½ cup diced celery
½ cup diced onion
1 (14.5 ounce) can peeled and diced tomatoes
1 (15 ounce) can tomato sauce
¼ teaspoon garlic powder

1 teaspoon dried oregano
1 pound dry ziti pasta
2 (4.5 ounce) cans sliced mushrooms, drained
8 ounces shredded mozzarella cheese
¼ cup grated Parmesan cheese

Steps:

  • In a skillet over medium heat, cook sausage with celery and onion until sausage is evenly browned, about 5 to 10 minutes. Drain excess grease, and set aside.
  • In another skillet over medium-low heat, combine tomatoes, tomato sauce, garlic powder, salt, and oregano. Simmer while preparing pasta.
  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 350 degrees F (175 degrees C). In a 3 quart baking dish, layer ziti, mushrooms, sausage, mozzarella cheese, and sauce. Repeat layers, and top with grated Parmesan.
  • Bake for 45 minutes in the preheated oven, or until browned and bubbly.

1 (16 ounce) package dry ziti pasta
1 pound mild Italian sausage
1 (15 ounce) container ricotta cheese
1 egg
1 large yellow onion, minced
2 teaspoons minced garlic
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ (26 ounce) jars spaghetti sauce, divided
1 (8 ounce) package shredded Italian cheese blend
1 teaspoon dried basil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ziti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • While pasta is cooking, heat a large skillet over medium heat. Add the sausage, and cook and stir until brown, about 10 minutes. Drain sausage and set aside.
  • Stir together the ricotta, egg, onion, garlic, and oregano in a large bowl until well combined. Stir in the drained pasta, the drained sausage, salt, pepper, and 1/2 jar of the spaghetti sauce; mix well.
  • In the prepared baking dish, cover the bottom with 1/3 jar of spaghetti sauce. Layer 1/2 of the pasta mixture, 1/3 jar of spaghetti sauce, and 1/2 of the shredded cheese. Then layer the remaining 1/2 of the pasta, 1/3 of the sauce, and 1/2 of the cheese. Sprinkle with basil. Cover the dish tightly with aluminum foil.
  • Bake in the preheated oven until heated through, about 20 minutes. Uncover; return to the oven and bake until cheese is melted, 5 to 10 more minutes.

1 lb ziti noodles
1.5 lbs ground spicy or sweet Italian sausage (or removed from casings)
4 cloves garlic, minced
1 (28-oz) can crushed tomatoes
1 teaspoon salt
1½ teaspoons sugar
¼ teaspoon crushed red pepper flakes
1 cup heavy cream
⅓ cup plus 3 tablespoons grated pecorino Romano (or Parmigiano Reggiano) cheese, divided
⅓ cup chopped fresh basil, plus more for serving
8 oz whole milk mozzarella cheese, shredded (about 2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Cook the ziti according to the package directions for very al dente, about 7 minutes. (It will continue to cook in the oven so you want to undercook it just a bit.) Drain and add the pasta back to the pot. Set aside.
  • Preheat the oven to 425°F and set the oven rack in the middle position.
  • Heat a large sauté pan (preferably nonstick) over medium-high heat. Crumble the sausage into the pan and cook, breaking apart with a wooden spoon, until lightly browned and just cooked through, 5 to 6 minutes. Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tablespoon of the fat from the pan and set over low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the garlic and cook, stirring constantly with a wooden spoon, until soft but not browned, about 1 minute. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer, uncovered, for 10 minutes.
  • Add the cream, ⅓ cup of the pecorino Romano, cooked sausage, and basil to the pan; stir until evenly combined. Carefully pour the contents of the sauté pan into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 9 x 13-inch baking dish. Sprinkle with half of the shredded mozzarella and half the remaining pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and pecorino Romano. Transfer to the oven and bake, uncovered, until the cheese has melted and browned, 15 to 20 minutes. Sprinkle with more basil and serve.
  • Make-Ahead/Freezer-Friendly Instructions: The dish can be assembled, covered, and refrigerated for up to 2 days in advance, or frozen for up to 3 months. (If frozen, defrost in the refrigerator overnight.) Whether refrigerated or frozen and defrosted, bake, covered tightly with aluminum foil, in a 425°F oven for 25 minutes. 1 lb ziti ((rigatoni or penne can also be used))
1 (24-26 ounce) jar marinara sauce ((I like Rao's brand))
16 ounces cottage cheese ((1% fat))
1 1/2 cups shredded Mozzarella cheese
1 1/4 cup grated Parmesan cheese (divided)
2 large eggs
1/4 cup chopped basil ((more for the top))
1 cup heavy cream
1 teaspoon cornstarch
1 teaspoon garlic powder
1/2 teaspoon Italian seasonings

