Provided by Jen

Number Of Ingredients 12

2 pounds jumbo or extra jumbo shrimp (16-21 ct) (peeled with tails left on and deveined)
2 tablespoons unsalted butter, (divided)
2 tablespoons olive oil, (divided)
1 tablespoon olive oil
1 tablespoon lime juice
1 tsp EACH chili powder, ground cumin, onion powder
1/2 tsp EACH smoked paprika, ground coriander, salt, pepper
1/4 teaspoon cayenne pepper
3 tablespoons unsalted butter
6 cloves garlic, minced
1 cup fresh cilantro, chopped ((measure before chopping))
3-4 tablespoons lime juice

Steps:

  • Add marinade ingredients to a large bowl and whisk to combine. Add shrimp and marinate at room temperature for 15-30 minutes or in the refrigerator for up to 60 minutes (no more!). Note, this is a wet rub marinade and will be thick without extra liquid.
  • Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat. Increase heat to medium-high. Once very hot and sizzling, add half the shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer shrimp to a plate and repeat with remaining shrimp.
  • To the now empty skillet, melt 3 tablespoons butter over medium heat. Once melted, add the garlic and cook until fragrant, about 1 minute. Remove from heat and add the cilantro and lime juice and stir to combine. Add shrimp back to the skillet and stir to evenly coat. Taste and season with salt, pepper, cayenne and/or lime juice to taste.

ZESTY LIME CILANTRO SHRIMP AND BLACK BEAN SALAD

Zesty Lime Cilantro Shrimp and Black Bean Salad image

Description Zesty Lime Cilantro Shrimp and Black Bean Salad Get ready for a great deal of sabor in every bite with this Zesty Lime Cilantro Shrimp and Black Bean Salad. Inspired by the cuisine south of the border, this is a healthy, light, and refreshing salad that will tantalize your taste buds with every bite. Just a prawn in the game of life. Ever wondered why we pair citrus fruits with seafood? Was it simply because lemon and fish tasted good or was there a deeper reason? Originally it was a safety precaution, believing that a mouthful of lemon juice would dissolve any bones that were accidentally swallowed. While lemon juice does help dissolve fish bones, we mostly kept with it because the flavors are a delight with the sweet acidic flavor balancing out the briny flavor of seafood. While lemon and lime are the most popular citrus pairings, you can play around here and really get some interesting flavors. You could try grapefruit, and get a nice sour and tangy taste but with that subtle sweetness that would play nicely with the shrimp. Maybe even an orange, especially a blood orange, that would deliver some boldness without being overpowering. Get creative because this Zesty Lime Cilantro Shrimp and Black Bean Salad will surely satisfy. @dangoodrecipes No way this #salad should have been this good! #danosseasoning #shrimp ♬ original sound - Dan Good Recipes Ingredients 1 handful of cooked shrimp 1 can of black beans, drained and rinsed ¼ cup Sliced green onion Red bell pepper, diced ¾ cup chopped cilantro Olive oil Lime juice Hot sauce Dan-O's Spicy Seasoning Prep Time 15 Mins Cook Time 0 Mins Instructions In a blender or food processor, add a little bit of olive oil, lime juice, ¼ cup of cilantro, a few splashes of hot sauce, and some Spicy Dan-O's.
