2 tablespoons olive oil
3 cloves garlic, minced
1 large onion, diced
1 pound ground beef
1 pound Italian sausage
Two 14.5-ounce cans tomato sauce or marinara sauce
One 28-ounce can whole tomatoes with juice
2 teaspoons Italian seasoning
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper
1 pound ziti
1 1/2 pounds mozzarella, grated
One 15-ounce tub whole-milk ricotta
1/2 cup grated Parmesan
2 tablespoons chopped fresh parsley, plus more for sprinkling
2 eggs

Steps:

  • Heat the olive oil in a pot over medium heat. Add the garlic and onions and saute until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all of the fat, leaving a bit behind for flavor and moisture. Add the tomato sauce, tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25 to 30 minutes. Remove 3 to 4 cups of the cooked sauce to a bowl to cool down.
  • Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente.
  • Preheat the oven to 375 degrees F.
  • In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley, eggs and some salt and pepper. Stir together just a couple of times (do not mix completely).
  • Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine.
  • Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella.
  • Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.

Authentic Baked Ziti image

Baked Ziti is a wonderful dish all its own. When done correctly, it is actually very different from lasagna. If you get good ingredients and follow this recipe, you will end up with a delicious and unique authentic Italian meal that tastes like nothing you've ever had before! A word about the ingredients: fresh mozzarella cheese is not the same thing as part-skim mozarella cheese. Use fresh mozarella in this recipe. Marzano tomatoes are a must for this recipe as well, but in a pinch, Progresso whole Italian tomatoes will do. Fresh herbs can be found in the produce section of most stores, but dried herbs can be substituted.

1 lb ziti pasta
1 lb fresh mozzarella cheese
3/4 cup freshly grated parmesan cheese
salt
pepper
crushed red pepper flakes
2 tablespoons extra virgin olive oil
1/2 lb sweet Italian sausage
1/2 lb hot Italian sausage
1/2 medium onion, diced
4 garlic cloves, minced
28 ounces whole peeled san marzano tomatoes
6 ounces marzano tomato paste
2 sprigs fresh thyme
1 sprig fresh basil

Steps:

  • SAUCE.
  • Remove the sausage casings and crumble the sausage.
  • Add 2 teaspoons of olive oil to a pan, and brown the sausage.
  • Puree the tomatoes in a blender (not too much).
  • Add onions and garlic to now-browned sausage. Cook for a few more minutes until transparent.
  • Add your tomato puree to the sausage.
  • Add thyme and basil to sauce.
  • Add some salt and pepper to taste.
  • Add a generous pinch of the pepper flakes.
  • Stir this up, heat to near-boil, then let it simmer covered on low for 15 minutes.
  • BUILDING THE DISH.
  • Boil your ziti pasta to not quite al-dente. Don't overboil, pasta will soften while baking.
  • Cut the mozarella, half of it into 1/2 inch cubes, the other half in as thin of slices as you can manage.
  • Remove the herb sprigs from the sauce and discard.
  • Add the can of tomato paste to your sauce to thicken it up and give it a lively red color and more intense flavor.
  • Add the pasta, your sauce, the cubed mozarella and half the parmesan in a baking dish.
  • Top with the sliced mozarella and the remainder of the parmesan.
  • Bake for about 30 minutes until golden.

  • Preheat oven to 350 degrees F.

3 cups spaghetti sauce

  • Preheat oven to 350.
  • Boil ziti, following package directions, drain and place in a large bowl.

1 box ziti pasta
1 (16 ounce) container ricotta cheese
3 cups shredded mozzarella cheese
1 egg
1/4 cup chopped fresh parsley
1 can mushroom
1 1/2 jars pasta sauce
4 hot Italian sausages or 4 mild Italian sausages, cooked and sliced

Steps:

  • Simmer the pasta sauce and sausage in a small saucepan on the lowest heat possible for simmering.
  • In the meantime, cook the pasta according to package directions.
  • While pasta is cooking, whip together ricotta, mushroom, egg, and parsley in a medium bowl.
  • When pasta is done, drain.
  • In a 9 by 9-ish deep casserole, spread about 1/2 cup of the pasta sauce/sausage mixture.
  • Layer on half of the ziti.
  • Put about 5 or 6 evenly spaced spoonfulls of ricotta on top of the ziti.

