A bolus is a sweet pastry of Jewish origin from the Dutch province of Zeeland. They are made by baking dough in a spiral shape and covering it with treacle and cinnamon. The bolus was first created in Zeeland in the first half of the 17th century. There are, for as far as I know two varietys, the "Zeeuwse bolus" wich is the classic cinnamon bolus, and there is the " Ouddorpse bolus" wich is only baked on the island of Goerree-Overflakkee. This recipe is from the dutch baker Piet Daane, the recipe is freely available in Dutch.

500 g plain flour
1 pinch salt
whole milk
50 g yeast
75 g butter
1 egg
250 g brown sugar
2 tablespoons cinnamon

Steps:

  • Sift all of the flour into a bowl and add some salt. Heat the milk until it is lukewarm. Dissolve the yeast together with the butter in a littlebit of the lukewarm milk. Make a depression in the flour and add the yeast solution that has just been created. Now break the egg and put it into the same depression together with the yeast solution. Pour the rest of the lukewarm milk one bit at the time into the flour, start making a nice smooth dough. Let the dough rise for about 1 hour under a damp cloth in a warm place. Mix the cinnamon and brown sugar together. After rising for one hour knead the dough well.
  • Cut the dough into small pieces of about 60 grams each. Let the dough rise for about 15 minutes under a plastic bag or tarp. After 15 minutes you can roll the dough through the sugar-cinnamon mixture for a first subtle coating. Then let it rise for another 15 minutes.
  • Now for the real work. Roll the dough pieces throug the sugar, making long strings about an 1,5 cm in diametre. Twist the strings around your vinger like a turban (or like that obvious thing it looks like). It is very simple, get one end between your thumb and forefinger and turn the string in 2 times around your finger. If that fails, try it on a counter, that should be easier. Put the boluses on equal distances on a buttered baking sheet (or use bakery paper). Put the boluses under a plastic sheet for another half hour of rising.
  • Preheat the oven to 250 degrees Celsius. Bake for 10 minutes until the boluses and brown. After baking turn the bolusses immediatly. Be careful, the molten sugar is HOT!Let the bolusses cool down but do not let them dry out.
  • Best served warm and sticky!

1 package active dry yeast
1/4 cup water
1 cup milk, scalded
3 tablespoons sugar
1/2 teaspoon salt
3 1/4 cups sifted flour
3 tablespoons butter, softened
1/2 cup chopped raisins
2 tablespoons currants
2 tablespoons finely chopped citron
1/4 cup firmy packed brown sugar
1/2 teaspoon cinnamon
3 tablespoons brown sugar

Steps:

  • Soften the yeast in the warm water and let stand 5-10 minutes.
  • Add milk to sugar and salt; mix thoroughly and cook to lukewarm.
  • Add 1 cup of flour and mix until smooth.
  • Stir in yeast mixture and add remaining flour gradually, mixing well.
  • On a floured surface, knead dough until smooth.
  • Place in a greased bowl and grease top of dough.
  • Cover and let rise in a warm place until dough is doubled; about 45 minutes.
  • Punch down and roll into a rectangle about 1/4 inch thick.
  • Brush with softened butter and spread evenly with raisins, currants and citron, 1/4 cup brown sugar and cinnamon.
  • Roll up, starting at long side, as for a jelly roll and cut into 1 inch slices.
  • Place slices cut side down in a buttered 13x9x2 inch pan.
  • Cover and let rise until doubled.
  • Sprinkle top with remaining brown sugar and bake at 375* for 20 to 30 minutes.

1 teaspoon white sugar
1 (1/4 ounce) package active dry yeast
1/2 cup warm water (110*F./45*C.)
1/2 cup milk
1/4 cup white sugar
1/4 cup butter
1 teaspoon salt
2 eggs, beaten
4 cups all-purpose flour
3/4 cup butter
3/4 cup brown sugar
1 cup chopped pecans, divided
3/4 cup brown sugar
1 tablespoon ground cinnamon
1/4 cup melted butter

Steps:

