- Heat oven to 400°F.
- Mix first 4 ingredients until blended.
- Place fish in single layer in 13x9-inch pan sprayed with cooking spray; drizzle with half the dressing mixture. Turn to evenly coat both sides of fish fillets with dressing mixture.
- Bake 10 min. Remove pan from oven. Move fish to one side of pan. Add spinach to other side of pan; drizzle with remaining dressing mixture. Bake 3 to 5 min. or until fish flakes easily with fork.

- Melt 2 tablespoons butter in large saucepan over medium-high heat. Add shallots; sauté 5 minutes. Add wine, bay leaf and 1 tablespoon thyme; boil until mixture is reduced by half, about 5 minutes. Add beets and 4 cups stock; bring to boil. Reduce heat to medium-low and simmer, uncovered, until beets are tender and liquid is reduced to 1 cup, about 50 minutes.
- Place salmon on rimmed baking sheet. Melt 1 tablespoon butter in small saucepan; brush over salmon. Sprinkle with salt and pepper. Mix panko, horseradish and 1 tablespoon thyme in small bowl. Season with salt and pepper. Press mixture onto salmon, dividing equally. (Can be made 6 hours ahead. Cover beet mixture and salmon separately; chill.)
- Preheat oven to 475°F. Bake salmon just until cooked through and top is golden brown, about 8 minutes.
- Meanwhile, melt 2 tablespoons butter in large skillet over medium heat. Add carrots and 1/4 cup stock; cover and simmer 2 minutes. Add brussels sprout leaves; cook, uncovered, until crisp-tender, about 5 minutes. Season with salt and pepper. Remove from heat.
- Bring beet mixture to simmer in heavy medium saucepan. Add 2 tablespoons butter; stir just until melted. Spoon beet mixture into 4 shallow soup plates. Top with fish. Garnish with carrots and brussels sprouts.
OVEN-ROASTED BEETS WITH WILTED SPINACH
The balsamic glaze adds a nice kick and this is a very healthy and lovely way to enjoy these oven-roasted beets.

- Preheat the oven to 425 degrees F (220 degrees C).
- Trim and wash beets. Set leaves aside and discard stems. Wrap beets in foil packages (3 per package) and place in a deep baking dish.
- Roast in the preheated oven until tender, about 45 minutes.
- Remove from the oven. Divide onions, herbes de Provence, 1/2 of the olive oil, salt, and pepper between the packages. Reseal and roast for another 45 minutes.
- Remove from the oven. Drizzle 1/2 of the balsamic vinegar into each package. Reseal and roast for 5 more minutes.
- Meanwhile, melt butter and remaining olive oil in a pan over medium heat. Add garlic and cook until fragrant, about 1 minute. Throw in spinach and reserved beet leaves. Cook, stirring often, until wilted, about 5 minutes.
- Remove beets from the oven. Transfer beets, onions, and all drippings to a serving dish. Stir in wilted greens and season to taste.

- Preheat oven to 425F. Peel the beets and cut into thin wedges. Toss with a tablespoon of olive oil and season with salt and pepper. Spread on a rimmed baking tray and roast until fork-tender, about 30 minutes.
- Place a skillet over medium-high heat. Melt the butter together with a teaspoon of oil in the pan. Season the salmon generously with salt and pepper and place, skin side up, into the sizzling butter. Sear the salmon for 2 minutes, then flip so that the skin is down and send the pan to the oven.
- Roast the salmon for 5 - 7 minutes or until it is cooked though but still slightly pink inside. Remove from the oven and cool slightly.
- In a small bowl, whisk together balsamic, minced garlic and dijon with a pinch of salt and pepper. Drizzle in the remaining olive oil.