Steps:

  • Preheat oven to 350 degrees. The next two steps can be done at the same time (cooking the pasta in one pot and the sausage in another).
  • Bring a large pot of salted water to boiling. Add about 1 tablespoon of salt and the pasta. Cook pasta about 5 minutes or to al dente (it will continue to cook in the oven). Drain in a colander.
  • In a large skillet, brown sausage. Drain and cool.
  • While pasta and sausage are cooking, in a large bowl, add 1 cup of the marinara sauce, the cottage cheese, 3/4 cup of the mozzarella cheese, 1 cup Parmesan cheese (save 1/4 cup for the top), eggs, and basil. Add the sausage when it is done cooking.

2 tablespoons olive oil
1 large onion, cut into small dice
6 garlic cloves, minced
1 1/2 lbs hot Italian sausage, removed from its casing and crumbled

1 (35 ounce) can plum tomatoes, chopped, with their juice
4 medium tomatoes, diced
1/4 cup chopped fresh marjoram (from about 6 large sprigs) or 1/4 cup oregano (from about 6 large sprigs)

1 cup freshly grated mild pecorino cheese
1 pinch nutmeg, preferably freshly grated

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Lightly oil a large, shallow baking dish.
  • Bring a large pot of salted water to a boil.
  • In a large skillet, heat about 2 tablespoons olive oil over medium heat.
  • Add the onion and saute until soft, about 5 minutes.
  • Add the garlic and crumbled sausage; saute until the sausage begins to brown.
  • Season with salt and pepper.
  • If the sausage renders a lot of fat, pour most of it off leaving a little to add flavor to the sauce.
  • Add the red wine; boil until it is almost gone.
  • Add the tomatoes with all of their juices and cook, uncovered, at a lively simmer for about 10 minutes. The sauce will thicken slightly.
  • Add the marjoram or oregano and taste for seasoning.
  • In a large mixing bowl, mix together ricotta, about half the grated pecorino, the nutmeg, and the parsley. Season with salt and pepper.
  • Meanwhile, cook the pasta until al dente.
  • Drain well and toss it with the ricotta mixture until well coated.
  • Add the sausage and sauce and mix again.
  • Add the mozzarella and toss gently.
  • Pour everything into the baking dish and sprinkle the remaining Pecorino on top.
  • Bake uncovered until lightly browned and bubbling, about 20 minutes.
  • Serve right away.

6 ounces mozzarella cheese, cubed

Steps:

  • Preheat oven to 375 degrees. Heat heavy large saucepan over medium heat. Add sausage, onion, and garlic, and saute until sausage cooked through, about 10 minutes, breaking up meat with back of spoon. Add tomatoes with juice to pan. Baked Ziti With Ground Beef and Italian Sausage image

This is an easy baked ziti casserole with ground beef, Italian sausage, and three kinds of cheese. It's a hearty, comforting dish.