1 lb port sausage, ground
1 large onion, sliced and diced
1 green pepper, diced
4 garlic cloves, peeled and pressed
1 pint mushroom, sliced
2 (6 ounce) cans tomato paste
2 (12 ounce) cans tomato sauce
oregano
basil
italian seasoning
2 bay leaves
fresh parmesan cheese, grated
black pepper, ground
soy sauce
chili flakes
1 (16 ounce) box ziti pasta
1 (8 ounce) package mozzarella cheese, sliced or 8 ounces grated mozzarella cheese
salt
canola oil

Steps:

  • Preheat oven to 350°F
  • To make the sauce: First, brown the ground beef and Port. Sausage in separate frying pans over medium heat. Make sure the beef is in a large frying pan, and drain the fat. When the sausage is done, pat it dry with paper towels to remove the grease. When the beef is just about done, grind the pepper over the beef, probably about 1 Tbsp worth.
  • Add about 1/2 to 1 Tbsp soy sauce and mix it in to the beef.
  • You can replace the soy sauce with salt, but it adds a nice zing to the flavor.
  • At this point, I usually cut the onion into chunks and throw it into my Cuisinart with the garlic, and shred them to bits, and toss them in .
  • But sliced into small bits works well also.
  • Add the onion and garlic, and let cook down (covered) until the onion gets a little clear.
  • I add a little oil here sometimes, depending on how much fat was in the meat. Add the tomato paste, and mix it in .
  • I do the paste first because it makes it faster and easier to get the consistency right when the sauce comes in .
  • Add the sauce and mix it well.
  • Add generous amounts of the oregano and Italian Seasoning.
  • Don't go overboard on the basil though.
  • Add the bay leaves.
  • Let it simmer.
  • Mix it, and let it simmer longer.
  • Start the water boiling for the ziti.
  • Add some salt and oil to the water to make it boil quicker, and to help keep the zitis from sticking.
  • Throw the green pepper, sausage, and mushrooms into the sauce. Next stir about 4 or 5 Tbsp Parmesan cheese in to the sauce. When the ziti is done, drain them and dump into a large rectangular Pyrex.
  • I don't remember the exact size, but I think its around 9x18.
  • You may have a touch too many zitis, but they are delicious plain, so eat any extras.
  • Once the Parmesan has melted into the sauce and made it stringy, and the sauce has thickened, stir the sauce into the zitis.
  • Mix it all well.
  • Now, lay the sliced mozzarella over the ziti like shingles on a roof.
  • Sprinkle over some more Parmesan, maybe a tablespoons.
  • Bake at 350°F for 45 minutes to 1 hour.

Easy Baked Ziti image

As a grad student, I'm always looking for recipes that are quick, easy and relatively cheap, but taste great at the same time! I adapted this ziti dish from a number of recipes online after none of them were precisely what I wanted. I hope that you enjoy it too. The cheese is simply what I tend to keep in the fridge and therefore what I had to put the recipe together. It was a good combination, but you can substitute whatever you would like for it. Equally, you can leave out the ground beef if you'd like it to be vegetarian. I would perhaps substitute some mushrooms, spinach, etc. for it.

2 cups ziti pasta
1 cup spaghetti sauce (I use Napa Valley Bistro's Homemade Marinara)
1/2 cup mozzarella cheese
1/2 cup sharp cheddar cheese
4 tablespoons parmigiano-reggiano cheese
1/2 teaspoon mrs dash's italian seasoning (a shake or two of the bottle)
1/4 teaspoon red pepper flakes (a shake of the bottle)

  • In a greased 9x9 pyrex dish, mix together spaghetti sauce, 1/4 c mozzarella, 1/4 c cheddar, 2T parmesan reggiano, Italian seasoning, red pepper flakes, and hot sauce.
  • In olive oil, saute garlic, broccoli and beef for a few minutes, until beef is brown. Season it to taste.
  • Add sauted ingredients and ziti to pan, and mix together well.
  • Top with remaining cheeses, and bake at 350F for half an hour.
