CREAMY ZUCCHINI SOUP WITH BACON AND ZUCCHINI NOODLES

Creamy Zucchini Soup with Bacon and Zucchini Noodles image

Provided by Ali Maffucci

Time 35m

Number Of Ingredients 8

2 strips bacon (or omit and sub with 1 tablespoon extra virgin olive oil instead)
1 small yellow onion (sliced)
2 large garlic cloves (chopped)
4 medium zucchinis (chop 3 of them and leave the remaining one whole)
2 cups chicken broth (low sodium (or use vegetable broth if making vegan))
¼ teaspoon red pepper flakes
salt and pepper
½ cup packed fresh basil

Steps:

  • Place the bacon in a large pot and put the heat on medium. Let cook until crispy and transfer to a paper towel lined plate. Immediately add the onion and cook until fragrant and onions are translucent. Stir in the garlic and let cook for 2 minutes. Add the zucchini and cook for 2-3 minutes or until they start to soften. Add the broth, red pepper flakes, salt, and pepper and stir. Bring the mixture to a boil over high heat and then once boiling, reduce to low heat and let simmer, covered for about 15 minutes or until when you fork a zucchini cube, it mushes easily.
  • While zucchini cooks, spiralize the zucchini on Blade D and trim the noodles with clean kitchen shears. Set aside.
  • Pour the cooked soup mixture into a blender and add the basil and blend until smooth. Taste and adjust with more salt, if needed.
  • Divide the soup into bowls, top with zucchini noodles and crumble over the bacon. Season with extra pepper and serve.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 13

1 pound zucchini (about 3 medium)
1/2 cup cherry tomatoes, halved
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 slices bacon, chopped
2 teaspoons unsalted butter
2 scallions, thinly sliced (white and green parts separated)
1 clove garlic, minced
2 teaspoons all-purpose flour
2/3 cup milk
1/2 teaspoon Dijon mustard
Pinch cayenne pepper
1/3 cup shredded Cheddar cheese

Steps:

  • Cut the zucchini into long noodles using a spiralizer (or use 1 pound store-bought zucchini noodles). Set aside.
  • Put a rimmed baking sheet in the oven and preheat to 425 degrees F. Toss the tomatoes with 1 tablespoon olive oil in a small bowl and season with salt and black pepper. Spread on the hot baking sheet and bake until the tomatoes are slightly softened and just browned around the edges, 7 to 10 minutes.
  • Meanwhile, cook the bacon in a medium nonstick skillet over medium heat until browned and crisp, about 7 minutes. Remove to a paper towel¿lined plate and wipe out the skillet. Melt the butter in the skillet and add the scallion whites and garlic; cook until softened, about 1 minute. Add the flour and stir to combine, about 30 seconds. Whisk in the milk, mustard, cayenne and 1/2 teaspoon salt. Cook, whisking, until slightly thickened, about 2 minutes. Remove from the heat and whisk in the cheese until smooth.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the zucchini noodles and season with salt and black pepper. Cook, stirring, until the zucchini is just softened, 2 to 3 minutes. Using tongs, transfer the zucchini to the cheese sauce, leaving any extra liquid in the skillet. Cook over medium heat, gently tossing until coated; season with salt and black pepper. Top with the roasted tomatoes, bacon and scallion greens.

ZUCCHINI NOODLES WITH BASIL PESTO AND BACON

Zucchini Noodles with Basil Pesto and Bacon image

There's no pasta in this dish, just fresh zucchini noodles tossed in a delicious bacon and pesto sauce.

Provided by Monica P.

Categories     Fruits and Vegetables     Vegetables     Squash

Time 30m

Yield 2

Number Of Ingredients 8

8 slices turkey bacon
½ cup basil pesto (such as Classico® Traditional)
3 large zucchini, ends trimmed
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
2 tablespoons freshly grated Parmigiano-Reggiano cheese
1 cup fresh arugula
1 pinch sea salt and freshly ground black pepper to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Lay bacon slices on a large baking tray.
  • Broil in the preheated oven until crispy, 9 to 12 minutes. Transfer to a large plate lined with absorbent kitchen paper and allow to cool and harden.
  • Crumble the cooled bacon into smaller pieces and combine with pesto sauce.
  • Use a spiralizer or julienne peeler to cut zucchini into noodles, snipping midway to prevent them from getting too long.
  • Heat olive oil in a saute pan over medium heat. Add zucchini and garlic and cook until tender, 3 to 4 minutes. Add pesto-bacon mixture and heat for 2 minutes longer. Toss well so the noodles are evenly coated. Taste and season with salt if needed.
  • Top with freshly grated Parmiggiano-Reggiano cheese so it can melt while the dish is still warm. Season with freshly ground black pepper. Top with arugula, but do not mix it in. Serve immediately.

ZUCCHINI AND BACON BAKE

Zucchini and Bacon Bake image

This is from my neighbour and good friend, Ronnie, who is mother to five great kids. They all love this concoction and so do we. It serves 6-7 unless it is put in front of our former French exchange student, Emma. In that case, it serves one.

Provided by Leggy Peggy

Categories     Vegetable

Time 1h

Yield 6 serving(s)

Number Of Ingredients 8

12 ounces zucchini, shredded
1 large onion, chopped finely
6 -8 ounces lean bacon, in 1/2-inch dice
1 cup cheddar cheese, grated
1 cup self-raising flour
1/2 cup vegetable oil
5 eggs, slightly beaten with black pepper (see next item)
1/4 teaspoon black pepper

Steps:

  • Before you start, you need to know that, you can speed up the preparation time if you use a food processor to grate the cheese and zucchini, and chop the onion.
  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients -- in the order listed. Mix well after each addition.
  • Put everything in an 11" x 7" pan. A 9" x 13" pan works, too.
  • Bake for 40-45 minutes, or until golden brown.
  • Check the bottom. It sometimes browns faster.
