"Cooking for two is such a challenge for us, since my husband and I do not care for leftovers," says Rebecca Schweizer of Chesapeake, Virginia. "This well-seasoned salad, with its distinctive dill flavor, is my favorite lunch recipe.

1 can (6 ounces) light water-packed tuna, drained and flaked
2 tablespoons finely chopped red onion
1 teaspoon minced fresh parsley
1-1/2 teaspoons dill weed
1/8 teaspoon garlic salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
Pinch cayenne pepper
2 tablespoons fat-free mayonnaise
1 tablespoon reduced-fat sour cream
3 cups Boston lettuce leaves
6 grape tomatoes, sliced
Optional: sliced cucumber and fresh dill

Steps:

  • In a small bowl, combine the first eight ingredients. Combine the mayonnaise and sour cream; stir into the tuna mixture. , Divide the salad greens between two plates. Top with tuna mixture and tomatoes and if desired, cucumbers and dill.

1 teaspoon mayonnaise
1 teaspoon sweet pickle relish
1 teaspoon Dijon-style prepared mustard
1 stalk celery, chopped
¼ cup chopped onion
¼ teaspoon ground black pepper

Steps:

  • Mash tuna in a small bowl with a fork. Add mayonnaise, pickle relish, mustard, celery, onion, and black pepper; stir to combine. Chill and serve.

4 cups torn lettuce, washed and dried
1 (6 ounce) canned tuna, drained
1 cup seedless grapes
2/3 cup Miracle Whip
1 tablespoon lemon juice
1/4 teaspoon salt

  • Toss together apples, lettuce, tuna, and grapes.
  • Set aside.
  • Combine Miracle Whip, lemon juice, and salt.

3 tablespoons Miracle Whip light
1/2 granny smith apple (chopped)
1/4 red onion, diced
1 tablespoon Italian dressing

Steps:

  • Drain the can of tuna a empty the can into a bowl.
  • Add the mircle whip to the tuna and mash together with a fork.
  • Add the apple and onion to the tuna.
  • Mix in the italian dressing. I just poor it on so the above amount is just an estimation. Just add a little at a time to your taste preferences.
  • Fills two pitas genrously.

4 (6 ounce) cans tuna in water, well-drained
3 stalks celery
6 sprigs fresh dill (about 3-4 inches each)
6 sprigs fresh parsley (about 3-4 inches each)
2 tablespoons sweet onions, minced
1/4 cup lemon juice
4 tablespoons mayonnaise
1/4 cup extra virgin olive oil
1/2 teaspoon salt (to taste)
fresh ground black pepper

Steps:

  • Chop the celery and the herbs.
  • Mix all ingredients together in a small bowl.
  • Serve as wraps, sandwiches, or with crackers. I suggest using multi-grain bread and lettuce.
  • If you like creamier tuna salad feel free to double the mayo.

1 cup thinly sliced celery
1 cup small green seedless grape
1/4 cup chopped onion
2 teaspoons curry powder
1/2 teaspoon celery seed
2 cloves garlic, chopped
8 ounces nonfat cottage cheese
3/4 cup skim milk
4 tablespoons fresh lemon juice
salt, pepper
1/4 cup walnuts, toasted and chopped

Steps:

  • drain tuna and place in a bowl.
  • add celery, grapes, onion, toss.
  • toast the curry powder in a small skillet for 2-3 minutes until fragrant.
  • remove with a spatula to a small bowl, cool combine celery seed, garlic, cottage cgeese, skim milk, lemon juice, and curry powder in a blender until liquified season with salt& pepper.
  • pour dressing over tuna, toss.
  • sprinkle with toasted walnuts, serve.

The dill and green onion add a fresh herby flavor, the celery adds a satisfying crunch and the minimal amount of mayo makes this much more like a salad than the tuna goo normally presented as "tuna salad." It's quite good in a sandwich (or bagel!) as well - it helps to use your hand or an ice cream scoop to compress the salad onto the bread.
