3-4 pounds beef chuck roast
salt and pepper
2 tablespoons canola oil
2 cups beef consommé (or Beef broth)
1 package dry Italian salad dressing
1 teaspoon garlic powder
1 Tablespoon italian seasoning
12 oz jar sliced pepperoncini (drained)
1/4 cup butter (sliced)
4 hoagie rolls
8 slices provolone cheese

Steps:

  • Salt and pepper the beef roast. Heat a large skillet over high heat with the canola oil. Add the roast and sear each side for 2-3 minutes until it forms a golden seared crust. Place the roast in a 5 quart slow cooker.
  • Add the beef consommé, italian seasoning, garlic powder, italian seasoning and pepperoncini to the slow cooker. Top roast with butter slices.
  • Cook on low for 8-10 hours or high for 5-6 hours. Shred the roast with a fork. Serve on hoagies topped with provolone cheese and additional pepperoncinis if desired.

1 cup frozen small whole onions (from 1-lb bag), thawed
1 jar (6 oz) pitted kalamata or Greek olives, drained
1/3 cup sun-dried tomatoes in oil, drained, chopped
1 jar (26 oz) marinara sauce
6 cups uncooked bow-tie (farfalle) pasta (12 oz)

Steps:

  • In 3 1/2- to 4-quart slow cooker, place beef and onions. Top with olives and tomatoes. Pour marinara sauce over top.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • About 25 minutes before serving, cook and drain pasta as directed on package. Serve beef mixture over pasta.

2 Tbsp. KRAFT Zesty Italian Dressing
1 boneless beef chuck roast (3 lb.)
3 carrots, peeled, chopped
1 onion, chopped
2 bay leaves
1 can (28 oz.) crushed tomatoes
1/4 cup LEA & PERRINS Worcestershire Sauce
1 Tbsp. WYLER'S Instant Bouillon Beef Flavored Granules

Steps:

  • Heat dressing in large deep skillet on medium-high heat. Add roast; cook 5 min. on each side or until evenly browned on both sides.
  • Place browned roast in slow cooker sprayed with cooking spray; top with carrots, onions and bay leaves.
  • Mix remaining ingredients until blended; pour over ingredients in slow cooker. Cover with lid.
  • Cook on LOW 8 to 10 hours (or on HIGH 5 to 6 hours).
  • Remove and discard bay leaves. Transfer roast to platter; top with vegetables and sauce.

This started out as an RV recipe but I use it all time for my Chicago Italian Beef fix. Rump roast is the best to use. It must be "zesty" not just Italian dressing. The original recipe recommends 24 hours cooking time but this is usually done in 15-20 hours.

4 -5 lbs rump roast
1 (1 ounce) packet au jus sauce (1 oz any brand)
1 (1/16 ounce) packet Good Seasons Italian dressing
2 cups water
1 tablespoon minced garlic

Steps:

  • Mix water, both packets and garlic. Place roast in slow cooker. Pour mixed packets and water mixture over roast. Cover. Cook on low 12 hours.
  • Mix water with both packets,water and garlic. Add roast to slow cooker and pour mixture over roast. Cook on low 10-12 hours. Remove roast from cooker, slice and return to cooker. Cook an additional 8-12 hours on low. Serve on Italian/French bread buns with bell/hot peppers.

1 stalk celery, sliced
2 1/2 lbs boneless beef chuck roast
1/2 tablespoon pepper
1 (10 3/4 ounce) can condensed tomato soup with roasted garlic and herbs
1/2 cup water

Steps:

  • Place potatoes, carrots, and celery in bottom of slow cooker.
  • Season roast with pepper and place on top.
  • Mix soup and water.
  • Pour over roast and vegetables.