2 tablespoons extra-virgin olive oil
1 pound lean ground beef (at least 85% lean)
1/2 pound bulk sweet Italian sausage
1 medium onion (chopped)
2 cloves garlic (minced)
1 (28-ounce) can crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried leaf basil
1/2 teaspoon dried leaf oregano
1/4 to 1/2 teaspoon crushed red pepper
Kosher salt (to taste)
Freshly ground black pepper (to taste)
1 cup ricotta cheese (whole milk)
3/4 cup fresh Parmesan cheese (grated, divided)
1 large egg
3 cups mozzarella cheese (shredded, divided)
8 ounces ziti pasta
1 to 2 tablespoons fresh parsley (chopped)
Optional: garlic bread, tossed green salad, or Caesar salad (for serving)

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Lightly grease or spray a 2 1/2- to a 3-quart baking dish with nonstick cooking spray.
  • Heat the olive oil in a large skillet over medium heat. Add the ground beef, sausage, and onion. Cook, stirring until the meat is no longer pink and the onion is translucent.
  • Add the garlic to the meat mixture and cook, while stirring, for 1 minute longer.
  • Add the crushed tomatoes, tomato paste, basil, oregano, and crushed red pepper. Cook, stirring occasionally, for about 10 to 12 minutes. Taste and add salt and pepper, as needed.
  • In a large bowl, combine the ricotta cheese, Parmesan cheese, egg, and mozzarella cheese. Stir until well blended.
  • While the sauce is simmering, cook the ziti in boiling salted water following the directions on the package. Drain well.
  • Add the hot drained pasta to the bowl with the ricotta cheese mixture. Toss lightly to blend.
  • Add 2 cups of the meat sauce to the ziti mixture.
  • Transfer half of the pasta mixture into the prepared baking dish.
  • Spread about half of the remaining meat sauce over the pasta, and then top with the Parmesan cheese and 1 cup of the remaining mozzarella.
  • Top with the remaining pasta mixture.
  • Finish with the remaining meat sauce, remaining mozzarella cheese, and sprinkle with the chopped parsley.
  • Bake for 25 minutes or until hot and bubbly around the edges.
  • Serve and enjoy.

3/4 pound hot Italian sausages, casings removed
1 medium onion, chopped
3 large garlic cloves, chopped
1 28-ounce can diced peeled tomatoes
1/4 cup purchased pesto sauce
10 ounces ziti or penne pasta (about 3 cups), freshly cooked
8 cups ready-to-use spinach leaves (about 2/3 of 10-ounce package)
6 ounces mozzarella cheese, cubed
1 cup grated Parmesan cheese (about 3 ounces)

Steps:

  • Heat heavy large saucepan over medium-high heat. Add sausage, onion and garlic and sauté until sausage is cooked through, breaking up meat with back of spoon, about 10 minutes. Add tomatoes with juices to pan. Simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Stir in pesto. Season sauce with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before continuing.)
  • Preheat oven to 375° F. Lightly oil 13 x 9-inch glass baking dish. Combine pasta, spinach, mozzarella and 1/3 cup Parmesan cheese in large bowl. Stir in hot tomato sauce. Transfer mixture to prepared baking dish. Sprinkle remaining 2/3 cup Parmesan cheese over. Bake until sauce bubbles and cheeses melt, about 30 minutes.

1/2 cup shredded Parmesan cheese
1/4 teaspoon pepper
1 package (10 ounces) frozen garlic bread, ends removed and cut into 9 slices
3 cups shredded mozzarella cheese
1/4 cup olive oil
2 medium Roma tomatoes, cut into slices
9 fresh basil leaves

Steps:

  • Cook sausage links according to package directions; drain, cut into ¼-inch slices.
  • In a large bowl, combine sausage slices, pasta, pasta sauce, water, basil, garlic, Parmesan cheese, pepper and mix well.
  • Spoon mixture into a greased 9-in. x 13-in. x 2-in. baking dish.
  • Arrange garlic bread slices on top of meat mixture.
  • Sprinkle evenly with mozzarella cheese.
  • In a small bowl, dip tomato slices into olive oil.
  • Place one slice of tomato on each piece of bread.
  • Bake uncovered, at 400°F for 25-30 minutes or until heated through. Remove from oven and let rest for 5 minutes before serving.
  • Garnish with basil leaves. Serve.
