BLT PASTA SALAD

Steps:
- Cook the pasta in a large pot of salted boiling water as the label directs. Drain and toss with the milk in a large bowl; set aside.
- Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Drain on paper towels. Discard all but 3 tablespoons drippings from the pan. Add the tomatoes, thyme and garlic to the pan and toss until warmed through; season with salt and pepper. Crumble the bacon into bite-size pieces; set aside 1/4 cup for garnish. Toss the remaining bacon and the tomato mixture with the pasta.
- Mix the mayonnaise, sour cream and 3 tablespoons chives with the pasta until evenly combined. Season with salt and pepper. Add the lettuce; toss again to coat. Garnish with the reserved bacon and the remaining 1 tablespoon chives. Serve at room temperature.

ZESTY BLT PASTA SALAD
I love BLT Pasta salad. I was buying from the del for $8.00 a quart. I thought I would create my own BLT Pasta salad. My family enjoyed it very much. We all had 2nd's and 3rd's. It is a great side dish to serve along with Bbq chicken, steak, ribs, and burgers. Enjoy all!

Steps:
- 1. Cook bacon just until done and set aside. While the bacon is cooking. Prepare your pasta per the directions on the box. Drain pasta.
- 2. place all of the ingredients for the dressing in a food processor. Process until smooth and creamy.
- 3. once your bacon is cooled. Place bacon in food processor and pulse until bacon becomes tiny bits. Do not pulverize.
- 4. finely chop your onion. quarter your grape tomatoes. chop the Romaine lettuce into small pieces. About 1/2 inch pieces.
- 5. Blend the pasta with the dressing in a large bowl. Add in the tomatoes, lettuce bacon and onion. Toss to combine . chill for about two hours, or longer. Salt-and-pepper to taste. You may add additional mayonnaise to your liking. Serve and enjoy!

- Equipment: Large skillet.
- In a large skillet over medium heat, cook bacon until crisp, about 5-8 minutes. Remove and drain on a towel lined plate. Place half of the drained bacon in a large bowl with cooked farfalle, cherry tomatoes, red onions, romaine, salt and pepper. Set aside.
- In a medium bowl, whisk to combine buttermilk, sour cream, lemon juice, dijon mustard, granulated garlic, granulated onion, cayenne and salt to taste. Pour dressing over pasta salad and toss to combine. Serve topped with remaining bacon and a sprinkle of chopped parsley.

- If necessary, cook the bacon according to one of my easy methods listed below. When cool enough to handle, cut into chunky, bite-sized pieces.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain the pasta in a colander, then rinse under cold water to stop its cooking. Shake off as much water as possible, then place it in a large serving bowl.
- In a small bowl or measuring cup, whisk together the ranch dressing: Greek yogurt, milk, olive oil, garlic powder, black pepper, onion powder, dillweed, salt, cayenne pepper, and Worcestershire. Pour over the noodles, then toss to coat.
- Gently fold in the cherry tomatoes, romaine, spinach, 3 tablespoons chives, and reserved bacon. Sprinkle with additional chives for garnish. Taste and adjust seasoning as desired. Serve right away, at room temperature, or chilled.
