zucchini using the large holes on a cheese grater.
  • Transfer shredded zucchini to a large kitchen towel or thick paper towels; close the towel around the zucchini and squeeze out as much liquid as possible.
  • Place zucchini in a large mixing bowl.
  • Add breadcrumbs, garlic, cheese, basil, oregano, salt, pepper and eggs; stir with a fork until thoroughly combined.
  • If the mixture looks a little wet and won't hold together, add a bit more breadcrumbs.
  • Heat vegetable oil in a large and deep skillet set over medium heat. Oil should cover the bottom of the skillet and should be about ¼ inch deep.
  • Once oil is hot, drop a glob of zucchini batter into the skillet; flatten it on top with the smooth side of a spoon.
  • Cook for 2 to 3 minutes or until golden brown.
  • Flip the cakes over and continue to cook for 2 to 3 more minutes, or until browned.
  • Remove cakes from skillet and transfer to a paper towel lined plate.
  • In the meantime, combine sour cream and herbs in a small bowl; mix until incorporated. Taste and adjust.
  • Serve warm zucchini cakes with the sour cream dipping sauce.

1/2 teaspoon spice essence or 1/2 teaspoon creole seasoning, plus more for dusting fritters

1/2 cup chopped yellow onion

  • Season the shrimp lightly with the Essence and set aside.

  • Add the shrimp and pinch of salt and cook, stirring, until the shrimp turn pink, 2-3 minutes.

  • Start by squeezing as much water as you can out of the zucchinis. The easiest way to do this is to place the grated zucchinis in the middle of a clean dish towel, fold the top and bottom flaps over the zucchini then twist both ends to form a little bundle, then twist and squeeze the bejesus out of that bundle until no more liquid comes out.
  • Add the squeezed zucchini to a mixing bowl, along with the rest of the ingredients and mix delicately until all the ingredients are evenly combined.
  • Heat a splash of coconut oil or avocado oil in a frying pan set over medium heat and, when oil is nice and hot, add a generous 1/4 cup of mixture for each fritter. Slightly flatten and help shape them delicately with a fork, if necessary.
  • Cook 3 or 4 fritters at a time for 2-3 minutes on each side, until they form a nice golden brown crust. Add more oil as necessary.

  • After the zucchini is shredded (use the large holes of a box grater), dry it as much as possible with paper towels. Place shredded zucchini in a colander, salt with about 1/4 tsp salt and let stand 15-30 minutes. The salt will draw out more of the water. After 15-30 minutes hold colander over sink and press firmly with a rubber spatula to force out water. Alternatively, wrap zucchini in paper towels or a dish towel and squeeze until dry.
  • In a large bowl, combine the dried zucchini, scallions, herbs, panko, cheese, flour, baking powder and salt. Stir together with a spoon. In a small bowl, whisk the cold egg and egg yolk together briefly and then fold into the zucchini mix.
  • In a saute pan or skillet, heat the oil over med-high heat. When oil just starts to smoke, spoon in the zucchini batter to form small flat rounds (about 3“ cakes). Don’t overcrowd the pan - you will need to cook in 2 batches. Cook 1-2 minutes, flip them over with a spatula and cook other side for 1 minute. Keep first batch warm in the oven while making second batch.
  • Serve warm with a dollop of sour cream or a yogurt-caper dipping sauce (see recipe in the notes)
