Spicy and fragrant, za'atar seasoning is a wonderful Middle Eastern dry herb blend that pairs wonderfully with olive oil as a dip, or spread on flat bread.

Steps:
- Measure out and add all herbs into a spice grinder or mortar and pestle.
- Working in batches, if needed, grind herbs until desired, uniform consistency is reached.
- Transfer herb mixture to a jar and add sesame seeds and sea salt.
- Cap with a lid and shake until mixed well.

ZA'ATAR CRUST
The eastern Mediterranean za'tar is a combination of olive oil, lemon juice, sesame, garlic, dried mint and oregano. It is particularly good on chicken, especially if slipped under the skin as well as over it, and is delicious on lamb and more strongly flavoured fish such as salmon, trout or mackerel. Can be used to prepare - 4 Chicken legs, or 8 Lamb cutlets or 6 Lamb chops or 2 Pork tenderloins or 1 Whole chicken or 1kg Chicken wings, thighs or drumsticks or 8 Fish fillets or steaks.

Steps:
- The crust- Place the sesame seeds and spices in a pestle and mortar or spice grinder and lightly crush.
- Mix with the oil, lemon zest and juice and season to taste.
- Rub the mixture all over the food, cover and marinate for 4 hours or overnight in the fridge for meats and poultry. Fish needs only 30 minutes. Allow the food to return to room temperature for 20 minutes before cooking.
- To cook- If barbecuing, turn frequently and baste with any excess marinade. To roast a whole chicken, rub all over and roast at 400F for 1-1½ hours.

From Aglaia Kremezi. The Lebanese believe that zaatar, a mixture of thyme, sumac and sesame seeds, gives strength and clears the mind. For this reason, before leaving home on exam days, all school children eat a slice of bread spread with a mixture of zaatar and olive oil. The traditional recipe for zaatar calls for thyme, but savory -- which has an aroma similar to a combination of oregano and thyme -- works much better.

- Grind the savory, sumac, salt and sesame seed in a spice grinder or clean coffee grinder until you obtain a fine powder.
- Keep in a sealed jar in a cool, dark and dry place.
- To use: mix 1-2 tblsps of zaatar with 1-2 tblsps extra-virgin olive oil and spread on warm, toasted bread.
- Top with freshly-ground black pepper.
- You can also top pita breads with the zaatar and olive oil mixture and bake in the oven to make pita crisps.
- Zaatar will begin to lose its flavour after 2 months.