  • 1. In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • 2. In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • 3. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • 4. While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • 5. Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375*F.(190*C.).
  • 6. Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.
  • My Update Note: Here is how we rolled tight buns. Make sure you roll your dough out to 1/4". Apply butter evenly, then sugar/cinnamon mixture. Holding the rolling pin, gently roll over the sugar/cinnamon mixture. At the beginning of the roll only 1/2" of dough and pinch down. Now you must begin rolling from each corner, middle, working your way back and forth. Curve your corners toward the center to avoid too much overlap (exess) IMPT: after about 2-3 rolls, carefully lift up each portion and pull away from you, this will "tuck" in the dough, be careful not to tear the dough. A lot to remember, but after you get the hang of it, it's like second nature and you will have picture perfect cinnamon rolls and sticky buns.
  • Here's a trick for cutting the rolls without mashing the dough: take a piece of thread, slide it under the roll, cross the thread and pull quickly. It works like magic, and you don't have a sticky knife to clean up afterwards!
  • Just a tip: the longer you let them rise, the fluffier and better they taste!
  • I didn't add the pecans to the brown sugar/cinnamon mixture that went inside the rolls. I would suggest not melting the butter that you spread on the inside before you roll it up. If you just spread on a thin layer of softened butter you should end up with a more ooey-gooey feel because you'll have more butter on the inside to melt, which will make the caramel more gooey. When you use the melted butter you don't get a lot of butter on the inside & I found this tended to give me a dryer--but still good--caramel roll. I will try again, but next time I won't melt my butter. Have made a couple more times & it definitely works better not to melt the butter for the inside and then I double the caramel for the bottom. But does need some adjustments.
  • I did used a 9 X 13 baking pan and I made a little extra filling. In addition I made some simple white icing and I have to say this is one of the best sticky buns I have ever had; and I've had quite a lot over the years. I never thought I'd make a world class sticky bun but I was wrong. I would highly suggest taking extra time and being extra careful when reading the directions. In addition, I allowed my first rise to go for approximately 2 hours and it came out perfect. If you want great sticky buns that will knock the socks off your friends and family, this is it! 1 cup packed brown sugar
1/2 cup corn syrup
1/2 cup butter or 1/2 cup margarine
1 cup walnuts or 1 cup pecans, broken
1/2 cup white sugar
2 1/2 tablespoons ground cinnamon
1/4 teaspoon nutmeg, fresh ground
2 (17 1/3 ounce) cans large refrigerated biscuits

Steps:

  • In a saucepot combine the brown sugar, corn syrup, and the butter.
  • Cook until sugars are dissolved well.
  • Add the broken nut pieces.
  • Spoon mixture into the bottom of a 9 x 13 inch baking pan with 2 inch sides.
  • In a small bowl combine the granulated sugar, cinnamon, nutmeg.
  • Cut each biscuit in half across. Just to make more pieces of dough.
  • Dip each biscuit into the cinnamon dry mixture.
  • Place cut side down into the baking pan over the brown sugar mixture.
  • Bake 375 degrees F.
  • oven for 23- 30 minutes, until golden brown.
  • Invert onto a serving tray.

1/2 cup warm water (105-115 degrees F)
1 1/4 cups buttermilk
1/2 cup butter, softened
1/2 cup sugar
2 eggs
6 cups flour
2 teaspoons baking powder
2 teaspoons salt
1/4 cup butter, softened
1 cup brown sugar, packed
1 tablespoon ground cinnamon
1 cup raisins (optional)
1/2 cup walnuts, finely chopped (optional)
5 1/3 tablespoons butter
2 cups powdered sugar
1/2 teaspoon vanilla extract
1/3 cup hot water

Steps:

  • Dissolve yeast in warm water; allow to stand 10 minutes.
  • Stir in buttermilk, 1/2 cup butter, the sugar, eggs, 3 cups of flour, the baking powder and salt.
  • Stir in enough remaining flour to make the dough easy to handle.
  • Turn dough onto lightly floured board.
  • Knead until smooth and elastic, about 10 minutes.
  • Divide dough in half.
  • Roll each half into rectangle, 15x9".
  • Spread each rectangle with 2 tablespoons of butter.
  • Sprinkle each with half the brown sugar, cinnamon and raisins (optional) and or finely chopped walnuts (optional) if using.
  • Roll up, beginning at wide side.
  • Cut each roll into 15 slices.
  • Place slices on greased baking sheets; cover.
  • All to rise until double, about 1 hour.
  • Heat oven to 375 degrees F.
  • Bake until golden brown, 20-25 minutes.
  • Glaze:.
  • Combine butter with the powdered sugar in a medium bowl and blend with an electric mixer.
  • Add vanilla and hot water and combine.
  • Add more powdered sugar or water until your desired consistency.
  • Spread over buns.
