- Cook ground beef in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink, about 6 minutes. Add onion and garlic; cook 3 minutes or until tender. Stir in tomatoes and next 4 ingredients; simmer over medium-low 30 minutes, stirring occasionally.
- Preheat oven to 375° F. Cook noodles according to package directions; drain, and set aside.
- Stir together cottage cheese, ricotta, and Parmesan cheese in a large bowl until combined. Place 3 cups meat sauce in a 13- x 9-inch greased baking pan. Layer 3 of the cooked noodles over sauce, dollop with half of the cottage mixture, top with 1/3 of the mozzarella slices and 1/3 of the shredded mozzarella. Layer 3 of the noodles on top of cheese, spread 2 1/2 cups meat sauce, remaining half of cottage mixture, 1/3 of the mozzarella slices and 1/3 of the shredded mozzarella. Layer remaining 3 noodles on top of cheese, remaining 2 1/2 cups meat sauce, remaining 1/3 mozzarella slices and remaining 1/3 shredded mozzarella. Cover with aluminum foil. Bake in preheated oven at 375° for 30 minutes, remove foil, continue baking until browned, about 15 minutes more . Let stand 10 minutes before serving.
WHITE LASAGNA WITH SPICY TURKEY SAUSAGE AND 'SHROOMS
Steps:
- Preheat the oven to 350 degrees F.
- For the white sauce: Bring a medium saucepan to low-medium heat and add the butter. Once the butter is melted, stir in the flour with a wooden spoon; cook for 2 minutes (do not let it color). Add the milk and bring to a boil, continuing to stir. Reduce the heat to medium-low and simmer for 1 minute. Remove the saucepan from the heat. Add in the Parmesan, whisking to incorporate. Season with salt and pepper.
- For the lasagna: In a skillet over medium-high heat, add the olive oil and cook the turkey sausage until just beginning to brown, about 4 minutes. Add the mushrooms and continue to saute until golden brown and the turkey is cooked through, 4 to 6 additional minutes. Season with kosher salt, pepper and granulated garlic. Stir well, and then shut off the heat and set aside to cool.
- In a small mixing bowl, combine ricotta, egg, Parmesan, about 1/2 teaspoon coarse salt and a few rounds of cracked pepper. Spread 1/4 cup of the white sauce in the bottom of a 9- by 13-inch nonreactive baking dish. Begin layering with 3 noodles, followed with about 1 cup ricotta mixture. Layer about half of the zucchini evenly over the ricotta. Follow with half the turkey sausage and mushrooms, finishing with 1 cup white sauce. Sprinkle with 1/3 of the mozzarella. Repeat. Top the second layer with 4 noodles, white sauce and sprinkle with the remaining mozzarella. Bake, covered with foil, for 30 minutes.
- Remove from the oven and remove the foil cover. Heat the broiler to maximum temperature. Broil until the cheese is browned and bubbling, about 1 minute. Garnish with the parsley.
ZESTY LASAGNA (SOUTHERN LIVING)
You can't go too wrong with a "Southern Living" recipe. This one is from their 1987 Annual Recipe Book. This is pretty basic and is very good as is although, you can doctor it up as well. This makes a great potluck dish and I often take this to friends, family, and neighbors when they require some TLC. Cooking time does not include standing time.

- Brown ground beef and garlic in a heavy skillet over medium heat until meat is browned, stirring to crumble meat, drain.
- Stir in the tomato paste, water, mushrooms, bay leaves, salt, pepper, Italian seasoning, and oregano.

- Remove the bay leaves.
- Cook noodles according to package directions and drain.

- Let stand for 10 minutes before serving.

- Preheat oven to 350°.
- In large, heavy, nonstick pot brown ground beef, then drain it in colander and rinse off the fat with hot water. Return it to the pot.
- Grind Polish sausage in food processor, add it to the skillet with the beef.
- Stir in the tomato puree, spaghetti sauce mix, and the salt. Let simmer while you --
- Cook lasagna noodles according to package directions, separate and lay on wax paper.
- In separate bowl combine cottage cheese, eggs, Parmesan cheese and Mozzarella cheese. (Reserve 1/2 cup of mozzarella cheese.).
- Spray a large jelly roll pan with cooking spray.
- In the jellyroll pan, begin layering the ingredients with noodles, then meat sauce, then cheese mixture until you've used all the ingredients.
- Be sure to end the layering with meat layer on top.
- Sprinkle with reserved 1/2 cup of mazzarella cheese.
- Cover loosely with foil, do not let it rest on the cheese.
- Bake at 350° for 45 minutes.

- In a large skillet brown the ground beef in the oil. Season to taste with salt and pepper. Stir in pasta sauce; cover and simmer for 15 minutes. Stir occasionally.
- Cheese filling: Mix together the cottage cheese, parsley, and mozarella cheese.
- Cook pasta in 6 quarts of water for 10 minutes. Do not over cook.
- Lightly grease a large baking pan(13x9) and spoon in enough meat sauce mixture to cover the bottom. Layer with lasagne. Spread part of the cheese filling over pasta. Repeat until lasagne is gone ending with sauce mix. Sprinkle with parmesan cheese if desired. Bake at 350 degrees Fahrenheit for 30 minutes. Let stand for 5 to 10 minutes. Cut into 3 inch squares.
- Note: lasagne can be made the day before. Refrigerate. Let stand for 1 hour at room temperature before baking at 350 degrees Fahrenheit for 1 hour.
