Szechuan Chicken Lettuce Wraps with Spicy Mayo (Cactus Club Copycat) image

Spice it up and make copycat Szechuan chicken lettuce wraps with spicy mayo from the comfort of your own home with this easy to follow recipe. Plus, it is healthier than the original!

2 chicken breasts, cut into small 1 or 2-inch strips
1 tablespoon sesame oil
1 + 1/4 cups panko breadcrumbs
1 tablespoon soy sauce
1 tablespoon rice vinegar (black)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 egg
1 tablespoon mayonnaise
1/4 cup all-purpose flour
1 cup fried wontons* or chow mein noodles (Farkay brand)
1/4 cup green onions or scallions, sliced
1/2 cup fresh cilantro, chopped
1/4 cup peanuts
1/2 cup sweet chili sauce
2 teaspoons white and black sesame seeds
lime wedges
1 head iceberg lettuce, cut in half through the stem
1/4 cup mayonnaise
1 tablespoon Sriracha hot sauce, or more to taste
1 teaspoon freshly squeezed lime juice

Steps:

  • Preheat oven to 400 degrees F. Line a cooking pan with foil and spray or brush with cooking oil.
  • In a medium skillet, heat sesame oil over medium heat. Add panko breadcrumbs and cook for 2-3 minutes while stirring continuously until the breadcrumbs start to brown. Be careful not to burn them, you only want them to slightly turn a golden colour. Remove from heat and mix in soy sauce, rice wine vinegar, salt and pepper. Toss to combine and set aside.
  • In a small bowl, beat the egg and mayonnaise together. Pour mixture into a shallow dish and set aside. Place flour into another shallow dish and set aside.
  • Fully coat each chicken strip with flour, then with egg, and lastly with the panko breadcrumb mixture.
  • Place the coated chicken strips onto your cooking tray and bake for 20-25 minutes, until the chicken is golden brown and no longer pink inside.
  • Place chicken strips into a large bowl and add chow mein noodles, green onions, cilantro, peanuts, and sweet chili sauce. Toss to coat.
  • Transfer chicken mixture into serving dish and sprinkle with sesame seeds. Add lime wedges.
  • In a small bowl, mix mayonnaise, hot sauce, and lime juice together.
  • Serve spicy mayo on the side or drizzle on top of chicken mixture.

Wrap the lettuce around the meat like a burrito and enjoy!

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

4 cups water
2 cups uncooked white rice
1 tablespoon vegetable oil
1 lb ground pork
1 bunch green onion, thinly sliced
1/2 teaspoon minced garlic
1 (14 ounce) package firm tofu, drained and cubed
2 carrots, shredded
3 tablespoons hoisin sauce
2 tablespoons soy sauce or 2 tablespoons tamari
1 teaspoon sesame oil
1/2 teaspoon sweet chili sauce
1 head iceberg lettuce, separated

Steps:

  • In a saucepan combine the water and rice. Bring to a boil, cover, and reduce heat to a simmer. Cook for 20 minutes, or until water is absorbed. Set aside and keep warm.
  • Heat vegetable oil in a wok over medium-high heat. Cook the pork, green onions, and garlic for 5-7 minutes, or until lightly brown. Add the tofu, carrot, hoisin and soy sauce stirring frequently until heated through. Remove from heat and stir in the sesame oil and chili sauce.
  • To serve: spoon a small amount of rice into each lettuce leaf, top with the stir-fry mixture and drizzle with additional soy sauce, hoisin, or chili sauce, if desired. Wrap the lettuce leaf to enclose the filling and enjoy.
  • Note:.
  • In place of tofu, diced chicken or shrimp may be used.

3 tablespoons oil
2 boneless skinless chicken breasts
1 cup water chestnut
2/3 cup mushroom
3 tablespoons onions, choped
1 teaspoon garlic, minced
4 -5 leaves iceberg lettuce
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame oil
1 tablespoon hot mustard
2 teaspoons water
1 -2 teaspoon garlic and red chile paste
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar

Steps:

  • Make the special sauce by dissolving the sugar in water in a small bowl.
  • Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil.
  • Mix well and refrigerate this sauce until you're ready to serve.
  • Combine the hot water with the hot mustard and set this aside as well.
  • Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.
  • Bring oil to high heat in a wok or large frying pan.
  • Saute chicken breasts for 4 to 5 minutes per side or done.
  • Remove chicken from the pan and cool.
  • Keep oil in the pan, keep hot.
  • As chicken cools mince water chestnuts and mushrooms to about the size of small peas.
  • Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
  • When chicken is cool, mince it as the mushrooms and water chestnuts are.
  • With the pan still on high heat, add another Tbsp of vegetable oil.
  • Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.
  • Add the stir fry sauce to the pan and saute the mixture for a couple minutes then serve it in the lettuce"cups".
  • Top with"Special Sauce".

3/4 cup soy sauce
3/4 cup unseasoned rice vinegar*
1 tablespoon fresh lime juice
1 tablespoon oriental sesame oil
1/8 teaspoon cayenne pepper
Wraps
1/4 cup soy sauce
1/4 cup mirin (sweet Japanese rice wine)*
1/4 cup sake
1 1/4 pounds skinless boneless chicken breast halves, cut crosswise into 1/3-inch-thick slices
1 tablespoon cornstarch
3 tablespoons oriental sesame oil, divided
1 medium-size red onion, halved, thinly sliced
1 medium-size red bell pepper, cut into matchstick-size strips
1 medium carrot, cut into matchstick-size strips
4 cups thinly sliced Napa cabbage (about 1/4 large head)
1 cup thinly sliced red cabbage
1 1/2 cups bean sprouts (about 3 ounces)
18 leaves from hearts of romaine lettuce
1 bunch green onions, chopped

Steps:

  • For dipping sauce:
  • Stir sesame seeds in heavy small skillet over medium heat until golden, about 5 minutes. Place toasted sesame seeds in small bowl; cool. Mix in soy sauce, unseasoned rice vinegar, fresh lime juice, oriental sesame oil, and cayenne pepper.
  • For wraps:
  • Mix soy sauce, mirin, and sake in small bowl to blend; set stir-fry sauce aside. (Dipping sauce and stir-fry sauce can be made 1 day ahead. Cover separately and refrigerate.)
  • Place chicken slices in medium bowl; sprinkle with salt and pepper. Add cornstarch and toss to coat. Heat 2 tablespoons oriental sesame oil in large deep nonstick skillet over high heat. Add chicken slices and sauté until cooked through, about 4 minutes. Using slotted spoon, transfer chicken slices to bowl. Heat remaining 1 tablespoon oriental sesame oil in same nonstick skillet. Add sliced red onion, red bell pepper strips, and carrot strips; sauté 2 minutes. Add both cabbages and bean sprouts; sauté until vegetables are crisp-tender, about 2 minutes. Return chicken slices to skillet. Add stir-fry sauce and toss to coat. Season stir-fry mixture to taste with salt and pepper. Transfer mixture to strainer set over bowl to drain.
  • Arrange romaine lettuce leaves on serving platter. Divide stir-fry mixture among leaves. Sprinkle with chopped green onions and serve, passing dipping sauce separately.
  • *Unseasoned rice vinegar and mirin (sweet Japanese rice wine) are available at Japanese markets and in the Asian foods section of some supermarkets.
