FIVE-CHEESE ZITI AL FORNO
After having the five-cheese ziti at Olive Garden, I tried to make my own version of it-and I think I got pretty close. I always double this when I'm making it and freeze the second one for another meal. -Keri Whitney, Castro Valley, California

- Preheat oven to 350°. Cook the pasta according to the package directions for al dente; drain., Meanwhile, in a large saucepan, combine the marinara sauce, Alfredo sauce, 1 cup mozzarella and the ricotta, provolone and Romano. Cook over medium heat until sauce begins to simmer and cheeses are melted. Stir in cooked pasta; pour mixture into a greased 13x9-in. baking dish. Top with remaining mozzarella cheese., In a small bowl, stir together Parmesan, bread crumbs, garlic and olive oil; sprinkle over the pasta., Bake, uncovered, until mixture is bubbly and topping is golden brown, 30-40 minutes. Let stand 10 minutes before serving. Garnish with fresh parsley or basil if desired.Freeze option: Cool the unbaked casserole; cover and freeze. To use, partially thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake 50 minutes. Uncover; bake until heated through and a thermometer inserted in center reads 165°, 15-20 minutes longer.

It's from the sopranos cookbook but I use my own Recipe #73937 and it is the best food in the world there aren't words to describe it!

Steps:
- Put all the ziti in a large bowl.
- Toss ziti with 3 cups of the gravy and half of the grated cheese.
- Spoon half of the ziti into a casserole dish.
- Spread the ricotta over the top of the ziti.
- Sprinkle with the mozzarella and rest of grated cheese.
- Pour on 1 cup of sauce.
- Top with remaining ziti and rest of sauce (it will be almost overflowing) sprinkle with more grated cheese.
- Bake covered with foil for 45 minutes and then uncovered for 15 minutes.
- Let stand 15 minutes.
- Tell me immediately how it was!

BAKED ZITI

- Heat the olive oil in a pot over medium heat. Add the garlic and onions and saute until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all of the fat, leaving a bit behind for flavor and moisture. Add the tomato sauce, tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25 to 30 minutes. Remove 3 to 4 cups of the cooked sauce to a bowl to cool down.
- Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente.
- Preheat the oven to 375 degrees F.
- In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley, eggs and some salt and pepper. Stir together just a couple of times (do not mix completely).
- Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine.
- Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella.
- Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.

- Preheat the oven: Preheat the oven to 350°F.
- Cook the pasta: Heat a large pot of salted water (for every 2 quarts of water, one tablespoon of salt) to a strong boil. Add the pasta and cook at a rolling boil, uncovered, until the pasta is al dente-edible but still a little firm to the bite. Drain the pasta through a colander. Toss with a little olive oil so the pasta does not stick together while you make the sauce.
- Brown the meat: While the water is heating in the previous step, start on the sauce. Heat a tablespoon of olive oil in a large sauté pan on medium-high heat. When the oil is shimmering hot, add the bulk sausage or ground meat. Break up any large chunks of sausage as it cooks. Brown well. Don't stir that often or it will be more difficult for the meat to brown. If you are using ground beef or pork instead of sausage, sprinkle with a little salt.

BAKED ZITI (ZITI AL FORNO)
This classic Italian casserole with ziti macaroni, tiny meatballs and homemade sauce is easy to make and delicious. The sauce takes 1 1/2 hours to reduce so to save time you can make the meatballs and sauce ahead of time. I like to top it with fresh strips of basil !

- Sauce.
- Melt butter and oil in lg. pan over medium heat.
- Add onion and mushrooms and cook until soft.
- Add garlic, tomato puree, tomatoes (break up with a spoon) and their liquid, wine, salt, bay leaf, oregano, pepper and parsley: bring to a boil.
- Cover, reduce heat and simmer until sauce is reduced to about 5 cups (about 1 1/2 hours). Remove bay leaf.
- Meatballs.
- Melt 1/2 tbsp each butter and oil in large frying pan over medium heat.
- Add onion and cook until lightly browned: transfter to mixing bowl and cool.
- Beat in egg, bread crumbs, salt, pepper, nutmeg and 1/2 cup sauce.
- Add ground beef and mix lightly until blended.
- Shape into 1 inch meatballs and in same pan onion were cooked in heat remaining butter and oil over medium heat.
- Brown meatballs about half at a time.
- Remove when brown and add to sauce.
- Pasta.
- Cook ziti in lg. pot in salted water to al dente per directions of package.
- Drain well and combine with meatball mixture.
- Spread in a shallow 4 quart casserole.
- Cover evenly with mozzarella and parmesan cheese.
- Bake uncovered in 350 oven for 30-35 minutes and cheese is golden brown.

- PREPARE THE ZITI SAUCE:.
- Combining all ingredients for the Ziti Sauce in a large bowl; cover and refrigerate until ready to use.
- PREPARE THE ZITI TOPPING:.
- In a medium-size bowl, whisk together the first four ingredients for the Ziti Topping.
- Add the garlic, oil, and parsley and mix until thoroughly blended. Cover and refrigerate until ready to use.
- WHEN READY TO PREPARE THE WHOLE DISH:.
- Preheat oven to 375 degrees F. Spray a 13-by-9-inch baking dish or large casserole with non-stick spray.
- Prepare the pasta according to package directions.
- Pour 1/2 cup of prepared ziti sauce into the prepared dish, and spread it evenly over the bottom using a spoon.
- When pasta has finished cooking, drain the water and pour the hot pasta into the bowl of remaining sauce. Mix thoroughly; pour into the baking dish.
- Spread 1 cup of shredded mozzarella over the pasta and sauce mixture.
- Top the mozzarella with the prepared Ziti Topping, spreading evenly.

ZITI AL FORNO - CARMELLA'S BAKED ZITI

- Boil ziti with salt until al dente, in 4 qts water. Remove the meatballs from the spaghetti sauce. Drain the ziti and put it in a large bowl. Toss it with about 3 cups of the sauce and half of the grated cheese. Stir in the meatballs. Preheat the oven to 350. Spoon 1/2 the ziti into a shallow 3 1/2 quart baking dish. Spread the ricotta on top and sprinkle with the mozzarella and 1/2 of the remaining grated cheese. Pour on 1 cup of the sauce. Top with the remaining ziti and another cup of sauce. Sprinkle with the remaining grated cheese. Cover the dish with foil. (can be refrigerated for several hours, or overnight, at this point. Remove from the refrigeator about 30 minutes before baking). Bake the ziti for 45 minutes. Uncover and bake for 15-30 minutes longer, or until the center is hot and the sauce is bubbling around the edges. Cover and let stand for 15 min before serving.

- In medium size sauce pan or a Dutch oven heat the oil on medium heat. Add the onion and cook for 2 minutes. Add the celery, carrot, and garlic and cook for 5 minutes more. Next, add the beef and sauté, stirring frequently.
