Steps:

• Measure out all ingredients and combine in bowl. Use in place of Zesty Dry Italian Dressing packet. Store in an air tight container or zip lock bag. To make dressing: Mix 2 tablespoons of mix with ¼ cup vinegar, 2 tablespoons water and ½ to ⅔ cup olive oil.

ZESTY HOMEMADE ITALIAN DRESSING

Steps:

• Combine all ingredients in a jar. Seal tightly with lid and shake vigorously to emulsify. Toss gently with the romaine lettuce right before serving. Store extra dressing in refrigerator for up to a week. As the dressing sits, it will separate (and solidify in the fridge), so be sure to shake well before using.

ITALIAN DRESSING

Steps:

• Place the first 10 ingredients in a blender. Cover and process until pureed. While processing, gradually add oil in a steady stream. Refrigerate leftovers.

ZESTY ITALIAN DRESSING SPICE MIX

Steps:

• In a small bowl, whisk together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt, and Cajun seasoning.
• Store the spice mix in a tightly sealed container, and use as needed.
• To make dressing, whisk together the vinegar, oil, water and 2 tbls. of the spice mix. Enjoy!

ITALIAN PASTA SALAD

Steps:

• Combine all ingredients except dressing in large bowl.
• Add dressing; mix lightly.
• Refrigerate several hours.

ZESTY ITALIAN CHICKEN WITH DRESSING

Steps:

• Preheat oven to 375 F. Grease a 13 X 9 baking dish.
• Place the chicken in a large zip lock bag with the Italian dressing, and marinate it in the fridge for 30-45 minutes. If you do not have time to marinate, the chicken go ahead and add the chicken and dressing to a greased 13 X 9 baking dish.
• Add the seasonings to the chicken, and place the baking dish in the middle rack of the oven.
• Bake for 45-55 minutes on the middle rack or until a digital meat thermometer reaches 160°F degrees. Then move the baking dish to the top rack to broil for 5 minutes so that the skin crisps. After you have removed the chicken from the oven, use a meat thermometer to make sure the chicken reaches 165°F.
• Let rest for 5 minutes before serving. Enjoy!

CARIBBEAN VEGETABLE SALAD WITH ZESTY ITALIAN DRESSING

Steps:

• Cook pumpkin and papaya in boiling water in large saucepan 20 to 30 min. or until tender; drain. Cool slightly. Peel pumpkin and papaya; cut pulp into 1-inch chunks.
• Whisk next 5 ingredients until bouillon is dissolved.
• Heat 1 Tbsp. oil in large nonstick skillet on medium-high heat. Add eggplant; cook and stir 4 to 5 min. or until tender. Stir in oregano and lemon juice; transfer to large bowl.
• Add remaining oil to same skillet; heat. Add peppers; cook and stir 4 min. or until crisp-tender. Add to eggplant mixture along with the pumpkin, papaya, dressing mixture and remaining ingredients; toss lightly. Refrigerate 1 hour.

ZESTY ITALIAN SALAD DRESSING

Steps:

• Combine all of the ingredients in a blender on low speed for 30 seconds. Pour in a clean jar and chill at least 1 hour to blend all the flavors. Serve over mixed greens or use as a marinade.
