2 large zucchini
Kosher salt
1 cup ricotta
1 tablespoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 teaspoon finely grated lemon zest
1 1/4 cups shredded mozzarella
1 large egg
1 cup marinara sauce

Steps:

  • Preheat the oven to 400 degrees F.
  • Trim the ends off of the zucchini and slice lengthwise on a mandoline to about 1/8-inch thick. Reserve the 16 largest interior slices for this dish and save the rest for another use.
  • Fill a medium ovenproof skillet with lightly salted water and bring to a simmer over medium-high heat. Add half of the zucchini slices and cook until just pliable, about 45 seconds. Transfer to a paper towel-lined platter to dry. Repeat with the remaining zucchini slices.
  • Stir the ricotta, basil, oregano, lemon zest and 3/4 cup mozzarella together in a bowl with 1/4 teaspoon salt. Beat the egg well in another bowl, then add 1 tablespoon egg to the ricotta mixture and stir to incorporate. (Discard the remaining egg.)
  • Pour the water out from the skillet and add the marinara. Bring to a simmer, then remove from the heat.
  • While the sauce warms, lay the dry zucchini slices out on a work surface. Spoon a scant tablespoon of the ricotta filling on one end of a zucchini slice, then gently roll the zucchini up. Arrange in the skillet seam-side down. Repeat with the remaining zucchini slices and ricotta filling.
  • Sprinkle with the remaining 1/2 cup mozzarella and bake until the center is bubbling and the cheese is golden in spots, 20 to 30 minutes. Let stand 5 minutes before serving.

2 medium firm zucchini
1 medium firm eggplant
All natural olive oil cooking spray
Sea salt or kosher salt and freshly ground black pepper
2 cups ricotta cheese
1 1/2 cups grated Parmigiano-Reggiano
1/2 cup fresh mint leaves, loosely packed, finely chopped
1/2 cup fresh flat-leaf parsley tops, chopped
2 egg yolks, lightly beaten
2 cloves garlic, pasted or grated
1 fresh chile, such as Fresno, seeded and finely chopped
A few grates whole nutmeg
A handful fresh basil leaves, torn or shredded
3 cups passata or tomato sauce
4 tablespoons butter
1 cup panko

Steps:

  • Preheat the oven to 450 degrees F.
  • Slice the zucchini and eggplant into thin planks lengthwise. Spray the eggplant and zucchini evenly on both sides with the cooking spray, and season with salt and pepper. Roast until tender and brown, about 20 minutes. Cool to handle.
  • Lower the oven temperature to 375 degrees F.
  • In a bowl, combine the ricotta, 1 cup of the Parm, all but a few tablespoons of the mint and parsley, egg yolks, garlic, chiles, a few grates of nutmeg and some salt and pepper. Spoon the stuffing onto each plank of eggplant or zucchini and roll up. Arrange the rolls in a baking dish and top with a few pieces of torn basil, then cover evenly with passata or tomato sauce.
  • Melt the butter in a small skillet, remove from the heat and toss with the panko, remaining Parm and remaining parsley and mint. For a make-ahead meal, store the breadcrumb mix in an airtight container and the roll ups in the fridge or freezer. Scatter the topping over the top of the dish. Bake from room temperature at 375 degrees F, until golden and bubbly.

Steps:

  • Preheat oven to 425°. In a small bowl, combine ricotta, 1/2 teaspoon Italian seasoning, salt and pepper. Slice zucchini lengthwise into twelve 1/8-in.-thick slices. Top each slice with 1 rounded tablespoon cheese mixture. Roll up and secure with toothpicks; place seam side down in an ungreased 8-in. baking dish., Combine tomatoes, tomato sauce, tomato paste and remaining 1 teaspoon Italian seasoning; pour over rolls. Cover and bake until bubbly, 20-25 minutes. Remove toothpicks before serving. If desired, sprinkle with Parmesan cheese.

1 1/2 cups (180g) frozen peas (easy peasy!)
2 eggs
1 1/2 cups (360g) fresh firm ricotta
2 cups (50g) baby spinach leaves, roughly chopped
1/4 cup finely chopped mint
2 teaspoons finely grated lemon rind (a tasty trick)
Sea salt and cracked black pepper, to taste
3-4 zucchinis (courgettes), thinly sliced lengthways using a mandolin (you'll need about 24 long slices)
2 cups (500ml) tomato puree (passata)
1/2 cup (50g) grated mozzarella

Steps:

  • Preheat oven to 180°C (350°F).
  • Place the peas in a colander and rinse them under hot running water to thaw. Drain well and place in a big bowl. Using a fork or potato masher, roughly mash the peas. Crack the eggs on top and add the ricotta, spinach, mint, lemon rind, salt and pepper. Mix well with a spatula.
  • Place 1 heaped tablespoon of the pea mixture at one end of each slice of zucchini. Roll up the slices to enclose the filling.
  • Pour the puree into a 22cm x 30cm (2-litre-capacity) baking dish. Nestle the zucchini rolls into the dish so they fit snugly. Sprinkle with the mozzarella and bake for 30 minutes or until golden and cooked through. Wear your oven gloves to take the dish from the oven and allow to cool a little, before spooning onto serving plates.

3 large zucchini, trimmed, cut into 1/4-inch-thick lengthwise slices (about 12 slices)
1/2 lb. 93%-fat-free ground turkey
1 egg, beaten
1 cup BREAKSTONE'S Ricotta Cheese
3 Tbsp. KRAFT Grated Parmesan Cheese
1 cup KRAFT Shredded Mozzarella Cheese, divided
1 cup CLASSICO Spicy Red Pepper Pasta Sauce, divided

Steps:

  • Heat oven to 400°F.
  • Place zucchini slices in single layer on baking sheet sprayed with cooking spray. Bake 10 to 12 min. or until tender. Meanwhile, cook turkey in medium skillet on medium heat until done, stirring occasionally. Cool zucchini and turkey 5 min.
  • Mix egg, ricotta, Parmesan and 1/2 cup mozzarella in medium bowl until blended. Add turkey; mix lightly.
  • Spread 1/2 cup pasta sauce onto bottom of 8-inch square baking dish sprayed with cooking spray.
  • Spread turkey mixture onto zucchini slices, adding about 2 Tbsp. turkey mixture to each zucchini slice; roll up. Place over sauce in baking dish; cover with remaining pasta sauce. Sprinkle with remaining mozzarella.
  • Bake 25 min. or until zucchini roll-ups are heated through and mozzarella is melted.
