SWEET AND SPICY CHICKEN DRUMETTES

- In a medium bowl, whisk together the pineapple juice, soy sauce, Marsala wine, brown sugar, sesame oil, garlic, chili powder, and red pepper flakes until the sugar is dissolved. Put the chicken drumettes in a 1-gallon size, resealable plastic bag. Add the pineapple liquid to the chicken and seal removing as much air as possible from the bag. Marinate the chicken for 3 hours in the refrigerator.
- Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray it liberally with vegetable cooking spray.
- Remove the chicken from the marinade and arrange in a single layer on the prepared pan. Season the chicken with salt, to taste, and bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
- Meanwhile, put the marinade into a small saucepan. Whisk in the arrowroot or cornstarch, if using, and bring to a boil over medium heat (in order to kill bacteria). Reduce the heat to a low boil and cook until thick, about 5 minutes. Cool for 10 minutes.
- Using a pastry brush, brush some of the cooked marinade over the chicken or pour it into a small bowl and serve on the side. Arrange the chicken on a platter, sprinkle with chopped cilantro and serve.
BUTTERMILK FRIED CHICKEN DRUMSTICKS
This is a faster version of fried chicken, using everyday pantry items. A quick toss in buttermilk and yellow mustard brings tangy flavor to the chicken, and the cornflake-herb crust offers a nice crunch.

- Preheat the oven to 250 degrees F. In a large bowl, whisk together the buttermilk, eggs, and 2 tablespoons mustard. Add the drumsticks and toss to coat, then set aside.
- Fill a large cast-iron pan with 1/2-inch oil and heat over medium heat until shimmering. Meanwhile, combine the cornflake crumbs, flour, thyme, granulated garlic, 1 teaspoon salt, and 1/4 teaspoon black pepper in a shallow baking dish; set aside. In a small bowl, whisk together the honey and remaining 1/4 cup mustard and set aside.
- Remove the chicken from the buttermilk, shaking off any excess, then transfer the drumsticks to the flour mixture and coat well. Fry the pieces in 2 batches, turning halfway, until richly golden brown and crisp and the internal temperature registers 165 degrees F on an instant-read thermometer (avoid touching bone), about 15 minutes. (Turn the heat down if browning too fast.) Transfer the drumsticks to a wire rack set over a baking sheet and sprinkle generously with salt. Keep cooked drumsticks warm in the oven while frying the second batch. Serve immediately with the honey mustard.

I'm sorry to say I don't really have measurements for the seasonings. I cook most of the time by eyeing my seasonings, but when it comes to fried chicken, seasoning should be to preference. These are rough measurements ,but I think they're pretty close.

- 1. Combine the flour and 1 tbsp each of first four seasonings.
- 2. After cleaning and cutting your wings (or you can leave them whole), add the remaining seasonings to the chicken along with the accent and egg. Mix well. You can do this an hour or more before cooking if you want it to marinade for a while.
- 3. Coat chicken in seasoned flour and deep fry at 375' or medium-high heat for 15 minutes or until golden brown.
BAKED CHICKEN DRUMMIES
Prepare the marinade in 5 minutes, marinate 2 hours and then into the oven to bake - too easy! For a budget friendly family meal for 4, serve with chips, a simple salad on vegetables on the side. - Combine all of the marinade ingredients in a large bowl (the bowl must be able to hold all 8 drumsticks).
- Add the drumsticks and ensure thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for 2 hours.
- Preheat oven to 375°F (190°C ).
- Place chicken drumsticks in a single layer on a baking tray and bake for 40 minutes. Depending on the size of the drumstick, they may need a little longer.

YUMMY BAKED CHICKEN DRUMMIES

- Wash the chicken and pat dry. In a baking dish large enough to hold the chicken in 1 layer, mix together the lemon juice, brown sugar, oil, garlic, paprika, garam masala, ginger, turmeric, a pinch of salt and a few grinds of black pepper. Add the chicken and toss to coat. Arrange the chicken in a single layer in the baking dish. Cover the dish with aluminum foil and transfer to the oven. Bake until the chicken reaches 150 degrees F on an instant-read thermometer, about 35 minutes.
- While the chicken bakes, warm the butter in a pan over medium-low heat. Add the onions and a pinch of salt. Saute, cooking slowly, until the onions are golden brown and caramelized, about 20 minutes. Stir in the raisins and rum, and use a wooden spoon to loosen any onion bits from the bottom of the pan. Cook until the alcohol evaporates, leaving just the rum scented flavor, about 2 minutes, then remove the pan from the heat. When the chicken reaches 150 degrees F, spoon the onion-raisin mixture over the chicken. Raise the oven temperature to 400 degrees F, then return chicken to the oven and bake for 10 minutes more, uncovered. The chicken will be fully cooked when it reaches 160 degrees F. Transfer to a serving platter and serve warm or cold.

- Position an oven rack on the lowest shelf and preheat the oven to 450 degrees F. Combine the breadcrumbs, oil, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large resealable plastic bag. Put the drumsticks in a large bowl and toss to coat with 1 tablespoon water. Place the drumsticks in the bag with the breadcrumbs and shake well to coat, pressing the breadcrumbs firmly into the meat. EASY AND GOOD TERIYAKI CHICKEN DRUMETTES
This recipe make about 70 chicken drumettes, enough to feed a crowd, they are simply delicious! I have only used Kikkoman brand teriyaki glaze sauce for these, so I cannot say how they would be using another brand of teriyaki glaze. Save the other half of the wing for stock. Prep time does not include separating the wings in half.

- Set oven to 425 degrees.
- Prepare a large foil-lined baking sheet that has been lightly greased with cooking spray.
- In a large bowl combine soy sauce and sherry; add in the drumettes and toss in the sauce mixture to coat.
- Arrange the drumettes side by side (you can season the drumettes with pepper if desired).
- Bake for about 20 minutes.
- In a bowl mix the teriyaki glaze and garlic, then brush tops of drumettes with half of the glaze.
- Turn over drumettes and brush with remaining glaze mixture.

- 1. Remove skin and fat from chicken. Mix honey, ketchup, pepper sauce, and Worcestershire sauce in heavy-duty resealable plastic food-storage bag. Add chicken turn to coat with honey mixture. - Pre-heat oven to 350°F Spray a 13x9 pan with cooking spray. Place drumettes into pan and sprinkle with Salt,pepper and onion powder.
- Cook in 350°F for 30 minutes.
- Meanwhile in a small saucepan mix brown sugar,dry mustard, Marsala,soy sauce and minced garlic. Bring to boil over medium heat than turn down to simmer while drumettes cook. Stir sauce occasionally.
- After 30 minutes turn oven down to 325 degrees and pour sauce over wings turning wings to coat with sauce.
- Cook basting every 15 minutes to 1/2 hour with sauce. Cook until sticky and most of the sauce is absorbed. Serve immediately or next day.
